Steps:

  • Wash all of the apples and chop into bite sized pieces, place into a gallon Ziploc bag (or a mixing bowl).
  • Pour the dry Jello mix into the apples.
  • Zip the top of the bag and shake until all the apple pieces have been coated.
  • Best served immediately. If you need to store it, place it in an airtight container in the refrigerator.

2 -4 tablespoons Jello gelatin, store brand is ok too. choose your favorite flavor (sugar-free or reg)

Steps:

  • Cut apples (slice or cube) and place apples in zip lock bag with 2-4 tablespoons of dry jello & shake to coat apples.
  • You can chill for 30 min or so but you don't have to--they are ready to eat.

This is one of the most fun ways to make (and serve) Jello shots, where you do not need plastic shot glasses... you just eat the entire thing. Be careful tho, once I took these to an "adult" Christmas party, and we found a few of their grand-kids chomping on them... YIKES!!! Keep in mind that these take quite a bit of time to carefully hollow out the apples, but well worth it. They are so cute after being sliced and plated. Everyone who enjoys a caramel apple will love these. (I guess they can be made without the alcohol for a kid friendly version, maybe just using 1/4 c water and a few tablespoons of caramel sauce to replace the butterscotch schnapps or caramel vodka. I've never tried). Hope you enjoy them. (NOTE: Cook time includes refrigeration time).

6 -8 granny smith apples
1/2 cup whole milk (I'm sure you could use 1% or 2%)
1/2 cup cold water
1 (3/4 ounce) envelope hot chocolate powder (WITHOUT marshmallows)
1 (1/4 ounce) envelope of knox unflavored gelatin
1/4 cup granulated sugar
2 -4 drops yellow food coloring
1/2 cup butterscotch schnapps (your favourite brand) or 1/2 cup caramel vodka (I use Smirnoff Kissed Caramel vodka)
1/4 cup lemon juice (to prevent browning of apples)

Steps:

  • In medium sauce pan, whisk together the cold water and hot chocolate envelope until no clumps are visible. DO NOT heat yet.
  • Once mixed thoroughly, sprinkle the envelope of Knox gelatin over the top and LET IT SIT, DO NOT STIR for 2 minutes.
  • Turn your stove top burner to a medium low setting and completely mix in the gelatin, then the milk and sugar. Slowly bring the mixture to a low simmer a few minutes just until the sugar is dissolved. At this point you can start adding the food coloring to the color you like.
  • Remove the pan from the heat and let sit until room warm. Meanwhile, place lemon juice in a small bowl (I only use approx 1/4 cup), and prep the apples by slicing each in half from stem to bottom (DO NOT peel). Using the smaller end of a melon scoop (if you have the size option), carefully hollow out the inside of the apples, to where you only have approx 1/4 " outer shell, being careful not to get to close to the outer peel. While carving each apple, dip the hollowed halves in a dish of lemon juice to coat the rim of the apples to prevent browning (you will not taste it). Place each hollowed out half in muffin tins.
  • Once the mixture is just warm, you can now stir in the Butterscotch Schnapps or Caramel Vodka (I prefer the Smirnoff Kissed Caramel vodka). Either will work and there are many brands of both available. Mix well.
  • Pour enough jello mixture into each hollowed apple shell, being sure that they are level in the muffin tins. Fill to the tops of each. Place in fridge for a minimum of 4 hours (I have even made them the night before I take them somewhere, without slicing the wedges, and just trimmed the rim of the halved apples if they had browned).
  • Once set, remove apples from muffin tins and slice each half into 3-4 wedges (depending on the size of your apples). Plate them on whatever tray you plan to serve on and return, loosely covered, to the fridge. (TIP: It is best to cut them just before serving, since the freshly cut edges will brown).
  • Serve and enjoy!

My mom made this, minus the apple chunks, when we were sick or as a special treat. The applesauce adds a great texture, kids love it, and if they don't like fruit, they'll still usually eat this! In fact, without the chunks or the cinnamon, it's a great treat for toddlers. I make it with cinnamon applesauce and the apple chunks as a side for holiday meals.

1 (3 ounce) package cherry gelatin or 1 (3 ounce) package wild cherry gelatin
1 cup boiling water
1 1/4-1 1/2 cups applesauce or 1 1/4-1 1/2 cups cinnamon applesauce, chilled (a small jar usually works just fine)
1 -3 firm-sweet apple, cored and cut into 1/2 inch chunks (such as Fuji; use more or less according to size and preference) (optional)

Steps:

  • Dissolve gelatin into boiling water in a LARGE bowl (you're going to want the room when you add the other ingredients to prevent splashing).
  • Add applesauce all at once.
  • Stir until thoroughly mixed.
  • Pour into an 8 by 8 casserole or a shallow dish, and cover.
  • Refrigerate until partially set (about 1 1/2 hours is good).
  • Stir in apple chunks, if desired.
  • Refrigerate an additional 1 1/2 to 3 hours, until set.
  • This recipe will not set quite as firm as traditional gelatin.

3 ½ pounds apples, cored and diced
3 cups water
7 ½ cups white sugar
½ teaspoon butter
1 (2 ounce) package powdered fruit pectin

Steps:

  • Place apples in a large pot; cover with water. Bring to a boil; reduce heat, cover, and simmer until apples are slightly tender, about 5 minutes. Crush cooked apples and simmer for 5 more minutes.
  • Transfer crushed apples to a sieve or cheesecloth. Let drip into a bowl until all liquid has drained, pressing gently to release all the juice. Measure 5 cups apple juice, adding water if necessary to have exact amount. Stir sugar into juice; add butter to reduce foaming.
  • Bring juice mixture to a rolling boil, stirring constantly. Stir in pectin; boil for exactly 1 minute to dissolve pectin, stirring constantly. Remove from heat. Skim off excess foam with a metal spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Ladle apple jam into the hot, sterilized jars, filling the jars to within 1/8 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand at room temperature for 24 hours. Store in a cool, dark area. Refrigerate opened jellies for up to 3 weeks.
