HONEY-GARLIC SHRIMP SKEWERS

Steps:
- Heat a grill pan over medium-high heat and a large skillet over medium heat.
- For the shrimp: In a small bowl, mix together the honey, sriracha, crushed red pepper, garlic, lime zest and juice and 1 tablespoon of the parsley. Set the glaze aside.
- Thread the shrimp onto 4 metal skewers, 5 shrimp per skewer. Season both sides with salt and pepper. Place on the grill pan and cook for 2 minutes. Flip the shrimp, brush the top with the glaze and cook for an additional 2 minutes. Flip the glazed side down, brush the top with the glaze and cook for an additional minute. Flip, glaze and cook until the shrimp are cooked through, up to an additional minute per side. Remove from the grill and drizzle with any remaining glaze.
- For the spinach: Meanwhile, heat the oil in the skillet and add the spinach and garlic. Season with salt and pepper and cook until wilted, about 1 minute.
- Make a bed with the spinach on a serving platter. Top with the shrimp skewers and garnish with the remaining parsley.
BBQ TIGER PRAWN KEBABS
I made this recipe again last night and was a bit disappointed in it so I have adjusted the ingredients (4 June 07) and it should be tastier now. The recipe was originally for one of the RSC competitions

Steps:
- Mix the marinade and marinate the veggies for apprx 1 hour.
- Save the marinade (do not marinade the prawns) Thread the skewers alternating the prawns and veggies (EG mushroom, prawn, artichoke, prawn, tomato, prawn, red& green pepper, prawn. artichoke. prawn tomato, prawn, mushroom) Baste with the marinade and BBQ or broil 6" from heat source, medium-high heat Baste again while cooking.
- Cook until the prawns are just pink and the flesh is white (the veggies will be heated through too) Sprinkle each Kebab with parmesan cheese (remove skewer from the heat when you do this hold over plate) Return skewer to brown the cheese (only a minute).

Steps:
- Peel shrimp, leaving tails intact.
- Combine lemon juice, wine, garlic, steak sauce, and pepper in a large zip-top plastic bag; seal, and shake to blend.
- Add shrimp; seal.
- Marinate in refrigerator 20 minutes, turning bag once.
- Prepare grill.
- Remove shrimp from bag, discarding marinade.
- Thread 8 shrimp onto each of 6 (12-inch) skewers.
- Place kebabs on a grill rack coated with cooking spray, and grill 2 minutes on each side or until shrimp are done.
