SPINACH GARLIC PIZZA
I love pizza without tomato sauce or what is called White pizza. We love this! It is so good and easy!

Steps:
- Mix olive oil and garlic in small microwavable bowl.
- Microwave on HIGH 30 seconds.
- Place pizza crust on cookie sheet; brush entire surface with oil mixture.
- Top with spinach, mozzarella cheese, tomato slices and feta cheese.
- Sprinkle pizza with rosemary and parmesan Bake at 450' F for 10 to 12 minutes or until cheese is melted and crust is golden.
- Let stand 5 minutes.

Steps:
- Prepare the dough following the instructions in our basic pizza dough recipe.
- Place the shallots in 1 tbsp of the vinegar, along with some salt to slightly pickle, and let sit while you cook one side of the pizzas.
- Drizzle the cooked side of the pizzas with 1 tbsp olive oil each, then divide the garlic between them. Season and grill, uncooked-side down, until crisp. 4 Remove the pizzas and top with the tomatoes, cheese, basil, olives and the remaining olive oil and vinegar. Drain the shallots and sprinkle over. Season everything and serve.

Steps:
- Position oven rack on the 2nd-lowest level in the oven and place a baking stone on the rack; preheat oven to 500°.
- Brush a 14-inch deep-dish pizza pan with ½ tablespoon olive oil.
- Press the dough evenly to cover the bottom and 2 inches up the sides of the pan.
- Cover the pan with plastic wrap and let the dough rise in the pan for 15-20 minutes.
- Meanwhile, in a big skillet over medium heat, warm 1 tablespoons olive oil; swirl to coat the pan.
- Scatter the sausage in the pan; stir/saute until the sausage is cooked through and not pink, 5 minutes; drain sausage, then transfer to paper towel lined plate.
- Assemble pizza: lightly press the dough up the sides of the pan if it has slid back down.
- Lay half of the mozzarella slices over dough, overlapping them to cover the dough completely.
- Scatter the cooked sausage over the top; sprinkle the garlic over the sausage.
- Arrange the remaining cheese slices over the top.
- Ladle tomato sauce evenly over the cheese; sprinkle with Parmesan over the sauce.
- Place pizza in oven on the baking stone; decrease temperature to 450°.
- Bake about 30 minutes, until crust is a deep golden brown and the cheese is golden.

No sauce on this pizza, but it is absolutely delicious! You can turn this into an appetizer by cutting it into small wedges, or use the toppings on Bruschetta. Prep time is approximate and includes rising time of one hour.

Steps:
- Sprinkle cornmeal evenly over two greased 14-inch pizza pans; set aside.
- In a bowl dissolve yeast in water; add 4-1/2 cups flour, 4 teaspoons oil and salt; beat until smooth.
- Add enough remaining flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes.
- Place in a greased bowl; turn once to grease top.
- Cover and let rise in a warm place until doubled, about 1 hour.
- Punch dough down; divide in half.
- Press each portion into prepared pans.
- Prick dough with a fork.
- Bake at 450 degrees for 4-5 minutes.

TOMATO WHITE PIZZA
I wrote up this recipe after I had cooked it a few times and decided I liked it. I originally made the white pizza as an excuse to cook up a whole bunch of fresh garlic and tomatoes that I had gotten from a farm. I use generic pre-made pizza crusts because I don't have time to make my own crust. If you get a decent brand they still come out great. The kicker is the salt and olive oil underneath all of the cheese, it makes for a very moist and almost sauce-like pizza topping. The tomatoes add great flavor, texture, and moisture as well.

Steps:
- Start w./ pizza crust. Cover lightly with olive oil (I drizzle it across the whole thing, then smear it around with my hands so there is a thin layer of olive oil across the whole crust.
- Put minced garlic on pizza crust, spread around until evenly covered.
- Lightly salt.
- Cover with cheese. Cheese should not be too thin, just a single layer of shreds thick.
- Lay sliced tomatoes on pizza. I like to cover as much area as possible, but do to taste.
- Grate romano cheese over the tomatoes. Fairly thin layer.
- Sprinkle parsley flakes on top.
- Bake at 350 for 15-20 minutes until crust is golden brown.
