Provided by Boo Chef in West Te

Categories     Pork

Time 30m

Yield 4 chops, 4 serving(s)

Number Of Ingredients 10

3/4 teaspoon caraway seed
1/2 cup distilled white vinegar or 1/2 cup cider vinegar
1/3 cup light brown sugar
1/3 cup beer
2 tablespoons Dijon mustard
3 tablespoons whole grain mustard
2 teaspoons soy sauce
1 tablespoon minced fresh thyme leave
4 center-cut boneless pork loin chops, 5 to 7 ounces each, 1/2 to 3/4 inch thick
1 tablespoon vegetable oil

Steps:

  • 1. Toast caraway seeds in small dry skillet over medium heat, stirring frequently, until fragrant, 3 to 5 minutes. Combine all glaze ingredients in medium bowl; mix thoroughly and set aside. Following illustrations below, trim chops and slash through fat and silver skin with sharp knife, making 2 cuts about 2 inches apart in each chop (do not cut into meat of chops). Pat chops dry with paper towels; season with salt and pepper.
  • 2. Heat oil in heavy-bottomed 12-inch skillet over medium-high heat until smoking. Add pork to skillet and cook over medium heat until well browned, 4 to 6 minutes. Turn chops and cook 1 minute longer; transfer chops to plate and pour off any oil in skillet. (Check internal temperature of thinner chops; see note above.) Return chops to skillet, browned side up, and add glaze mixture; cook until center of chops registers 140 degrees on instant-read thermometer, 5 to 8 minutes. Remove skillet from heat; transfer chops to clean platter, tent with foil, and let rest 5 minutes.
  • 3. When chops have rested, add any accumulated juices to skillet and set over medium heat. Simmer, whisking constantly, until glaze is thick and color of dark caramel (heatproof spatula should leave wide trail when dragged through glaze), 2 to 6 minutes. Return chops to skillet; turn to coat both sides with glaze. Transfer chops back to platter, browned side up, and spread remaining glaze over chops. Serve immediately.

Categories     main-dish

Time 35m

Yield 2 servings

Number Of Ingredients 5

1/3 cup olive oil
2 (12 to 16-ounce) bone-in pork loin chops
Salt and freshly ground pepper
2 pinches crushed red pepper flakes
1 cup maple syrup

Steps:

  • Preheat oven to 500 degrees F.
  • In a large oven-safe saute pan over high heat, heat the olive oil until oil ripples. Season pork chops on both sides with salt and pepper and crushed red pepper flakes. Sear the chops, presentation side down, until browned. Then flip and cook until the other side is browned. If the chops are more than 2 inches thick, sear them on the sides as well, using tongs to hold them.
  • Once a uniform sear is achieved, remove the pan from the heat and pour the syrup over the chops. Cook in the oven for 20 to 25 minutes or until firm to the touch. A meat thermometer should register 150 degrees F.
  • When fully cooked, remove the pan from oven and place it over a burner on high heat for a minute to thicken the glaze. Flip the chops so they are evenly coated and serve immediately.

GERMAN PORK CHOPS AND SAUERKRAUT

German Pork Chops and Sauerkraut image

As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

Provided by Pat Mathena Oglesby

Categories     World Cuisine Recipes     European     German

Time 1h10m

Yield 8

Number Of Ingredients 6

8 center cut pork chops
2 pounds sauerkraut, drained
1 large red apple, diced
1 onion, chopped
1 cup brown sugar
1 tablespoon caraway seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
  • Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

SMOKED PORK CHOPS WITH MAPLE GLAZE

Smoked Pork Chops With Maple Glaze image

This recipe is from the "12th Edition of the Better Homes & Gardens Cookbook". The smoky and salty flavor of the pork chops is complimented by the sweet and savory maple glaze. DH and our toddler DD happily gobbled it down. Yum!

Provided by MarthaStewartWanabe

Categories     Pork

Time 25m

Yield 2 serving(s)

Number Of Ingredients 8

2 smoked pork chops, bone-in, 1/2 inch thick
2 tablespoons olive oil
1/8 teaspoon black pepper, freshly ground
1/4 cup maple syrup (real or imitation)
1/4 cup apple juice
1 teaspoon cornstarch
1/4 teaspoon sage, dried, ground
1/8 teaspoon black pepper, freshly ground

Steps:

  • In a medium skillet (cast iron preferred), heat oil over medium-high heat until glistening.
  • Season both sides of pork chops with 1/8 teaspoons black pepper. Brown in hot oil for 5-8 minutes on each side or until heated through (and nicely browned).
  • Meanwhile in a small saucepan, whisk together remaining ingredients. Cook over medium heat until thickened and bubbly.
  • Once pork chops are browned, remove to a serving platter (or individual plates). Spoon maple glaze evenly over both and serve.

SPICY HONEY-GLAZED GRILLED PORK CHOPS WITH PEACH PICO DE GALLO

Spicy Honey-Glazed Grilled Pork Chops With Peach Pico de Gallo image

These grilled pork chops are flavored with a spiced-honey glaze that helps them get a nice char. Serve with a chunky peach pico de gallo.

Provided by Rachel Gurjar

Yield 4 servings

Number Of Ingredients 14

4 (1½"-thick) bone-in pork chops (about 4 lb. total)
3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided, plus more
1 Tbsp. crushed red pepper flakes
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. smoked paprika
1 tsp. cumin seeds, divided
½ cup honey
2 ripe peaches or nectarines, cut into 1" pieces
½ small red onion, finely chopped
1 jalapeño, finely chopped
Juice of 2 limes
¼ cup chopped cilantro
Vegetable oil (for grill)

Steps:

  • Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
  • Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat honey in a small saucepan over medium just until warm. Remove pan from heat and stir in spice mixture. Set spiced honey aside.
  • Toss peaches, red onion, jalapeño, lime juice, cilantro, remaining ½ tsp. cumin seeds, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a medium bowl to combine. Chill peach pico de gallo until ready to serve.
  • Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. Move pork chops to cooler side of grill, cover, and grill, turning often and basting with reserved spiced honey, until an instant-read thermometer inserted into the thickest part of pork chops registers 145°, about 5 minutes longer. Transfer pork chops to a platter and let rest 10 minutes.
  • Spoon peach pico de gallo over pork chops just before serving.

PORK CHOPS GERMAN STYLE

Pork Chops German Style image

This recipe has been a family favorite for 30 years! I learned to prepare this from a neighbor who was from Germany, hence the name! My hubby doesn't eat mustard but this is his all time favorite - be sure to try!

Provided by MLT

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Pan Fried

Time 45m

Yield 4

Number Of Ingredients 5

4 center cut pork chops
½ cup prepared mustard
¼ cup all-purpose flour
3 tablespoons vegetable oil
1 (10.5 ounce) can condensed chicken and rice soup

Steps:

  • Prepare the pork chops by coating both sides of each one with mustard. Dredge the coated chops in flour. Heat the oil in a large skillet over medium-high heat. Place pork chops into the hot oil, and cook until browned on both sides. Remove from pan, and discard any excess oil in the pan.
  • Return the chops to the pan, and reduce heat to low. Pour undiluted soup over the chops, making sure to put an ample amount of rice on each one. Cover, and cook on low for 30 minutes, or until pork is no longer pink, and the juices run clear. Baste the chops occasionally, and add water if necessary.
