- Preparing the soufflé dish: Heat oven to 200C/fan 180C/gas 6 and place a baking sheet on the middle shelf. Butter a 15cm soufflé dish generously, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Tip out any excess breadcrumbs.
- Making a thick white sauce: In a pan, melt the butter over a medium heat; stir in the flour and mustard. Cook, stirring, for 1 min. Take off the heat and gradually stir in the milk, mixing it in thoroughly before adding more. Return to the heat and stir continuously until very thick (around 10 mins). Transfer to a bowl and allow to cool. Crack the eggs, placing the whites into a clean bowl and stirring the yolks into the sauce. Stir in cheddar and season well.
- Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
- Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.

COTTAGE CHEESE GERMAN STYLE
Growing up we had a neighbor from Germany that used to make this. What makes this unusual is the preparation. I don't know what it's called, but I know she used it as a dip & a dressing. It's great as a topping for baked potatoes, or with raw veggies, good bread etc. She'd have it in the evening as a snack with her glass of wine that she put Sweet Woodruff (a flower/ground cover she grew in her garden) leaves in, (also a German tradition). This is really nice to have on hand. Her original recipe called for MSG, which I omit. You can put in any amounts of your favorite seasonings, I think she just added her favorites or whatever she was in the mood for. However the caraway seeds are a desirable flavor addition which demand that this sits a bit to soften the seeds. Otherwise, it could be used right away, or kept on hand in the fridge through the week. You can also add green onion, or anything else that strikes your fancy.

- Put 1/4 of the cottage cheese into a wire strainer, & with a spoon press the cottage cheese through the strainer into a bowl, proceed until you have pressed all of the cottage cheese through the strainer.
- Add your herbs & spices.
- Let set covered in the refrigerator for an hour or two or until the caraway seeds have softened.
- Use as you like.

CHILI CHEESE SOUFFLE

- Preheat the oven to 375 degrees. Butter a 1 1/2 quart souffle dish. In a heavy-bottomed saucepan, bring the milk to a boil, being careful not to allow it to scorch or boil over. Remove from the heat and reserve. In a second saucepan, melt the butter over low heat. Add the flour, stirring with a wooden spoon, until completely combined. Pour 1/3 of the milk into the butter mixture and, using a wire whisk, incorporate it completely before adding the remaining milk. When all of the milk has been added, continue cooking over low heat for 5 minutes.
- Add the cheese to the hot milk mixture, stirring carefully. Do not let the mixture boil or the cheese will separate. Stir in the jalapeno, salt and pepper and remove from heat.
- Let the liquid cool for 5 minutes, add several tablespoons of liquid to the egg yolks and stir together. Then add the yolks to the cheese and milk mixture slowly, stirring with a wooden spoon. Transfer the mixture to a mixing bowl and allow to cool completely before finishing the souffle. In a mixing bowl, whisk the egg whites to stiff peaks. Fold 1/3 of the beaten whites into the cheese mixture and then carefully fold in the remaining whites, being careful not to deflate the whites. Pour the souffle mixture into the souffle dish and bake for 45 minutes. Serve immediately.
COTTAGE CHEESE SOUFFLE

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x9-inch baking dish.
- In a large bowl, beat the eggs, and slowly whisk in whole wheat flour, baking powder, salt, garlic, red pepper flakes, and nutmeg. Mix in the cottage cheese, Cheddar cheese, and bacon. Transfer the mixture to the prepared baking dish.

- Position rack in center of oven and preheat to 425 degrees.
- Spread butter over the bottom and sides of a 2 quart souffle dish and dust with 1 tablespoon sugar.
- Combine all remaining ingredients except cottage cheese and 1 tablespoon sugar in blender and blend until smooth.
- Add cheese and blend at low speed just until mixed, about 5 seconds.
- Pour custard into prepared dish.
- and bake for 30 minutes.
- Lower oven temperature to 350 and bake 10 minutes longer.
- Sprinkle custard with 1 tablespoon sugar.
- Bake for 5 more minutes.

- Preheat oven to 350°F.
- If using a bread machine: Combine 1st 7 ingredients per instructions of your bread machine on dough setting and let rise about 45 minutes.
- If making by hand: Combine Flour and 60 g sugar in mixing bowl. Combine yeast & milk and mix in another bowl. Mix Yeast/milk mixture with 1 egg and butter with the flour mixture. Combine both bowls and mix with the kneading hooks of the hand mixer for 3-4 minute Cover bowl and put in warm place for 30 min until it has risen noticeably.
- If using food processor: Combine last 4 ingredients in food processor and blend until smooth. (You can do this by hand, but you will need to somehow whip the cottage cheese until smooth.).
- Turn out dough on floured surface and knead again and roll out to a floured work surface to a rectangle of 12 x 8 in (30x20 cm). Spread the cottage cheese/pudding mix on the dough rectangle leaving a 1 inch edge. Roll pastry from the wide side, jelly roll style. Cut into 12 disks and place on baking sheet covered with baking parchment. Let rise for 10 minute Place baking pan in center of oven. Bake 25 - 30 minute.
- Let cool slightly and serve warm.

- Preheat the oven to 350 degrees. Lightly coat a 6-cup souffle dish with nonstick cooking spray. Sprinkle with the 1 tablespoon confectioner's sugar to coat the dish.
- Put the cottage cheese, sugar, egg yolks, and lemon rind in a blender. Process 1 minute until well blended.
- In a medium bowl, beat lemon juice and egg whites until soft peaks form. Gradually beat in 1/3 cup confectioner's sugar until stiff glossy peaks form.
- Put 1 cup of the beaten egg whites in the blender with the cheese mixture. Process until blended.
- Pour cheese mixture into bowl with egg whites and carefully fold in just until combined. Pour into the prepared souffle dish.
- Place the souffle dish in a pan just big enough to hold it. Fill the pan with hot water to come halfway up the side of the souffle dish. Bake at 350 for 35 minutes.
- While souffle is baking, make the sauce: Combine 1 1/4 cups water, sugar, lemon juice, lemon rind, and ginger in a small saucepan. Bring to boiling over medium heat.
- Dissolve cornstarch in 2 tablespoons water until blended. Stir into lemon sauce mixture. Boil 1 minute.

- In a large bowl, mix graham cracker crumbs, cinnamon and butter until smooth. Measure 1 cup crumb mixture and set aside. Press remaining mixture on bottom and sides of a 12 inch springform pan. Chill for 1 hour in refrigerator or 1/2 hour in freezer. Preheat oven to 350 degrees F (175 degrees C). Mix together cottage cheese and flour. Pour this mixture into food processor and mix well. In a medium bowl, beat eggs until frothy. Add sugar, gradually to eggs, beat until light and fluffy. Add salt, lemon juice, lemon peel and vanilla until smooth. Fold in whipping cream.
