A mild, creamy, vegetarian curry. Use fairtrade bananas to do your bit.

Number Of Ingredients 8

Ingredients

1 large green banana, peeled and sliced
1/2 tbsp olive oil
25g red onion, peeled and finely sliced
1 tsp curry paste (I used pataks tikka massala)
100ml reduced fat coconut milk
25g raw blanched peanuts
fresh coriander, to serve
lime wedge, to serve

Steps:

In a deep frying pan heat the oil and fry the banana until lightly browned on each side. Set aside on a plate lined with kitchen paper.
Lower the heat and stir in the onion for 10 minutes, or until soft. Add the peanuts, banana and curry paste with half the coconut milk and stir well. Cook on a low heat for 10 minutes. Season to taste.
Pour in the rest of the coconut milk and simmer until the banana starts to break down.
Sprinkle with the coriander and a squeeze of the lime. Serve with brown rice or indian bread and ENJOY

2 tablespoons oil
salt
1/2 teaspoon turmeric
1 teaspoon red pepper powder
4 big green bananas, deskinned,cubed and soaked in cold salty water
1 tablespoon fresh lemon juice
1 cup coconut milk (available readymade of Nestle brand)
1 big onion
4 dried garlic, deskinned
2 tomatoes

Steps:

Heat oil in a non stick heavy base skillet.
Add salt, red pepper powder and turmeric powder.
Immediately add bananas and saute for about 2-3 minutes.
Let bananas go brown on the edges.
Add puree and fresh lemon juice.
Add 1/2 cup water and cover tightly.
Bring to a boil and let it simmer on medium heat for 10 minutes.
Finally add the coconut milk, cover again for 5 minutes on low heat and serve warm with steamed rice or steamed noodles.

⅓ cup sunflower seed oil
2 onions, diced
½ cup curry powder
1 ½ tablespoons ground cumin
4 teaspoons ground turmeric
1 ¼ teaspoons salt
1 teaspoon white sugar
1 tablespoon ground ginger
1 teaspoon chili powder
1 ¼ teaspoons ground cinnamon
1 ½ teaspoons ground black pepper
4 teaspoons curry paste
8 cloves garlic, pressed
1 (10 ounce) can tomato sauce
⅔ cup plain yogurt
2 bananas, diced
3 tomatoes, chopped
¼ cup flaked coconut

Steps:

Heat the sunflower oil in a large saucepan over medium heat. Stir in the onions, and cook until the onions have softened and turned translucent, about 5 minutes. Sprinkle in the curry powder, cumin, turmeric, salt, sugar, ginger, chili powder, cinnamon, and black pepper. Cook and stir until fragrant, about 1 minute.
Stir in the curry paste and pressed garlic. Cook for about 1 minute. Pour in the tomato sauce and yogurt, and bring to a simmer. Stir in the diced banana, and simmer gently for 3 minutes. Mix in chopped tomatoes, and continuing to simmer 1 minute more. Stir in the coconut flakes just before serving.

1 bunch basil, chopped
1 bunch coriander, chopped
2 green chilies, sliced thinly
1 tablespoon freshly minced or grated ginger
2 cloves garlic, crushed
165 ml coconut milk
1 onion, chopped
1 teaspoon lemongrass, sliced
1 head broccoli
100 g baby corn
1 zucchini, sliced
1 sweet potato, cubed
200 g green beans
200 g snow peas
salt and pepper

Steps:

In a blender, combine the basil, coriander, chillis, ginger, garlic and coconut milk.
You may need to add 1/2 cup of water, or more coconut milk if you want it very creamy.
Blend until very smooth.
In a pan, combine onion and sweet potato with the herb/coconut mixture.
Bring to a boil and simmer until the sweet potato has softened a little.
Add the zucchini baby corn, and cook for 10 minutes.
Add the broccoli, green beans and snow peas and season to taste.
Cook until the greens are bright green (about 4 minutes).
Serve over rice.
