Steps:

  • Preheat oven to 350 degrees F. Coat six 1-cup mini fluted tube cake molds with nonstick cooking spray for baking.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
  • In a large bowl, beat 1/2 cup butter with an electric mixer on medium to high speed for 30 seconds. Add sugar and beat until fluffy. Beat in eggs, one at a time. Beat in vanilla. Beat in flour mixture alternately with sour cream, beating on low after each addition just until moistened. Fold in 1 cup chocolate chips. Divide into prepared molds.
  • Bake for 20 minutes or until a wooden pick inserted near the centers comes out clean. Remove and cool in a pan on a wire rack for 5 minutes. Remove from molds. Cool completely.
  • In a small saucepan over low heat, melt the remaining baking chips with 3 tablespoons butter until smooth and glossy. Cool slightly and spoon over cooled cakes. Sprinkle with mini baking chips.
  • Top cakes with your favorite Ghirardelli Bunnies or Eggs.

1 1/2 cups all-purpose flour
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup low-fat buttermilk
3/4 cup mashed banana
1/4 cup canola oil
2 teaspoons vanilla extract
cooking spray

Steps:

  • Preheat over to 350°F
  • Coat a 9x5 loaf pan, three 6x3 mini loaf pans or a 12 cup muffin tin with cooking spray.
  • Whisk together flour, sugar, cocoa, baking soda, and salt in a bowl. Set aside.
  • Whisk together buttermilk, mashed banana, oil, and vanilla in a separate bowl.
  • Fold the buttermilk mixture into the flour mixture.
  • Scoop batter into the desired prepared pans.
  • Bake until toothpick inserted in the center comes out clean: Large loaf 50 to 60 minutes, Mini-loaves 35 to 45 minutes, or Muffins 18 to 22 minutes.
  • Cool 5 minutes in pans.
  • Unmold and cool completely.
  • Drizzle with Chocolate Drizzle of desired.

  • Melt 1 ounce chopped bittersweet chocolate in a double boiler or in microwave at low (20%) power. Drizzle over cooled loaf or muffin.

1 cup mashed bananas (about 2 medium)

Steps:

  • In a bowl, cream butter and sugar. Add eggs and banana; mix well. Combine flour and baking soda; gradually add to the creamed mixture.   • Heat oven to 350 degrees. You'll need 6 disposable baby (mini) loaf pans (5 3/4 x 3 1/4 x 2 inch) coated with nonstick spray and a baking sheet.
  • Beat cake mix, sour cream, water, eggs and cinnamon in a large bowl with mixer on low speed 30 seconds or until blended. Scrape down sides of bowl; beat on medium speed 2 minutes. Stir in mashed bananas. Pour into prepared pans (about 1 1/4 cups batter each); place on baking sheet.

1 1/4 cups flour
1 teaspoon baking soda
1 pinch salt

Steps:

  • Heat oven to 325°F Sift dry ingredients (not sugar) in medium bowl and set aside. Beat butter and sugar in separate larger bowl until they are light and fluffy. Beat in bananas then eggs. *I usually beat the bananas in a bowl until I need them, rinse it out, then beat the eggs in the same bowl so I have less dishes to wash.* Stir in flour mixture alternately with boiling water until just combined.
