Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Season pork loin with salt, black pepper, paprika, and caraway seeds; spread mustard over pork.
- Heat vegetable oil in a large skillet over medium-high heat; fry pork until browned on all sides, about 15 minutes. Transfer pork to a large roasting pan. Add onion, carrots, celeriac, and spring onion to the same skillet used to fry pork; cook and stir until vegetables are tender, about 10 minutes. Spread vegetable mixture around pork in roasting pan.
- Pour 1 cup hot water into the skillet used to cook the pork and vegetables; simmer and scrape up any browned bits from the bottom with a spatula. Pour water over pork.
- Bake in preheated oven until pork is slightly pink in the center, 2 1/2 to 3 hours, basting often. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). If vegetables become dry, add 1 cup hot water, or as needed.
- Transfer pork roast to a large platter and keep warm. Strain remaining liquid through a sieve into a saucepan; reserve vegetables.
- Bring liquid to a boil and add butter and cornstarch; simmer until sauce is thickened, about 5 minutes. Slice pork and serve with sauce and vegetables.

GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

Steps:
- Dry the pork chops. Salt and pepper them, then dredge them in flour.
- In a medium hot, seasoned cast iron skillet (or pan you can use on top of the stove and in the oven), brown the chops. Remove them to a dish.
- Add the sauerkraut to the pan and stir up the meat juices into it. Add the wine and water, and the juniper berries. (You may use all wine or all water!) The liquid should just come to the surface of the kraut, or just under. Sprinkle on some salt and pepper. Add the optional caraway, if you like. Using a fork, quickly blend everything.
- Bury the pork chops back into the sauerkraut. Cook in a 325 F oven for 40 minutes. Lift out the chops; check the liquid level. Add more liquid if little remains; you don't want the kraut to dry out and burn the pan its final 20 minutes in the oven.
- Arrange the chops on top of the sauerkraut. Return the dish to the oven and cook another 20 minutes. At the end of cooking, little liquid should remain to transfer to your dinner plate. The pork should have browned again. If the kraut should become dry, cover with foil to avoid scorching.
- Serve with boiled or mashed potatoes and a green vegetable. You can make this during the final 20 minutes the pork chops cook.
- *note: if using a very salty, brined sauerkraut, you must rinse it several times.

GERMAN (PORK) SKILLET
This is a recipe from my DH's past. I had never eaten anything like it until he made it for me and then I had to learn how to make it for myself. Make sure you have a skillet with a lid before making this. (Penzey's Spices has a Bratwurst seasoning that I like to use for this, but white pepper and garlic salt are a reasonable substitute)

Steps:
- Drain the sauerkraut and reserve 2 Tbls of the juice.
- Layer the sauerkraut and reserved liquid, rice and onion in a 10 inch skillet.
- Crumble the pork on top in an even layer and pat down gently. Sprinkle the pork with Bratwurst Seasoning OR a combo of white pepper and garlic salt.
- If you are using the horseradish, mix it in the applesauce and spread on top of the pork.
- Cover the skillet and cook over low heat for 30 minutes. Resist peeking so that the rice can absorb most of the liquid.
- OK, now you can peek. Check the rice for doneness. If the rice is done and there is too much liquid for your liking, cook for a few minutes longer to boil off the excess. If the rice isn't quite done yet, add a splash of water and continue until done. Keep an eye on it though as the sauerkraut will burn if your not careful (golden brown is OK, and actually desireable, but black is a NO-NO).

- ad broth and transfer everything to the oven.
- roast covered for 1 1/2 hours at 350°F.
- uncover, stir onions and veggies.
- turn roast over and roast uncovered for 1 hour (if liquid evaporates a lot, add some more occasionally.
- once roasting time has finished transfer meat to a plate to rest.

- Using a sharp paring knife, score the fat cap of the pork in a crosshatch pattern, slicing no more than 1/4-inch deep into fat. Set aside, uncovered, at room temperature on a roasting pan fitted with a rack.
- Cook cumin seeds and caraway seeds in a small skillet over medium, stirring often, until toasted and fragrant, 4 to 5 minutes. Transfer to a small bowl; let stand until completely cooled, about 5 minutes.
