3/4 pound small red-skinned potatoes, halved, or quartered if large
Kosher salt
2 sprigs fresh rosemary, plus 1 tablespoon leaves
1 clove garlic, smashed
Pinch of red pepper flakes
Juice of 2 lemons (squeezed halves reserved)
2 tablespoons extra-virgin olive oil
4 skin-on, bone-in chicken breasts (6 to 8 ounces each)
10 ounces cremini mushrooms, halved

Steps:

  • Preheat the oven to 450 degrees F. Cover the potatoes with cold water in a saucepan and salt the water. Bring to a boil over medium-high heat and cook until tender, about 8 minutes; drain and set aside.
  • Pile the rosemary leaves, garlic, 2 teaspoons salt and the red pepper flakes on a cutting board, then mince and mash into a paste using a large knife. Transfer the paste to a bowl. Stir in the juice of 1 lemon and the olive oil. Add the chicken and turn to coat.
  • Heat a large cast-iron skillet over medium-high heat. Add the chicken, skin-side down, cover and cook until the skin browns, about 5 minutes. Turn the chicken; add the mushrooms and potatoes to the skillet and drizzle with the juice of the remaining lemon.
  • Add the rosemary sprigs and the squeezed lemon halves to the skillet; transfer to the oven and roast, uncovered, until the chicken is cooked through and the skin is crisp, 20 to 25 minutes.

My Famous Rosemary Garlic Chicken and Potatoes image

This dish is made simply with simple ingredients and a lot of love. My dinner guests and family get very satisfied looks on their faces and young children ask their moms to make this for them at home. I have made this dish with fresh oregano instead of and in combination with the rosemary and it was just as good. The fat from the chicken (schmaltz) flavors the potatoes. Cooking time really depends on the size of your chicken.

1 whole chicken, split up the back and flattened a bit (or chicken pieces, with skin and bones)
4 baking potatoes, washed well and cut into 8-10 pieces each (you may use equivalant red potatoes if you want)
1/3 cup olive oil
2 -3 tablespoons chopped fresh rosemary
4 -6 garlic cloves, chopped
1/2 tablespoon kosher salt
1/2 tablespoon freshly cracked black pepper (I usually use a mortor and pestle)
1 teaspoon cayenne pepper (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Line a large baking pan with foil.
  • In a bowl mix together the olive oil, rosemary, garlic, salt and pepper.
  • Rub about 1/3 of this mixture all of the chicken and work some of it under the skin.
  • Mix the potatoes and the rest of the herb mixture together and scatter over the baking pan.
  • Lay the chicken on top of the potatoes.
  • Some will be under the chicken and some will not.
  • Place in the oven for about 1 hour or until the chicken is done.
  • Check the potatoes and move them around from time to time.
  • Cook until the juices from the chicken run clear and the potatoes are soft.
  • Remove chicken to cutting board to rest for at least 10 minutes.
  • Return potatoes to oven while chicken is resting.
  • You might even turn the oven up to 400 degrees for a few minutes if you want the skin of the chicken crisper.

4 whole chicken legs-thighs
8 -10 small potatoes, unpeeled
1 medium onion, chopped
2 tablespoons olive oil
1 fresh lemon, juice of
4 sprigs fresh rosemary
8 garlic cloves

Steps:

  • Preheat oven to 450°F(230°C).
  • Slice potatoes in half length-wise. Set aside in a bowl of water to keep from browning.
  • Squeeze lemon into a bowl. Add olive oil to the lemon juice. Mix well.
  • Cut small slits in chicken legs.
  • Slice garlic cloves and stuff into the cuts in the chicken legs.
  • Break apart rosemary sprigs and stuff into the cuts in the chicken legs.
  • Place chicken legs and potatoes, cut side down, on a baking sheet, with small bits of rosemary underneath the potatoes.
  • Place any remaining rosemary & garlic and the chopped onion around chicken and potatoes.
  • Pour olive oil and lemon mix over the chicken and potatoes. Season with desired amount of salt and pepper.
  • Lower oven to 375°F(190°C).
  • Bake for 60 minutes uncovered on middle rake until chicken and potatoes are tender.

2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
6 cloves garlic, crushed
3 tablespoons fresh rosemary leaves stripped from stems
3 tablespoons extra-virgin olive oil, eyeball it
1 lemon, zested and juiced
1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
1/2 cup dry white wine or chicken broth

Steps:

  • Preheat oven to 450 degrees F.
  • Arrange chicken in a baking dish, 9 by 13-inch. Add garlic, rosemary, extra-virgin olive oil, lemon zest and grill seasoning or salt and pepper to the dish. Toss and coat the chicken with all ingredients, then place in oven. Roast 20 minutes. Add wine and lemon juice to the dish and combine with pan juices. Return to oven and turn oven off. Let stand 5 minutes longer then remove chicken from the oven. Place baking dish on trivet and serve, spooning pan juices over the chicken pieces.

