GERMAN CUCUMBER SALAD WITH SOUR CREAM DRESSING - JUST LIKE OMA'S

Steps:
- Peel the cucumbers if desired and thinly slice them with a mandoline slicer. The thinner the better!
- Place the cucumbers in a colander and salt them...generously.
- Cover the cucumbers with paper towel and place the colander over a bowl to allow the cucumbers to drain the excess water for at least 2 hours.
- Squeeze the cucumbers to remove any excess water...you want them as dry as possible.
- Add the cucumbers to a bowl and prepare dressing.
- Combine all the ingredients for the dressing in a small bowl and then pour over the cucumbers. Toss gently to combine.
- Cover and refrigerate for at least 1 hour before serving.

CREAMY CUCUMBER SALAD
Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.

Creamy German Cucumber Salad, or Gurkensalat, is a fresh and simple side dish featuring thinly sliced cucumbers in a sour cream and dill dressing!

- In a medium bowl, stir together the sour cream, garlic, white wine vinegar, dill, sugar, 1/4 teaspoon salt, and pepper until well-combined. Cover and refrigerate.
- Peel and very thinly slice the cucumbers. Add the cucumber slices to a colander placed over a deep bowl. Sprinkle with the remaining 3/4 teaspoon salt and stir well to coat all of the slices. Loosely cover with a paper towel (or a clean kitchen towel) and allow to drain for 2 hours, stirring every 20 minutes or so.
- After 2 hours, press down on the cucumbers in the colander to extract any extra moisture. Spread out the slices on a couple of paper towels and pat dry. Remove the dressing from the fridge and stir in the cucumber slices. Either serve immediately or return to the refrigerator for 1 hour or up to overnight. Just before serving, adjust the salt and pepper, to taste.

GERMAN CUCUMBER SALAD WITH SOUR CREAM
This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

- Soak the kukes and onions in salt water for 30 minutes.
- In a small bowl, stir together the evaporated milk and sugar.
- Add vinegar a little at a time until well blended and starts to thicken some. Add more vinegar if needed to taste for sweet/sour you prefer.

I grew up eating this salad and love it. It's a bit different than most North American cucumber salads I've seen as there is no sour cream in it, only a simple oil and vinegar dressing. Usually it's been made using only cucumbers but sometime cooked green and/or yellow beans and/or tomatoes are added. The quantity of oil and vinegar dressing may need to be adjusted if additional veggies are used.
