A sweet hazelnut chocolate spread, great for icing, fillings, and just for spreading. This recipe scales perfectly, so make as much as you want, Also the ammount of oil used will determine if the spread is thickness of the final spread

- Heat an oven to 150c (300f)
- Roast the hazelnuts for about 7 minutes and then roll them together between a teatowel to remove the skins, if you cannot get the skin off some you may need to bake them a little more but do not burn them, it is important to get almost all of the skin off the nuts.
- In either a coffee blender, spice blender, small food processor or blender add the skinned nuts and blend until you have a very fine powder, the more fine the better.
- Add in the oil and powdered sugar and blend thoroughly.
- Melt the chocolate either in a double boiler, or a microwave at 50% power for 1 minute, stirring and remicrowaving for 30 seconds at a time until it is completely melted.
- Add the hazelnut mix to the chocolate mix and stir in thoroughly, the mix will keep in the fridge for several weeks.
CHOCOLATE HAZELNUT CAKE
We made this as a birthday cake for Italy, which celebrated the 150th anniversary of its unification in 2011. Gianduia is a speciality of the Piedmont region and it's a mixture of ground hazelnuts and chocolate.

- Preheat the oven to 200C/400F/Gas 6.
- Put the hazelnuts on a baking tray and roast them in the centre of the oven for 10 minutes, giving the pan a shake halfway through, until they are golden brown. Watch them carefully so that they don't burn. Remove and leave them to cool for a few minutes.
- Reduce the oven temperature to 180C/350F/Gas 4.Butter a 23cm/9in springform cake tin and line the base with baking parchment.
- Place 200g/7oz of the hazelnuts in a food processor and blend them until they are fairly finely ground. If you blend the nuts to the consistency of fine breadcrumbs, they should work a treat, but leave a few coarser pieces to add texture. Set the remaining 50g/2oz hazelnuts aside.
- Put the butter and chocolate in a heatproof bowl and set it above a pan of gently simmering water. Stir occasionally and as soon as nearly all the chocolate has melted, remove the bowl from the pan and continue to let the chocolate melt in the residual heat.
- Stir in the ground hazelnuts and leave the mixture to cool for 5 minutes.
- Beat the egg yolks and sugar together with an electric hand-whisk for at least 5 minutes until pale and creamy, then stir into the chocolate mixture until thoroughly combined. Wash and dry the beaters well.
- In a clean bowl, whisk the egg whites until stiff peaks form - they are ready when you can turn the bowl upside down without the eggs sliding out. Do not over whisk.
- Working quickly, stir the hazelnut liqueur, amaretto or orange juice, into the chocolate mixture to soften. Add a couple of tablespoonfuls of the whisked egg whites and stir until thoroughly combined, then gently fold in the remaining egg whites.
- Spoon the mixture into the prepared tin and bake in the centre of the oven for 35-40 minutes or until the cake is well risen and firm.
- Remove the cake from the oven and leave it to cool in the tin for 30 minutes. Undo the springclip and invert the cake on to a serving plate, then peel off the lining paper and leave it to cool completely.
- When the cake is cold, spread it with the chocolate and hazelnut spread and sprinkle with the hazelnuts that you set aside - these can be whole or chopped, whatever you prefer.
GIANDUIA SANDWICH COOKIES (CHOCOLATE-HAZELNUT)
I was a bit skeptical of this 3-ingredient recipe, but curious enough to try it. This was certainly a case where curiosity paid off--these are wonderful little cookies! The recipe was published in Food & Wine's 6th edition of "Best of the Best-The best recipes from the 25 best cookbooks of the year". It was taken from Rozanne Gold's "Desserts 1-2-3". (Be sure to use the self-rising cake flour called for, not self-rising all-purpose flour.)

- Preheat oven to 375°F.
- Mix 1/2 cup Nutella and the egg with an electric mixer until well combined. Slowly add 1 cup of flour until a wet dough is formed. Transfer the dough to a flour-dusted board.
- Knead gently, adding a bit more flour if necessary; dough will be sticky. Roll dough into 18 balls, flouring your hands as needed to make rolling easier. Place on parchment-lined baking sheet, several inches apart.
- Bake 12 minutes. Let cool 10 minutes. Split cookies in half horizontally using a sharp, serrated knife (see note below). Spread bottom with 1 teaspoon Nutella, replace top and press firmly. Let cool completely. Store in a tightly covered tin.
- Note on flour: I didn't have self-rising cake flour, so I mixed 1 1/2 teaspoons baking powder and 1/2 teaspoon salt with regular cake flour before adding it.
- Note on splitting the cookies: I had a problem with a couple of the cookie tops breaking a bit when I first started cutting them. I then tried it this way and had no more problems: turn the cookie on its side and carefully score the entire outside edge while turning it like a wheel, then gently cut the rest of the way through the middle.

