GRILLED SHRIMP WITH ROASTED CORN AND BLACK BEAN SALSA



Grilled Shrimp with Roasted Corn and Black Bean Salsa image

2 ears fresh corn, husked
1 tomato, cored, seeded, chopped
1 cup drained canned black beans
1/2 small red onion chopped
1/2 bunch fresh cilantro, leaves chopped
1/2 fresh lime, juiced
2 jalapeno chilies, seeded and minced
1/2 teaspoon ground toasted cumin seeds
1/4 cup dry white wine
2 tablespoons olive oil
1 1/2 pounds large uncooked shrimp, peeled, deveined

Steps:

  • Soak bamboo skewers in water for 30 minutes. Prepare barbecue (medium high heat). Grill corn until just tender and brown in spots, turning frequently, about 10 minutes. Cut corn from cob. Transfer corn kernels to medium bowl. Add tomato, black beans, onion, cilantro, lime juice, 1 jalapeno and 1/4 teaspoon ground cumin and stir to blend. Combine wine, olive oil, remaining jalapeno and 1/4 teaspoon ground cumin in a large bowl. Add shrimp and toss to coat. Cover and refrigerate 1 to 2 hours, stirring occasionally.
  • Remove shrimp from marinade; discard marinade. Thread shrimp on bamboo skewers. Sprinkle with salt and pepper. Grill until just cooked through, about 2 minutes per side. Spoon salsa on platter. Top with shrimp skewers.

20 large shrimp (about 1 pound), peeled and deveined (tails left intact; optional)
3 garlic cloves, minced
1/2 jalapeno chile (stem, ribs, and seeds removed), finely chopped
1 tablespoon fresh lime juice
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Toss together shrimp, garlic, jalapeno, lime juice, and 1 tablespoon oil; season with salt and pepper. Marinate in refrigerator for 45 minutes.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Remove shrimp from marinade, and add to skillet; cook through, about 2 minutes per side.

1/4 cup frozen shelled edamame
1/2 cup cooked small shrimp
1/2 cup canned cannellini beans, rinsed and drained
1/2 cup halved cherry tomatoes
1 -2 tablespoon chopped red onion
1 teaspoon minced jalapeno pepper
1 tablespoon chopped cilantro
2 teaspoons fresh lime juice
1 1/2 teaspoons extra virgin olive oil
1/8 teaspoon salt

Steps:

  • Cook edamame according to package directions (they can be cooked in microwave in minutes). Drain and rinse with cold water.
  • Combine edamame, shrimp, cannellini beans, cherry tomatoes, onion and jalapeño pepper.
  • Combine cilantro, lime juice, olive oil, and salt, stirring with a whisk.
  • Drizzle over edamame mixture, and toss gently to combine; cover and chill.

24 medium shrimp, shelled and deveined (about 1 pound)
1/3 cup prepared balsamic vinaigrette
12 slices bacon
24 pickled jalapeno peppers
24 wood toothpicks
1/2 cup mayonnaise
1 tablespoon chili sauce
1 tablespoon sweet pickle relish
1 tablespoon minced sweet red pepper

Steps:

  • Place shrimp and vinaigrette into a large resealable plastic bag; refrigerate for 15 minutes.
  • Microwave bacon for 1 minute on high.
  • Cut slices in half crosswise (for a total of 24 pieces) and let cool.
  • Heat broiler.
  • Coat a large broiler pan with nonstick cooking spray.
  • Remove shrimp from marinade, reserving marinade.
  • Put one piece of bacon on work surface.
  • Place a shrimp at one end; tuck a jalapeno slice into curl of shrimp.
  • Roll bacon up tightly to enclose filling, securing with toothpick.
  • Repeat using all bacon, shrimp and jalapenos.
  • Stir together mayonnaise, chili sauce, pickle relish red pepper and 1 T water in small bowl.
  • Place shrimp rolls on prepared pan.
  • Brush with reserved marinade.
  • Broil 3 minutes.
  • Turn, brush with marinade and broil 2 minutes more.
  • Serve with sauce for dipping.

6 tablespoons butter
24 large shrimp, peeled and deveined
2 tablespoons minced green onions
1 small jalapeno peppers, seeded and thinly sliced or 7 ounces canned whole green chilies, julienned
1/2 cup dry white wine
1 1/2 cups orange juice
3/4 cup whipping cream or 3/4 cup half-and-half
salt, to taste
pepper, to taste
12 ounces angel hair pasta, cooked to package directions
fresh parsley, for garnish

Steps:

  • Prepare pasta according to package directions.
  • Meanwhile, melt butter in a large skillet over medium heat. Add shrimp and cook until pink, about 1 minute per side. Remove from skillet and set aside.
  • Add green onions and jalapeno to skillet and saute 1 minute. Add wine and bring to a boil. Mix in orange juice and cream. Boil until reduced to thin sauce, stirring occasionally, about 10 minutes. Add salt and pepper, if desired.
  • Add shrimp to sauce and cook until heated through. Add pasta and toss well. Sprinkle with minced fresh parsley and serve.

  • Heat 2 teaspoons oil in a large skillet over medium heat. Add green beans and season with salt and peppers. Sauté for 2-3 minutes until beginning to soften. Reduce heat and carefully pour 1/4 cup water in hot skillet (it will sputter, so be careful of steam) and cover pan with a tight fitting lid to steam for 10 minutes. Monitor carefully to make sure the water does not completely evaporate before the beans have steamed, adding more if necessary so they do not burn.
  • Meanwhile, in a small bowl whisk together coconut aminos, rice vinegar, garlic, ginger, sesame oil and sriracha and set aside.
  • In a separate small bowl whisk arrowroot and 4 teaspoon water to make a slurry to thicken the sauce. Set aside.
  • Once beans have steamed, uncover and add shrimp and toss. Add in coconut aminos sauce ingredients, mixing to ensure it cooks evenly.

  • To a small mason jar, add all sauce ingredients (soy sauce, honey, sesame oil, sriracha, minced garlic, ground ginger, fish sauce, red pepper flakes, and lime juice). Shake well for 5-10 seconds, or until well mixed.

Cook for 2-3 minutes, or until the bottoms are pink, and then flip each shrimp to cook the other side. Shake the prepared sauce one more time, and add it to the pan. Cook for about 3 minutes, or until all the shrimp are fully cooked. Remove from heat and stir to ensure the sauce has coated all the mushrooms and shrimp.
  • Serve immediately (my favorite combo: over brown rice with cilantro on top!). Leftovers can be stored in the fridge for up to 4 days.