8 chicken thighs , skin on
1 tbsp seasoned flour
1 head garlic
3 large stalks rosemary
300ml dry white wine

Steps:

  • Prepare the chicken: Wipe the chicken with kitchen paper, trim away any excess skin with scissors then toss the thighs in the seasoned flour. Separate the bulb of garlic into cloves (no need to peel).
  • Fry the chicken: Heat 2 tbsp of olive oil in a large pan until searingly hot, add the chicken, skin side down, and fry without moving the chicken until the skin is crisp and browned. Turn the chicken over and brown it on all sides (you may need to do this in batches). Add the garlic and rosemary, then pour in the wine and season with salt and pepper. Bring to the boil, then reduce the heat and simmer, covered, for 40-45 minutes, until the chicken is tender and the sauce thickened. Serve with rice or parsley-tossed tagliatelle, and buttered spinach.

750g new potato (preferably Jersey Royals), halved
2 large bunches asparagus, woody ends discarded
1 whole garlic bulb, cloves separated
1 tbsp olive oil
1 lemon, halved
small handful rosemary sprigs
8 chicken thighs

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes, asparagus, garlic cloves, oil and lots of seasoning in a large roasting dish (about 30 x 20cm). Squeeze over all the juice from the lemon halves, then cut them into chunks and add them to the dish. Toss everything together, cover the dish with foil, and roast for about 15 mins.
  • Remove the foil and mix through the rosemary. Season the chicken thighs and arrange evenly in the dish.
  • Roast for another 25-30 mins until the potatoes are tender, and the chicken is crisp and cooked through. Serve the dish in the middle of the table for everyone to share.

Lemon-Garlic-Rosemary Baked Chicken With Roasted Finger Potatoes image

This is the only baked chicken you will ever need. This is perfect for Sunday dinners or when you are expecting company.

1 (5 -6 lb) whole chickens
2 lemons
3 heads garlic (cut in half)
6 sprigs fresh rosemary
2 tablespoons salted butter (softened but not melted)
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
6 slices thick cut bacon (deli style cut-extra thick)
1 lb fingerling potato
1 1/2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1 teaspoon fresh ground black pepper
8 ounces chicken broth
2 tablespoons cornstarch
3 tablespoons water (ice cold)

Steps:

  • Preheat oven to 425. Rinse chicken under cold water then pat dry with paper towels. Rinse finger potatoes and sit aside.
  • Season chicken inside and out with salt and pepper. Smear softened butter over entire chicken. Place breast side up in 13 x 9 inch (or larger) baking dish.
  • Insert 1/2 lemon into cavity along with 2 sprigs fresh rosemary and half head of garlic. Remove leaves off remaining sprigs of rosemary and sprinkle on top of chicken. Discard stems. Cover chicken with strips of bacon.
  • In gallon size storage bag add finger potatoes, extra virgin olive oil, salt and pepper and shake well to coat. Pour potatoes around chicken.
  • Cut the remaining 1 1/2 lemons into wedges and the remaining 2 garlic heads in half. Place lemon wedges and garlic halves around the chicken on top of the potatoes. Place in oven and bake for 1 hour uncovered.
  • Remove chicken from oven and remove bacon. Set bacon aside and return chicken to oven for an additional 30 minutes. While chicken is in the oven dice the bacon where it's completely cooked discarding the places on each piece where it's still raw and set aside. After 30 minutes check the chicken. Don't let the golden color of the chicken fool you into thinking it's done. Test chicken where the thigh meets the breast and see if the juices run clear. Remove chicken, garlic and lemon from baking dish to a large platter and tent with foil. Remove potatoes to a covered serving dish and keep warm.
  • While chicken is resting take 4 tablespoons of the pan drippings and place in saucepan. Add chicken broth and diced bacon and bring to a boil on medium high heat. Reduce by half (approx 6-8 minutes). If you need to thicken the gravy use the corn starch and ice cold water mixed together to make a slurry and add a little at a time checking for desired consistency.
  • Remove foil tent and slice chicken. Place on platter with roasted lemons and garlic heads. The garlic is soft and makes a nice spread to place on buttered crusty bread. Pour gravy into gravy boat (or bowl) and serve along side chicken and potatoes.

3 teaspoons rosemary

  • Slice up the potatoes thickly.

  • Remove from oven and remove potatoes from pan.
  • Keep potatoes warm.
  • Put chicken under broiler for a few minutes until nice and crispy.
  • NOTE: Watch carefully while under broiler because juices and oil in pan will get very hot.
  • Spoon pan juices onto chicken pieces and baby potatoes and serve.
