This turkey marinade is a combination of olive oil, fresh herbs, spices and citrus, all blended together to make the most tender and juicy turkey ever! A quick and easy way to infuse flavor into your holiday turkey with minimal effort.

1 cup olive oil
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup orange juice
1 teaspoon lemon zest
1 teaspoon orange zest
1/2 cup parsley leaves (finely chopped)
1/4 cup chives (thinly sliced)
1/4 cup sage leaves (finely chopped)
2 tablespoons rosemary leaves (finely chopped)
1/4 cup thyme leaves (chopped)
1 tablespoon garlic (minced)
2 teaspoons smoked paprika
1 teaspoon sweet paprika
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Place all of the ingredients in a medium bowl. Whisk until well combined.
  • Pour the marinade over a whole thawed turkey. Rub the marinade to coat all over the outside, then loosen the skin and rub some of the marinade under the skin.
  • Let the turkey sit in the marinade for 12-24 hours.
  • Scrape any large pieces of herbs and garlic off the marinated turkey so that they won't burn when cooked.
  • Roast, smoke or grill the turkey as desired, then serve and enjoy.

1 cup chicken broth
½ cup lemon juice
½ cup butter, melted
1 clove garlic, minced
1 teaspoon English mustard powder
1 teaspoon minced fresh ginger
1 cup butter, softened
3 sprigs fresh rosemary, leaves stripped and finely chopped
2 sprigs fresh thyme, leaves stripped and chopped
2 small cloves garlic, minced
1 (14 pound) whole turkey, neck and giblets removed
1 tablespoon olive oil, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
  • Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
  • Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
  • Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
  • Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.

1/4 cup reduced-sodium soy sauce
4 teaspoons canola oil
1 teaspoon sugar
1 garlic clove, minced
1/2 teaspoon ground ginger
1/2 teaspoon ground mustard
3/4 pound turkey breast tenderloins

Steps:

  • In a small bowl, combine the soy sauce, oil, sugar, garlic, ginger and mustard. Pour 1/4 cup marinade into a large resealable plastic bag; add turkey. Seal bag and turn to coat; refrigerate for up to 4 hours. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. On a lightly oiled grill rack, grill turkey, covered, over medium heat or broil 4 in. from the heat for 8-10 minutes or until a thermometer reads 170°, turning twice and basting occasionally with reserved marinade. 1 turkey (10 to 12 pounds)
6 to 8 garlic cloves, peeled
2 large lemons, halved
2 tablespoons olive oil
2 teaspoons dried rosemary, crushed
1 teaspoon rubbed sage

Steps:

  • Preheat oven to 325°. Cut six to eight small slits in turkey skin; insert garlic under the skin. Squeeze two lemon halves inside the turkey; squeeze remaining halves over outside of turkey. Place lemons in the cavity., Tuck wings under turkey; tie drumsticks together. Place on a rack in a shallow roasting pan, breast side up. Brush with oil; sprinkle with rosemary and sage. For the Turkey:
1 (12-14-pound) whole turkey, thawed if frozen
5 heads garlic, divided
3 tablespoons olive oil
1/2 cup mayonnaise
3 bay leaves
3 sprigs parsley
3 sprigs thyme
1 tablespoon coarse sea salt
1 1/2 teaspoons freshly ground black pepper
For the Pan Sauce:
4 cups turkey or chicken stock
2 tablespoons cornstarch
1 shallot, finely chopped (about 1/4 cup)
1 bay leaf
1/2 teaspoon finely chopped thyme
1/3 cup coarsely chopped parsley
3 tablespoons fresh lemon juice
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Roast the turkey:
  • Pat turkey dry, reserving giblets and neck. Let turkey stand at room temperature 1 hour to air-dry the skin before roasting.
  • Meanwhile, position rack in lower third of oven and preheat to 450°F. Trim 1/4" from top of 3 garlic heads to expose cloves, then place heads on a sheet of foil. Spoon oil over garlic, then wrap tightly in foil to enclose. Transfer to a rimmed baking sheet and roast until very soft, about 40 minutes.
  • Carefully unwrap garlic, let cool slightly, and squeeze pulp into a food processor. Add mayonnaise and blend until smooth.
  • Place turkey on rack in large roasting pan. Cut remaining 2 garlic heads in half crosswise and stuff cavity of bird with garlic head halves, bay leaves, parsley, and thyme. Loosely tie legs together with kitchen twine. Starting at neck end, slide your hand between skin and breast meat to loosen skin. Rub half of mayonnaise mixture under skin, then half over outside. Season both sides with sea salt and pepper. Turn turkey breast side up and place reserved giblets and neck in pan.
  • Place turkey in 450°F oven, then reduce oven temperature to 350°F and roast 1 hour. Rotate pan, wrap wing tips in foil, and continue roasting until an instant-read thermometer inserted into the thickest part of the thigh registers 160°F, 1-1 1/2 hours more.
  • Transfer turkey to a cutting board, reserving turkey drippings and juices in pan, and cover loosely with foil. Let rest at room temperature 30 minutes before carving (internal temperature will rise to 165°F and juices will lock in).
  • Make the pan sauce:
  • Transfer pan drippings and juices to a 2-qt. glass measuring cup, then skim off fat, reserving 2 Tbsp. fat. Add enough stock to pan juices to make 4 1/2 cups total. Combine cornstarch and reserved fat with a fork in a small bowl.
  • Set roasting pan across 2 burners. Remove garlic from interior of turkey, then add to pan along with shallot, bay leaf, and thyme. Cook over medium-high heat, stirring occasionally, until shallots begin to brown, about 5 minutes. Deglaze pan with pan juices mixture, stirring and scraping up brown bits, about 2 minutes. Whisk in cornstarch mixture and cook until liquid is reduced by one-third, about 5 minutes. Strain through a fine-mesh sieve into a large bowl and stir in parsley, lemon juice, kosher salt, and pepper.

