BAKED RIGATONI WITH SAUSAGE

- Preheat the oven to 400 degrees F.
- For the topping: Add the ricotta, basil, and salt to a small bowl. Stir together with a rubber spatula. Set aside.
- For the pasta: Bring a large pot of water to boil. Season well with salt and cook the rigatoni for 5 minutes. Drain well, reserving 1/2 cup pasta water.
- Meanwhile, heat a large braiser or ovenproof skillet over medium-high heat. Add the olive oil and sausage to the pan. Cook, stirring often and breaking apart the meat with the back of a spoon, until beginning to brown, about 7 minutes. Add the broccoli and garlic and cook to marry the flavors, about 3 minutes. Stir in the marinara and 1/4 teaspoon salt until fully combined. Add the pasta to the pan and sprinkle with 1/2 cup of the Parmesan cheese. Toss well to coat. Add the reserved pasta water to thin the sauce slightly.
- Dollop the ricotta cheese mixture evenly over the top. Nestle the ricotta mixture into the pasta and cover with some of the pasta. Sprinkle with the mozzarella and remaining 1/2 cup Parmesan cheese and bake until golden brown and bubbly, about 20 minutes. Allow to sit for 5 minutes before serving.
CHEESY SAUSAGE RIGATONI

- Bring a large pot of water to a boil. Cook the rigatoni according to the package instructions; drain and set aside to cool.
- Saute the onions in the olive oil in a skillet over medium heat until golden, 3 to 4 minutes. Crumble in the sausage, add the crushed red pepper and cook for a couple of minutes. Add the marinara sauce, mix everything together and cook for 5 to 7 minutes. Set aside to cool.
- To assemble, add about 2 spoonfuls of the sauce--just enough to coat the bottom--to a baking dish. Then layer half of the cooled noodles, half of the mozzarella cubes and half of the remaining sauce. Repeat the process: layer the remaining noodles, mozzarella and sauce, then top with the Parmesan. Cover and put in the fridge or freezer until ready to cook.
- When ready to cook, preheat the oven to 350 degrees F. Cook the rigatoni until heated through and bubbling, 25 minutes straight from the fridge, or 2 hours straight from the freezer. Garnish with minced parsley before serving.

- Cook pasta as directed on the package.
- Meanwhile, cook sausage on medium-high for 10 minutes or until done in a large nonstick skillet. Add tomatoes, onions and dressing; cook 5 minute or until onions are crisp-tender, stirring occasionally.
- Drain pasta. Toss wtih the sausage-tomato mixture and 1/2 cup cheese.
- Sprinkle the top with the remaining cheese and enjoy!
CHEESY SAUSAGE QUICHE
This is a savory,hearty quiche that even men who "don't eat quiche" will love. This recipe is from a childhood friend of my husband.

Steps:
- Brown sausage and drain then rinse with hot water to remove excess fat.
- Place sliced onion in drippings from sausage and cook until onions are translucent.
- Remove and blot in paper towel to remove excess fat.
- Mix sausage and cheese with green pepper (optional) and add flour and mix until coated with flour.
- Place in unbaked pie shell.
- Place onions ontop of quiche.
- Mix spices with beaten egg and add evaporated milk, and stir.
- Pour milk mixture evenly over the quiche.
- Bake at 350 degrees for 35-40 minutes or until quiche is set.
- Let set for 10 minutes before serving.
CHEESY SAUSAGE ROTINI CASSEROLE
This is a recipe my mom often made for us and I've added some extra's to it. It is so convenient to have ingredients chopped ahead of time and throw everything together when ready to cook.

Steps:
- Cook pasta according to package directions, add broccoli to water for last 3 minutes.
- Drain and set aside.
- Toss the next 9 ingredients into the pasta mixture.
- Also add 1 cup of the cheese to mixture and toss well.
- Pour into a casserole dish greased with butter.
- Top the casserole off by sprinkling rest of the cheese, soda crackers and parmesan cheese.
- Bake in oven covered for 50 minutes, then bake an additional 10 minutes uncovered.
- The leftovers freeze well.
- We freeze individual containers to take to work for lunch and pop them in the microwave.
