THE BEST BAKED SALMON
This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
- Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

- Preheat oven to 350 degrees.
- Melt the butter in a sauce pan and add the lemon juice, cilantro paste, garlic, salt and pepper once the butter is melted.
- Rinse the salmon filet and pat dry.
- Place salmon uncovered in aluminum foil and place inside a glass or metal baking pan. Cover the top of the salmon with butter mixture. Sprinkle panko bread crumbs lightly over the top.
- Bake at 350 degrees for 30 minutes. After baking, place the salmon under the broiler on low setting for 3-4 minutes or until panko crumbs are crispy and brown.
- ** If they don't carry cilantro paste where you shop, you can make your own with a bunch of cilantro and a drizzle of olive oil in a food processor.

- Preheat oven to 220°C (425°F ) and line a roasting tin with lightly greased or sprayed foil.
- Combine the butter, dill, lemon zest and juice in a small saucepan over low heat and stir until the butter has melted. You can also use the microwave for this step.
- Place the salmon fillets onto the foil and brush generously with the herbed butter.
- Depending on the thickness of the salmon fillets, bake for 12 minutes or until cooked to your liking.
- Serve hot drizzled with the cooking juices. Serve with chips, salad, veges or a rice side to make a complete meal.

- In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.
- Place salmon fillets in a medium glass baking dish, and cover with the marinade.
- Marinate in the refrigerator about 1 hour, turning occasionally.
- Preheat oven to 375 degrees F (190 degrees C).
- Place fillets in aluminum foil, cover with marinade, and seal.
- Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.
BLUE CHEESE BAKED SALMON
A friend mentioned baking salmon with blue cheese at dinner one night. Salmon? Blue Cheese? Sounded YUM to me! I couldn't find an actual recipe here so I came up with my own.

- 1. Preheat oven to 375 degrees.
- 2. Place salmon fillets in pan.
- 3. Lightly season both sides with salt and pepper.
- 4. Spoon 1 -2 tablespoons of blue cheese dressing over the top of the salmon. Put enough to cover the top of the fillet.
- 5. Bake for 25 minutes (or until the fish flakes easily) in oven.
- 6. Option using blue cheese crumbles: Bake for 20 minutes, spread the blue cheese crumbles on top and bake another 5 minutes.

GEORGIAN BAKED SALMON
My friend David made this up using his basic plan for baking fish adding some Svaneti salt as the only seasoning. Svaneti salt is from East Europian Georgia. It is a blend of Caraway seeds, Coriander, Fenugreek, Tellicherry Black Pepper, Garlic, and Aleppo Chilies all ground and mixed with Sea Salt. www.worldspice.com carries it. David claims this works really well with almost any fish. He's a great cook so I believe him.

Steps:
- Preheat the oven to 400°F with an oven proof frying pan in it.
- David used a tinned copper pan that was oblong, just large enough for the fillet to lay in the bottom.
- Search for bones, wash and prepare the fillet (s).
- Spray both sides lightly with cooking oil.
- Remove the hot pan to a hot burner.
- Place the fish, skin side up in the pan.
- Sear for 30 seconds or so.
- Turn over, sear skin side for 30 seconds sprinkle with Svaneti Salt, and return the pan to the oven.
- Cook until it's just done, 5-10 minutes Be careful not to over cook it.
- Serve with a nice pilaf, a loose leaf lettuce salad and a chilled Reisling.
