EASY SWISS STEAK
An easy to make one dish meal that I found in a grocery store cookbook. Add hot rolls and it is dinner! Yum!

Steps:
- Heat oven to 325 degrees Fahrenheit.
- Cut beef into serving size pieces and arrange in 2 quart baking dish.
- Top beef with carrots and onion.
- In a bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper; mix well.
- Pour gravy mixture over meat and vegetables.
- Cover with foil.
- Bake for 2 hours.
- Make the instant garlic mashed potatoes as instructed on the package, adding 1/4 teaspoon thyme and dried parsley.
- Uncover meat, top with dollops of potatoes (you can pipe the potatoes on top to make it prettier if you want).
- Bake uncovered an additional 20 minutes until potatoes are just light brown.

- Cut steak into serving-size pieces. Combine flour, salt and 1/4 teaspoon pepper; sprinkle over steak and pound into both sides. - In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. - Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.

An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

- Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
- Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.

- Chop tomatoes.
- Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
- Cut meat into serving pieces.

- Cut meat into 6 serving pieces.
- Combine flour, salt, mustard, pepper, and garlic powder.
- Put 2 T. of the flour mixture into the meat.
- Brown the meat in the shortening on both sides.
- Drain off excess fat.
- Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
- Cover and simmer for 1 1/4 hours or until meat is tender.
- Remove meat to a serving platter and keep warm.
- Combine 1/4 water and the remaining flour mixture.
- Stir into tomato mixture until thick and bubbly.
- Pass with meat.
- Serve meat and sauce with hot cooked noodles or rice.
- Crock pot directions:.
- Prepare swiss steak as above except cut meat to fit your crock pot.
- After browning meat, transfer to crock pot.
- Stir remaining flour into pan drippings in the skillet.
- Stir in the remaining ingredients and cook until thick and bubbly.
- Pour over meat in the crock pot.
- Cook on low for 8 to 10 hours.
- Serve with hot cooked noodles or rice.
- Oven directions:.
- Place meat in a baking dish.
- Cover with thickened drippings and veggies as above.
- Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
- Serve with hot noodles or rice.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. - Melt 2 tablespoons of butter in a cast iron Dutch oven. Add onion and green pepper and cook until soft, about 5 minutes. Remove onion and green pepper to a bowl and set aside.
- Season both sides of cube steak with salt and pepper and dredge in flour. You want a thick coating of flour because it will help thicken the sauce.
- Add 2 tablespoons vegetable oil to Dutch oven. Working in 2 batches, cook cube steak until browned on both sides (it will not be cooked through).
- Leave the second batch of cube steak in the Dutch oven and return the first batch plus the onion and green peppers to the Dutch oven.

SWISS STEAK
This is my variation of the Swiss steak that my dad used to fix as a lunch special at his restaurant. He used the cap meat off of uncooked prime ribs, which can't hardly be found unless you are on real good terms with your butcher, but these are almost as good.

- While you prepare the meat, heat 2 Tsp olive oil in a large nonstick skillet over medium heat.
- Add onions and mushrooms, and stir to coat with oil.
- Cook, stirring occasionally, until onions are softened and lightly browned and mushroom juices have evaporated.
- Remove from pan, and set aside.
- Trim all excess fat from steak and cut into 2" by 3" pieces.
- Season generously on both sides with seasoned salt, granulated garlic, pepper, salt, and optional MSG.
- ,if desired, and set aside for about 10 minutes.
- Dump flour on counter or heavy cutting board, coat each piece of meat with flour, and set aside.
- Return a piece of meat to the flour, mounding more on top, and beat the flour into the meat with the edge of a heavy saucer or small heavy plate, making a crisscross pattern on both sides of the meat.
- Continue doing this until you can actually feel the meat starting to tenderize and the thickness is reduced to about 1/2".
- Repeat with remaining pieces of meat, and flour all pieces of meat one last time after tenderizing last piece.
- Preheat oven to 350 degrees F.
- Return nonstick skillet to medium heat, and add half of the remaining olive oil.
- When oil is hot enough that a small pinch of flour sizzles, add enough meat to form a single layer without crowding.
- When bottom side is about half browned, rearrange meat in the pan without turning over.
- When browned, turn meat, and repeat for other side.
- Remove meat and as much of the browned bits as possible to a plate.
- Add remaining oil to pan, and brown remaining meat as above.
- Set meat aside, drain all excess grease from skillet, leaving browned bits in pan and adding reserved browned bits from first batch of meat.
- Return skillet to heat, and add one can beef broth.
- Stir and scrape bottom of pan to loosen and soften crusted breading.
- Add onion mixture and remaining beef broth.
- Add the juice from the peeled whole tomatoes, and use your hands to squeeze the tomatoes into pulp as you add them to the skillet.
- Bring to a simmer and cook about 5 minutes, breaking up piece with the back of a wooden spoon.
- Place meat in a small Dutch oven, arranging so pieces form sort of a lattice work.
- Add all of the tomato-onion mixture, and move meat around to ensure that all the meat is in contact with the liquid.
- If liquid does not cover the meat, add a little more broth, tomato juice, water, or wine.
- Place Dutch oven over medium-high heat until liquid starts to boil.
- Cover, remove from heat, and place in preheated oven.
- Reduce oven temperature to 300 degree F, and cook for 1 hour.
- Rearrange meat, stir liquid gently, and continue cooking 1 more hour or until meat is tender, but not falling apart.
- Remove meat from Dutch oven, and set aside.
- Degrease gravy; it should not be necessary to add more flour to thicken it.
- It should have thicken enough from the breading on the meat.
- Blend gravy thoroughly with a hand blender or mixer.
- It does not need to be smooth, but all of the bigger chunks should be broken up.
- Return meat to the gravy and Dutch oven to the oven until ready to serve with a salad, bread, and mashed potatoes.

