- Prepare the cake:.
- Preheat oven to 350. Melt chocolate and margarine together in double boiler or small pan placed in larger pan with boiling water. Beat egg yolks with sugar till pale. Add almonds and melted chocolate mixture; mix very well. In separate bowl, beat egg whites stiff, then fold them inches Grease a nonstick 9-inch cake pan and dust with matzo cake meal. Pour mixture in pan, bake 45 minutes.
- Prepare the glaze:.
- In a preheated 350° oven, spread almonds on small baking sheet and toast for 7 minutes, until fragrant. In small saucepan, melt chocolate in coffee over low heat, stirring, just until smooth, about 3 minutes. Remove pan from heat, stir in margarine until melted.
- Invert cooled cake onto a serving plate. Using a metal spatula, spread chocolate glaze evenly over top and sides of cake. Arrange toasted nuts in a ring around top of cake, refrigerate for at least 30 minutes to set glaze.

Steps:
- Knead the butter.
- Melt the chocolate with 2 tablespoons of water.
- Mix the butter and chocolate.
- Seperate the eggs.
- Add yolks to chocolate/butter mixture.
- Add sugar, flour, and almonds to mixture.
- Beat the egg whites until stiff.
- Fold egg whites into chocolate batter.
- Cook for 40 minutes in a 210C (4-5) oven.
- Verifier doneness when toothpick comes out clean.

LE FRANCAIS GâTEAU AU CHOCOLAT
This is from Le Francais restaurant in suburban Chicago which was absolutely the best French restaurant in the Chicago area when I lived there. I was fortunate enough to dine at the restaurant several times and we were always very pleased with each experience.

Steps:
- Preheat your oven to 250°F
- Break the chocolate up into chunks and place it with the butter into the top of a double boiler. Melt and blend this mixture over simmering water.
- Stir 1 1/4 cups of the sugar into the melted chocolate and continue heating until the sugar has been completely absorbed.
- Best the egg yolks in a separate bowl and little by little beat the chocolate mixture into. Put back in double boiler and cook over simmering water until slightly thickened. Remove from the heat and cool, then add the Grand Marnier and the vanilla extract.
- Beat the egg whites into soft peaks, then gradually add the remaining 1/4 cup sugar and beat until stiff peaks form.
- Spoon 1/3 of the chocolate mixture over the egg whites and fold in carefully. Fold in the remaining chocolate mixture. Spoon into aa greased and floured 12 inch springform pan. Bake for at least 3 hours, or until done. Let the cake cool to room temperature then cover and refrigerate for at least 3 hours. Transfer to a serving platter, dust with powdered sugar, and serve with boiled custard (crème anglaise).

Steps:
- Put the chocolate chips and the butter in a bowl.
- Heat for 1 minute in the microwave on high.
- Stir the chocolate mixture until smooth.
- Mix the flour and sugar with the chocolate mixture and the 3 eggs together.
- Put in a greased 9" round pan or mini muffin pan and cook for 10-15 minutes at 400.
- Remove the cake or mini-muffins and cool.
- Bon appetit!
