1 ½ cups all-purpose flour
2 tablespoons chopped crystallized ginger
½ teaspoon ginger
¼ teaspoon salt
½ cup butter-flavored shortening (such as Crisco®)
½ cup white sugar
2 egg yolks
1 tablespoon cold water
½ cup apricot preserves

Steps:

  • Whisk flour, crystallized ginger, ground ginger, and salt together in a bowl.
  • Beat shortening and sugar together in a bowl until smooth and creamy. Add egg yolks 1 at a time, beating well after each addition. Gradually beat flour mixture and cold water into egg mixture until dough is well-combined. Cover the bowl with plastic wrap and refrigerate until chilled, at least 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Press chilled dough into a 7x11-inch baking dish. Spread apricot preserves over the top.
  • Bake in the preheated oven until golden brown around the edges, 35 to 40 minutes. Cool for 1 hour before cutting into bars.

6 pounds small ripe apricots (48 to 50), halved, pitted, and cut into eighths
3 cups sugar
1 1/2 cups honey
1/4 cup crystallized ginger, minced
1/4 cup freshly squeezed lemon juice, (1 to 2 lemons)

Steps:

  • In a large bowl, toss together all the ingredients. Let stand, covered with plastic wrap, at room temperature 3 hours, or refrigerate overnight.
  • In a heavy-bottom 5-quart pot, bring apricot mixture to a boil over medium-high heat. Reduce heat to medium-low; simmer, skimming foam from surface as needed, until fruit is transparent and falls apart slightly, about 20 minutes (cooking time will vary depending on the ripeness of the fruit). If the mixture seems too watery, strain out fruit, and continue cooking syrup about 5 minutes more, then return fruit to pan. Let cool completely, then pour the jam into 1-to-2-cup-capacity airtight containers.

½ cup almond meal
½ teaspoon baking soda
¼ teaspoon salt
1 cup gluten-free rolled oats
½ cup packed light brown sugar
½ cup white sugar
½ cup unsalted butter, melted
2 teaspoons vanilla extract
¼ teaspoon almond extract
⅓ cup white sugar
1 tablespoon cornstarch
2 cups pitted and diced apricots
1 tablespoon diced fresh ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish and line with parchment paper; grease parchment paper.
  • Whisk flour, almond meal, baking soda, and salt together in a bowl. Add oats, brown sugar, and 1/2 cup white sugar; whisk to blend and break up clumps of brown sugar. Pour melted butter, vanilla extract, and almond extract over flour mixture; stir with a spatula until moistened.
  • Press 2/3 of the flour mixture into the bottom of the prepared baking dish to make the crust.
  • Whisk 1/3 cup white sugar and cornstarch together in a small bowl. Add apricots and ginger and toss to coat.
  • Spread apricot mixture over the crust. Sprinkle remaining 1/3 of the flour mixture on top.
  • Bake in the preheated oven until top is golden brown and crisp and filling is bubbling, 35 to 40 minutes. Cool completely before cutting into bars, about 25 minutes.

8 cups chopped de-stoned apricots
4 cups white sugar
1/2 cup lemon juice
2 -3 tablespoons grated fresh ginger
1 tablespoon unsalted butter

Steps:

  • Wash, chop and de-stone apricots. Have jars sterilized in preparation.
  • Measure 8 cups of chopped apricots into a large stock pot, along with the 4 cups of sugar, 1/2 cup lemon juice, and grated ginger.
  • Bring to a boil over a high heat, stirring occasionally. Once at a rolling boil, turn down the heat to keep it at a controlled boil for 23 minutes, stirring often to prevent sticking. Note: It should be bubbling, not simmering. Start your timer when it begins to boil and at this stage add the 1 tablespoon of butter.
  • At the end of 23 minutes it should have reduced down to a thick, sticky consistency but will still slide easily off the spoon. Don't worry, it will thicken as it cools.
  • Jar while it is still warm and moves easily.

At the end of each holiday season I have a canister of cookie ingredients leftover. From that comes a collection of candies used to accent my trays. This year's bark was sensational and well worth posting. The combination of ginger and dark chocolate bursts in your mouth with every delectable bite. While the flavors here are complex and more sophisticated than my usual bark, but just wonderful year round.

