GARLIC-JALAPEñO SHRIMP

Garlic-Jalapeño Shrimp image

This tasty marinade-hot but not punishing-is so easy and so flavorful that it will quickly make its way into your regular rotation. Shrimp is marinated with garlic, fresh lime juice, and jalapeño chile peppers, then seared in a skillet until fully cooked through.

COOL COUSCOUS TOSS

Cool Couscous Toss image

A light and yummy chilled couscous-based salad. Perfect for summer because it's no fuss! I titled it a "toss" instead of a salad because it can stand alone as a cool light vegetarian entree. It can also be served as a side dish. You could add diced cheese and or/salami if you'd like to make it heartier. Perfect for a pot luck or picnic because it won't spoil if it sits out a while and it's still delicious served at room temperature. Cook time includes chill time...it's even better if allowed to sit overnight in the refrigerator. You can easily vary the canned veggies based on what you have in your pantry.

TUSCAN SHRIMP WITH WHITE BEANS

Tuscan Shrimp with White Beans image

Provided by Michael Chiarello : Food Network

Categories     appetizer

Time 25m

Yield 4 servings

Number Of Ingredients 11

3 cups canned Cannelloni white beans
1/4 cup plus 2 tablespoons extra-virgin olive oil
16 large shrimp, peeled (tail left on) and deveined
4 cloves garlic, sliced
1 small serrano chile, thinly sliced or 1/2 teaspoon chili flakes
1 cup peeled, seeded and diced fresh tomato, canned or fresh
1 cup whole basil leaves
1 tablespoon lemon juice
Salt and freshly ground black pepper
2 tablespoons Italian flat-leaf parsley, chopped
Best-quality extra-virgin olive oil, for drizzling

Steps:

  • Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp.
  • Heat 1/4 cup oil in a large skillet over high heat. Add the shrimp, season with salt and cook for about 1 minute, tossing frequently. Remove the shrimp with tongs to a bowl. Add the garlic to the pan and saute until the garlic browns. Add the serrano chile or chili flakes and cook for 1 minute. Add the tomato and basil and stir briefly, then add the lemon juice. Season with salt and pepper. Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp. Remove the shrimp mixture to a plate and sprinkle with parsley.
  • Spoon the white beans on a platter or individual plates. Drizzle them with the best olive oil you have, and then top with the shrimp. Serve warm.

SHEET-PAN GOCHUJANG SHRIMP AND GREEN BEANS

Sheet-Pan Gochujang Shrimp and Green Beans image

Say hello to your broiler, that super-intense direct heat source in your oven that, like a grill, crisps food fast. (It's either in the top of your oven or in the pull-out drawer below.) While it heats, toss shrimp and green beans in a fiery sauce of gochujang (a Korean fermented chile paste), soy sauce and honey, then broil for mere minutes. Just five minutes! The shrimp and green beans emerge with blistered outsides and snappy insides, reminiscent of Sichuan dry-fried green beans, while the sauce and the caramelized char make quick work of building deep, addictive flavors. Serve with rice, noodles or lettuce leaves. To make it vegetarian, swap shrimp for quick-cooking vegetables, edamame or well-drained tofu.

Categories     dinner, lunch, quick, weekday, seafood, main course

Time 10m

Yield 4 servings

Number Of Ingredients 6

2 tablespoons plus 2 teaspoons gochujang
2 tablespoons extra-virgin olive oil
1 tablespoon soy sauce
2 teaspoons honey
1 pound large shrimp, peeled and deveined
1 pound green beans, trimmed

Steps:

  • Place an oven rack as close to the broiler as possible. (If your broiler is in a drawer below the oven, skip this step.) Heat broiler for at least 5 minutes.
  • Meanwhile, in a large bowl, whisk together the gochujang, olive oil, soy sauce and honey until smooth and emulsified. Add the shrimp and green beans and stir to coat.
  • On a foil-lined baking sheet, spread the shrimp and string beans evenly in a single layer, leaving behind any excess marinade. Broil until the beans are charred in spots and the shrimp is cooked through, about 5 minutes. (Depending on your broiler, you may need to rotate the pan after 2 or 3 minutes so all the food gets exposure under the heat source.)

  • In a bowl, whisk together the sugar, salt, pepper, garlic powder, cornstarch, and egg whites. You want to make sure the shrimp have been dried on a paper towel before adding it to the batter. Add the shrimp to the batter and stir to combine.
  • Heat 1 tablespoon of oil in a large skillet over medium high heat. Add one-third of the battered shrimp and cook for about 1 minute on each side. You want the shrimp to just curl into a 'c' shape. Remove to a plate. Continue cooking the remaining 2 batches of shrimp in the same way, remove to the plate when done.
  • If there is no oil left in the skillet, drizzle a teaspoon of oil and allow it to heat. Add the sliced onions and jalapeños to the pan and cook for about 1-2 minutes or until they are fragrant. Add all the shrimp back to the skillet and using a spatula, toss the shrimp around so they are evenly coated with the onions and jalapeños. Sprinkle with a small pinch of salt and black pepper to just season everything. Let cook for another 1-2 minutes before removing from the heat. Top with chopped cilantro and serve with white, brown, or fried rice. Or even cauliflower mash or mashed potatoes.
