These waffles substitute sour cream and yogurt for milk. The inspiration came about one morning when there was no milk in the house.

SMOKED SALMON AND WAFFLES

- For the sauce: In a small bowl, whisk together the sour cream, lemon zest, lemon juice and salt. Set aside.
- For the waffles: Preheat a waffle iron according to the manufacturer's directions.
- In a large bowl, whisk together the all-purpose flour, whole-wheat flour, baking powder and salt. Form a well in the center and add the eggs, milk and sour cream. Starting from the inside, whisk together the wet ingredients, slowly incorporating the dry ingredients. When almost fully incorporated, drizzle in the butter and whisk until just combined.
- Scoop enough batter into the waffle iron to fill three-quarters of the way. Sprinkle with 1 1/2 teaspoons capers and 1 teaspoon chives. Close and cook until golden brown and crispy, about 5 minutes. Remove the waffle and divide in pieces along the marked lines. Top with a few slices of smoked salmon, a dollop of the lemon sour cream and some chives. Repeat with the remaining ingredients to make more waffles.
GREAT EASY WAFFLES
This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

- Preheat a waffle iron. Whisk the flour, baking powder, baking soda and salt in a large bowl until combined. Whisk the sour cream, egg yolks, milk and vanilla in a medium bowl until smooth, then whisk in the melted butter and shortening.
- Beat the egg whites in a separate large bowl with a mixer on medium-high speed until soft peaks form, about 3 minutes. Sprinkle in the brown sugar and continue beating until stiff glossy peaks form, about 4 more minutes.
- Make a well in the center of the flour mixture, then gradually whisk in the sour cream mixture until just combined. Fold in the beaten egg whites until incorporated.
- Brush the waffle iron with melted butter. Add 1/4 to 1/2 cup batter and cook according to the manufacturer's instructions. Repeat with the remaining batter, brushing the waffle iron with more butter between batches. Serve with syrup.

TRADITIONAL VAFLER, NORWEGIAN CARDAMOM WAFFLES
From "Cooking the Norwegian Way", the only changes I made was to use plain yogurt instead of sour cream, I left butter the way it was though I use Earth Balance. You can also try subbing half the flour for whole-wheat flour or just use whole-wheat pastry flour to get flakier waffles. Norwegian waffle irons also make heart-shaped waffles! My Powerpuff Girls waffle iron makes cool swirly-shape ones.