2 1/2 to 3 pounds turkey thighs with skin and bones
4 large garlic cloves
Salt
1 tablespoon chili powder
1 teaspoon ground cumin
3 tablespoons olive oil

Steps:

  • Pull off turkey skin and freeze in a small resealable plastic bag. (You can use the skin to make cracklings for our Shredded Kale Salad with Turkey Skin Cracklings. )
  • Cut out the thigh bone from each thigh and save in another resealable plastic bag in the freezer for a future stock.
  • Mash garlic to a paste with 2 teaspoons salt in a mortar and pestle or mince and mash to a paste with a heavy knife.
  • Whisk together the paste with the chili powder, cumin, and olive oil and spread it all over the thighs in a baking dish. Cover the dish and marinate the thighs, chilled, at least 2 hours.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure, below.
  • Oil grill rack, then grill thighs (cover only if using a gas grill), turning once or twice, until thermometer registers 170°F, 15 to 25 minutes. Transfer to a platter and let stand 5 to 10 minutes before slicing.
  • Grilling Procedure:
  • Charcoal Grilling Instructions: Open vents on bottom of grill. Light a large chimney starter full of charcoal (preferably hardwood).
  • For Direct-Heat Instructions: When coals are lit, dump them out across bottom rack, leaving a space free of coals on one side of grill equal to the size of the food to be grilled where food can be moved in case of any flare-ups.
  • When charcoal turns grayish white (start checking coals after 15 minutes), the grill will be at its hottest and will then begin to cool off. It will be at the proper medium-hot temperature when you can hold your hand 5 inches above the grill rack (directly over the coals) for 3 to 4 seconds.
  • Gas Grill Instructions: Preheat all burners on high, covered, 10 minutes, then adjust heat according to recipe.

2 cups vegetable oil
1 1/2 Tablespoons Beau Monde seasoning
1 1/2 Tablespoon salt
2 Tablespoons Hungarian Paprika

Steps:

  • Combine all ingredients in a blender. Process until well combined. Makes enough marinade for 15-20 pound turkey. Whole turkey, cleaned and dried Place turkey in a large heavy duty plastic bag. Wearing rubber gloves, rub generous amounts of the marinade into the meat. Rub the remaining marinade into the outside of the turkey. Place turkey in second plastic bag and seal. This helps keep the pungent odor of the garlic to a minimum in the refrigerator. Put turkey in a large pan or bowl in the refrigerator and refrigerate for 24-48 hours. During that time turn every so often and rub the marinade into the turkey through the plastic bag. Remove the turkey from the refrigerator. Wearing rubber gloves, remove the turkey from the marinade and wipe off some of the clinging garlic and spices. I prefer to roast a whole turkey with the breast down. It will also cook the thighs and legs more quickly and evenly. This breast down method will not give you that beautiful 'Norman Rockwell' turkey you carve at the table, but this method self bastes the breast resulting in a moister turkey. I also do not stuff the turkey as I find you have a moist stuffing but a dry bird. Roast following the package directions or you can smoke the turkey.
