Steps:
- Preheat oven to 350 degrees. Line two baking sheets with parchment; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars on medium speed until pale and fluffy, about 2 minutes. Reduce speed to low. Beat in eggs, one at a time; add vanilla.
- In a medium bowl, whisk together flour, salt, cinnamon, baking soda, and baking powder. With mixer on low, gradually add flour mixture and beat until well combined. Beat in oats and raisins until just combined.
- Arrange 3/4-cup balls of dough on prepared baking sheets, about 3 inches apart. Use the palm of your hand to flatten into 4-inch rounds. Bake, rotating halfway through, until golden brown, about 16 minutes. Let cool on sheets 2 minutes, then transfer to a wire rack to cool completely.
OATMEAL RAISIN SKILLET COOKIE WITH HONEY CREAM
Baking this giant oatmeal cookie in a cast-iron skillet gives it an extra crispy crust and a moist, chewy center. Whipped cream that's been enriched with honey and sour cream provides a tangy contrast to the sweet spices and rich brown sugar flavors.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Grease the bottom and sides of a 10-inch cast iron skillet with 1 tablespoon of the butter.
- Whisk the flour, baking soda, salt and apple pie spice together in a large bowl. Beat the remaining butter and granulated sugar together in a large bowl with an electric mixer on low speed until just incorporated. Increase speed to high and mix until light and fluffy, scraping down the sides of the bowl with a rubber spatula as needed. Add the brown sugar and beat until incorporated, then add the eggs one at a time, beating in between additions, then mix in the vanilla. Reduce the speed to low and gradually add the flour mixture, mixing until a smooth dough forms, scraping down the sides of the bowl as needed. Stir in the oats and raisins.
- Use a rubber spatula to scrape the batter into the prepared skillet, gently spreading it to the edges and smoothing the top. Bake until the top is golden, the sides are beginning to brown and the center is still soft, about 40 minutes. Cool in the pan on a wire rack for 15 minutes.
- Meanwhile, beat the heavy cream in a medium mixing bowl until soft peaks form. Add the sour cream and honey and continue beating to form medium peaks. Keep the whipped cream refrigerated until ready to use. Slice the cookie into wedges and serve warm or at room temperature with the honeyed whipped cream.
BIG GIANT OATMEAL COOKIE

Steps:
- Preheat oven to 325 degrees. Line a cookie sheet with parchment.
- Melt your butter in a heat-safe mixing bowl. Note: It doesn't need to be ALL the way. See photos for an example- I've found the best stage is when about half the butter is liquid, but the rest is super soft. Like the texture of pudding. You want it to easily stir completely smooth when you touch it.
- truction-step-3″>2. Mix in brown sugar, white sugar, egg yolk and vanilla.
- truction-step-4″>3. Measure your flour by spooning lightly into your measuring cup and then leveling with a knife. Sprinkle flour, baking soda, baking powder, and salt on top and then mix together. Stir in oats and chocolate chips. (Or raisins, if you are using those, instead)
- uction-step-5″>4. Form dough into one large ball and place on prepared baking sheet. Gently press down to about 3/4 inch thick. I like to press a few additional chocolate chips into the top of the dough before baking.
- tion-step-6″>5. Note: All ovens cook differently and baking time will vary depending on how much you press your cookie down. Set a timer for 10 minutes so you can keep a close watch for the remainder of the baking time. Bake for 11-14 minutes, until edges are set and center looks set, but still soft. Let cool for 10-15 minutes before using an extra large spatula to transfer to a cooling rack.

GIANT SKIPPY OAT COOKIES
I love peanut butter and oatmeal. For me, this is an extremely dangerous cookie situation. See if you can make these without eating any dough (I sure couldn't). Recipe courtesy of Best Recipes of the Great Food Companies. The original recipe calls for Mazola Corn Oil Margarine, but I listed butter because that's my personal preference. Next time I make these (and I will make these again--I don't make very many recipes a 2nd time) I'm going to throw in a little coconut and some butterscotch chips.

- Beat the softened butter, sugar, and brown sugar with an electric mixer until light and fluffy. Add the egg, egg yolk, and vanilla and mix until combined.
- In a separate bowl, combine the dry ingredients (except the raisins). Add to the butter/sugar/egg mixture and mix until combined. Add the raisins and mix until just combined.
- Using a 1/4 cup ice cream scoop, drop the dough by the scoopful onto the prepared baking sheets. You should be able to get about 6 cookies per sheet. Bake in the preheated oven for 12-15 minutes or until they begin to turn light brown around the edges. Remove from the oven and cool for 5 minutes and then transfer to a wire cooling rack and cool completely. Makes about 16 giant cookies (or you can make more cookies that are smaller; you may need to adjust the bake time slightly).

- Preheat the oven to 375°F with two racks dividing the oven into thirds. Line 2 baking sheets with parchment paper.
- In a large mixing bowl place the butter, granulated sugar, brown sugar, and vanilla. Break the egg into a small bowl and add it into the large bowl. This way, any stray bits of shell can be easily removed from the small bowl, avoiding "crunchy" cookies. With the mixer on medium speed, beat until the mixture is smooth and well blended.
- With the mixer off, add the flour, cinnamon, baking powder, baking soda, and salt. With the mixer on medium speed, beat until all the ingredients are well combined. Turn the mixer off.
- Drain the raisins and pat them dry on a paper towel. Add the oats, the raisins, and the sunflower seeds to the dough. Beat just until all the ingredients are combined.