1 (11 ounce) bag semi-sweet chocolate chips (or used chopped bars)
1 (4 ounce) bar dark chocolate (or use chips, the darker the better)
1/2 cup whole almond, toasted
1/4 cup dried cranberries
1/2 cup dried apricot, cut into slivers or large bites
1/4 cup candied ginger, cut into slivers or small bites

Steps:

  • Melt chocolate in a large double-boiler over just simmering water until barely melted. You want to avoid needing to re-temper the chocolate.
  • Stir in the fruits and nuts. Pour out onto a cookie sheet lined with parchment paper.
  • Let cool completely. Break into pieces and serve.

2 sticks (1 cup) unsalted butter, softened
1 cup sugar
1/2 cup unsulfured molasses
1 large egg
3 ounces crystallized ginger, chopped coarse (about 1/2 cup)
1 1/2 tablespoons freshly grated orange zest

Steps:

  • In a bowl whisk together flour, baking soda, salt, and ground spices. In another bowl with an electric mixer beat together butter and sugar until light and fluffy. Add molasses, egg, flour mixture, crystallized ginger, and zest and beat until a dough forms.
  • On a sheet of wax paper pat dough into an 8-by-5 inch rectangle, about 1 inch thick. Chill dough, wrapped in wax paper, 4 hours, or until firm.
  • (After the dough has been formed into a rectangle it can be kept in the refrigerator for one week or the freezer for one month. Thaw the frozen dough in the refrigerator until sliceable, about four hours. The baked cookies keep in airtight containers at room temperature for four days.)
  • Preheat oven to 350° F. and lightly butter 2 baking sheets.
  • Cut dough crosswise into slices about 1/6 inch thick and arrange about 2 inches apart on baking sheets. Bake bars in batches in middle of oven until deep golden brown, 8 to 10 minutes, and transfer to racks to cool. The baked cookies keep in airtight containers at room temperature for four days.

1 1/4 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons (or more) ice water
1/2 cup Grape Nuts
1/2 cup (packed) golden brown sugar
1/3 cup all purpose flour
1/3 cup toasted slivered almonds, finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
1 1/2 pounds apricots, halved, pitted, cut into 1/2-inch slices (about 5 cups)
5 tablespoons sugar
3 tablespoons coarsely chopped crystallized ginger
4 teaspoons cornstarch
1/8 teaspoon almond extract

Steps:

  • Whisk flour, sugar, and salt in large bowl to blend. Add butter; rub in with fingertips until mixture resembles coarse meal. Add 3 tablespoons ice water and stir until moist clumps form, adding more ice water by teaspoonfuls if mixture is too dry. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate 30 minutes.
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter pie dish. Fold overhang under and crimp decoratively. Refrigerate 30 minutes.
  • Preheat oven to 375°F. Line crust with foil; fill with dried beans or pie weights. Bake until dough begins to set, about 20 minutes. Remove foil and beans. Bake until crust is just beginning to brown, about 5 minutes longer. Maintain oven temperature.
  • Mix first 7 ingredients in medium bowl to blend. Add butter; rub in with fingertips until moist clumps form.
  • Mix all ingredients in large bowl to blend. Transfer to warm pie crust.
  • Sprinkle topping evenly over apricot mixture. Bake pie until topping is brown and filling is bubbling thickly, about 45 minutes, covering crust with foil after 30 minutes if browning too quickly. Cool completely. Cut into wedges and serve.

12 ounces store-bought gingersnaps (about 45 cookies)
1/4 cup (1/2 stick) unsalted butter, melted
12 ounces cream cheese, room temperature
3/4 cup sugar
1 large egg
1 large egg yolk
3 tablespoons sour cream
3/4 teaspoon pure vanilla extract
2 tablespoons finely chopped crystallized ginger

Steps:

  • Preheat oven to 350 degrees. Coat a 9-by-13-inch rimmed baking sheet with cooking spray; set aside. Place gingersnaps in a food processor; pulse to a powder. Transfer to a small bowl, and stir in butter until well combined. Press gingersnap mixture evenly into bottom of prepared baking sheet. Bake crust until firm, about 12 minutes. Let cool completely.
  • Meanwhile, put cream cheese in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until softened. Mix in sugar, egg, egg yolk, sour cream, and vanilla until well combined. Mix in crystallized ginger.
  • Pour the cream cheese mixture onto crust, and spread evenly with a rubber spatula. Bake, rotating sheet halfway through, until filling has puffed and feels slightly firm to the touch (do not let brown), 20 to 25 minutes. Let cool completely on a wire rack. Refrigerate, covered with plastic wrap, until set,about 1 hour. To serve, cut into bars.