MOM'S SWISS STEAK

- Preheat oven to 350 degrees and place the rack in the middle position of the oven.
- Cut the beef into serving-sized pieces. If some pieces are thicker than others, pound them with a meat tenderizer so they all are 1 inch thick.
- Season both sides of the meat with garlic powder, onion powder, salt and pepper, and place in a 9x13 baking dish.
- Add the tomatoes, onion, bell pepper, mushrooms, garlic, 1 teaspoon salt and pepper, 2 teaspoons onion powder and garlic powder, and three tablespoons Worcestershire sauce to a large mixing bowl. Fold it all together and pour over the steak in the 9x13 baking dish.
- Cover the dish and cook on 350 degrees for 1½ - 2½ hours covered. (The total cook time depends on the thickness of your meat and the cut of meat you use. It could require more time in the oven if it's not as tender as desired.)
- When the meat is tender, remove from the oven and allow to sit for 5 -10 minutes uncovered.
- If you'd prefer a thicker sauce, pour the liquid from the pan into a sauce pan over medium high heat. In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoon water. Bring the sauce to a boil and stir in the cornstarch slurry for 1-3 minutes until it's thickened.

- Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
- Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
- Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
- Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
- Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
- Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
- Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

- Using a meat mallet, pound meat to ½″ thickness.
- Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
- Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Place onion & carrot in the bottom of the pot. Top with browned steaks.
- Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
- Serve over mashed potatoes.

This was one of the favourite meals my mother made for us when I was growing up. I made it for my own family as well and my children still request it when I have an opportunity to cook for them. It goes wonderfully with mounds of fluffy mashed potatoes.

- Season the pieces of steak all over with some salt and pepper. Sprinkle with flour and pound the flour into the steak using the side of a bread and butter plate. Keep doing this on both sides of the pieces of steak until no more flour can be absorbed. This is what makes the meat meltingly tender.
- Melt the butter and canola oil together in a large deep skillet. Brown the pounded and floured pieces of steak in the hot fat on both sides, working in batches until all of the meat is browned, and removing to a plate as it is done.
- Add the onions to the pan drippings and sauté until they are beginning to soften. Add the garlic and cook for about 30 seconds then pour in the tomatoes, along with their juices, and the Worcestershire sauce. I like to break the tomatoes up roughly with my hands.
- Season to taste with salt and pepper, and hot sauce if desired. Return the steak to the pan, submerging it in the tomato sauce.
- Cover tightly and simmer over a low heat for 1 ½ to 2 hours at which time the steak will be very tender and the sauce nicely thickened. Check it periodically to make sure there is enough liquid in the pan. If you think that it needs more, feel free to add a bit of beef stock or hot water.

- Cut steak into serving-size pieces. Season, to taste, with garlic powder, salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours, adding water if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 °F and high heat on a slow cooker is about 300 °F.
- Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber.

- 1. Cut cubed steaks into large serving pieces. Mix together salt, pepper and garlic powder. Season steaks on both sides.
- 2. Dredge steaks through the flour. Shake off excess flour. Heat 1/3 cup cooking oil in large skillet.
- 3. Brown steak pieces on both sides in the oil. Remove to a clean platter. Turn heat to medium in the same skillet.
- 4. To the warm skillet, add minced garlic, onions and can of diced tomatoes. Mash the tomatoes, slighty, with a fork. Add the onion soup mix and water. Stir to combine. Add browned steak pieces along with any juices back to the skillet. Stir to coat the meat with tomato mixture. Cover and lower heat to low.
- 5. Simmer the steaks on low for 1 and 1/2 hours stirring frequently.
- 6. Season with more salt and pepper if desired. Serve with rice, mashed potatoes or noodles.

- Place flour on a large plate and set aside. Cut round steak into serving pieces. Salt & pepper as desired. Dredge steak in flour (really press in well), then use the edge of a sturdy plate to pound the meat. Repeat this pounding process on both sides until the meat is about 1/2 inch thick and noticeably more tender. Add a bit more flour if it becomes sticky. A meat mallet may be used instead, the large pointed side.
- Heat vegetable oil in a large ovenproof skillet (or Dutch oven) over medium heat; cook the onions & floured beef in the hot oil until the meat is golden brown, turning once. This will likely have to be done in batches, but the onions are best done in the first batch, then left in the pan to slowly brown and color through as the second batch cooks.
