Steps:
- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

CARLA'S BAKED BANANAS
Warm bananas covered in a rich sauce with a hint of nutmeg. This quick and easy dessert is a delightful treat any time of year! Ready to eat in just 20 minutes. This dish is best served the same day it is prepared. I typically use soft bananas and serve with ice cream.

BAKED BANANA WITH CINNAMON & HONEY (LOW FAT / HEALTHY)
I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

Steps:
- Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
- Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
- Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
- Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
- Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
- NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

SOUTHERN-STYLE BAKED BANANA PUDDING
If you like banana cream pie, you'll absolutely love baked banana pudding. Not only is there no pie crust to mess with, but I think the vanilla wafer cookies pair even more perfectly with the fruit and custardy pudding. We want the bananas to match the texture of the custard-soaked cookies, so make sure you buy them a week beforehand. Other than that, not much can go wrong with this simple Southern classic.

Steps:
- Separate eggs, placing the whites in the bowl of a stand mixer and the yolks into a saucepan.
- Add sugar, salt, and 1/3 cup plus 1 tablespoon flour to the yolks. Splash in about 1/4 of the milk and start blending mixture with a whisk. Pour in remaining milk and whisk until smooth.
- Cook and stir mixture over medium heat until hot to the touch, occasionally dipping your finger in to test. Whisk constantly until custard is thick enough to form ribbons.
- Remove custard from heat and add vanilla extract, banana liqueur, and cold butter. Whisk until butter dissolves. Set custard aside.
- Preheat the oven to 400 degrees F (200 degrees C).
- Toss banana slices with lemon juice.
- Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers. Cover with 1/2 of the bananas and spread 1/2 of the remaining custard on top. Add another layer of vanilla wafers, using slightly fewer this time. Top with the remaining bananas and custard. Smooth the top and tap dish against the counter to settle the pudding.
- Add cream of tartar to the egg whites. Beat using the whisk attachment until foamy. Gradually add sugar and beat until stiff, but not dry, peaks form. Spread meringue over the pudding using a soft spatula, creating ridges for contrast.
- Bake in the preheated oven until meringue is nicely browned, 7 to 10 minutes. Serve warm or chilled.

BAKED BANANA PORRIDGE
Start the day right with this healthy baked banana porridge containing walnuts, banana and cinnamon. Bananas are a good source of the amino acid tryptophan, which the body needs to make the feel- good hormone serotonin. When eaten with a carb source such as oats, the brain can absorb the tryptophan easily.

- Banana Nutella Protein Muffins. Think of these Nutella-stuffed muffins as banana bread with superpowers. Beyond the chocolate-hazelnut deliciousness, they’re hiding fiber from whole-wheat flour, protein by way of Greek yogurt and vanilla protein powder, and to top it off, healthy fats via flaxseeds and walnuts.
- 3-Ingredient Healthy Banana Pancakes. Paleo, gluten-free and a single-serving, these flourless blender pancakes give oatmeal and scrambled eggs a run for their easy breakfast money.
- Banana Thai Curry. You might associate coconuts with Thai food, more so than bananas, but this dish gets the yellow, potassium-packed upgrade. Mashing the fruit gives the dish a creamy kick, while helping to cut back on fat and calories.
- Frozen Banana Sushi. Spread a banana with nut butter, then coat it in a DIY magic shell, made from dark chocolate chips and coconut oil. Before it dries, sprinkle this sweet treat with any antioxidant-boosters you enjoy.
- Banana-Oat Protein Smoothie. Anyone who’s tried “nice cream” knows that bananas have a remarkable ability to add a creamy, thick texture to almost any recipe.
- Chocolate Banana Oatmeal Cookies. This sweet-tasting cookie has about as much sugar as quarter cup of figs (8 grams). So we’ll consider this dessert a health food.
- Strawberry Banana Sushi Rolls. Nut butter, yogurt, berries and granola all make an appearance in this colorful and sweet tortilla wrap. It’s like a yogurt parfait you can eat with your hands!
- Stuffed Sweet Potato with Maple Tahini. Instead of a cold sandwich or salad, combat sad desk lunch by packing a baked sweet potato that you can load up with an Instagram-worthy (not to mention yummy!)
- Peanut Butter Banana Bread Oatmeal. Similar to a granola bar with the texture of cake, this baked oatmeal recipe calls for mashed bananas and peanut butter for moisture and cinnamon, vanilla, and maple syrup for dessert-like flavor.
- Avocado-Date Smoothie. For the creamiest all natural (and sweet!) smoothie, blend a frozen banana, half an avocado, a cup of milk and dates. Top with nuts, cacao nibs, coconut or granola for a breakfast that’ll leave you satisfied.