- Preheat oven to 350 degrees F. Arrange the hazelnuts in a single layer on a rimmed baking sheet. Bake in preheated oven until golden brown and fragrant, 13-15 minutes.
- In a food processor, blend the roasted hazelnuts and sugar until it becomes a smooth paste.
- Chop the chocolate into small pieces. Melt until smooth using either the microwave in 20 second increments or in a heatproof bowl over a pot of simmering water.
- Transfer the melted chocolate to the bowl of a stand mixer fitted with a whisk attachment or a large bowl. Whisk in the butter, then the cream, salt, and smooth hazelnuts until blended.
- Pour into containers, preferably glass, and allow to cool. Cover and refrigerate for up to 4 weeks.

- Preheat oven to 350° F. and butter and flour a 9-inch square baking pan, knocking out excess flour.
- Toast and skin hazelnuts (procedure this page). In a food processor pulse hazelnuts until coarsely ground (bits should be about 1/8 inch).
- Chop chocolates into small pieces and in a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolates with butter and Nutella, stirring occasionally until smooth. Remove top of double boiler or bowl from heat.
- While chocolates are melting, into a bowl sift together flour, baking powder, and a pinch salt. Whisk sugar into chocolate mixture until combined well. Add eggs, whisking until mixture is glossy and smooth. Stir in flour mixture and hazelnuts until just combined.
- Pour batter into baking pan and bake in middle of oven 35 to 40 minutes, or until a tester comes out with moist crumbs adhering to it. Cool brownies completely in pan on a rack and cut into 16 squares. Brownies keep, layered between sheets of wax paper in an airtight container at cool room temperature, 5 days.
GIANDUIA MOUSSE CAKE

- Preheat oven to 350° F and butter a 10-inch springform pan. Wrap bottom and side of pan with a large piece of heavy-duty foil to waterproof.
- Chop chocolates into small pieces and melt in a double boiler or a metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove top of double boiler or bowl from heat and stir in Nutella and hazelnut butter until combined well.
- In a large bowl of a standing electric mixer or in a large bowl with a handheld mixer beat eggs until frothy, about 1 minute. Gradually add sugar, beating mixture at high speed until thick and pale and it holds a slowly dissolving ribbon when beaters are lifted, about 4 minutes if using a standing mixer and about 8 minutes if using a hand-held mixer. Pour chocolate mixture into egg mixture and stir until combined well. In a chilled bowl beat cream until it holds soft peaks and fold into batter gently but thoroughly.
- Pour batter into springform pan and put springform pan in a roasting pan. Add enough hot water to roasting pan to reach halfway up side of springform pan. Bake cake in middle of oven 1 hour and 10 minutes. Turn off oven and let cake stand in oven 40 minutes. Remove springform pan from water and cool cake in pan on a rack 30 minutes. Remove side of pan from cake. Let cake cool completely before serving.
- Serve cake with whipped cream. Cake keeps, covered and chilled, 3 days. Cake served at room temperature will have a texture reminiscent of mousse; chilled cake will be more fudgelike.

- Fit the bottom of a 9-inch (23 cm) springform pan with a round of parchment paper, then butter the pan and dust with sugar and set aside. Melt the chocolate in a double boiler or gently in the microwave, 15 seconds at a time.
- Fit an electric mixer with the whisk attachment, and beat the egg whites until they are foamy. Add the sugar, and beat until the whites form stiff peaks, about 2-3 minutes. In another bowl, use the mixer with the paddle attachment to beat the butter and chocolate-hazelnut spread together. Add the egg yolks, salt, and orange juice or cognac, and mix until fully incorporated. Then add in the melted chocolate, vanilla, and hazelnut meal, and mix until smooth.
- Gently fold a quarter of the egg whites into the chocolate mixture to lighten it, and then add the rest of the egg whites and fold them in gently, being careful not to overmix. Pour the batter into the prepared pan and smooth the top. Bake until a tester comes out clean, about 40 to 45 minutes. Let the cake cool for about 10 minutes, then open the spring and remove the side ring, and slide the cake and parchment out of the pan and onto a serving plate. Allow the cake to fully cool before serving. Delicious topped with fresh whipped cream and orange zest.

- Spread hazelnuts, in one even layer, along the bottom of a baking pan. Bake the nuts until they are aromatic, lightly colored and the peels are blistering (about 12 minutes but watch them). Remove the hazelnuts and quickly wrap in a clean kitchen towel, so they can steam in their own hotness. After a minute or two, rub the hazelnuts thoroughly, while still inside the towel. This will rub the majority of the peels off the nuts. If a small percentage of the peels won’t come off, that’s ok. However, if a substantial percentage is still stuck, place them back in the oven until the peels come off more easily.
- Once the nuts are peeled, place them in a food processor and pulse until the nuts are coarsely chopped (pieces around the size of sunflower seeds). A knife will also do the trick, but a food processor is faster. Don’t over process, as the nuts will start to turn to butter.
- Place the chopped hazelnuts, almond milk, 1 1/2 cup (360 mL) heavy cream, 1 cup (240 mL) sweetener and salt into a saucepan. Place pan over medium heat and warm until a few small bubbles start to appear. We don’t want this to boil. We just want it to ALMOST boil. Once a trickle of a simmer has occurred, stir the mixture, then cover it, remove from heat and set somewhere warm for an hour, stirring occasionally.
