Steps:
- Dissolve yeast in water and add sugar.
- wait a few minutes.
- add oil and salt and garlic .
- mix in 3 cups flour and whip about 10 min till it leaves the side of the mixer bowl.
- add remaining flour w/ dough hook or by hand.
- knead till smooth.
- allow to rise twice in the bowl.
- punch down.
- (I rush this a bit) oil baking sheets .use fingers press out to edges.
- Makes 2 pizzas, cookie sheet size, let rise a bit and top.
- bake at 425* 20min.this is fantastic.

GARLIC BREAD PIZZAS

- Tip all of the base ingredients into a mixing bowl. Pour over 300ml warm water - not too hot. Stir quite hard with a spoon until the mixture comes together.
- Turn out onto a lightly floured surface and knead 2-3 times until the mixture forms a ball. Divide dough into 8 equalsize pieces. Take 1 piece, leaving the remainder loosely covered with oiled cling film. Lightly flour the surface again and use a rolling pin to roll out dough into a round about 15cm diameter or as thin as you can. Put pizza on a baking sheet.
- Mix together the butter and crushed garlic, then spread a little over the pizza. Tear the mozzarella into thin strips and scatter over. Repeat for the remaining pieces of dough. You should be able to fit 2 pizzas per baking sheet; depending on how many baking sheets you have, you may have to cook in batches.
- Heat oven to 240C/fan 220C/gas 9. Bake pizzas for 12-15 mins until crisp and cooked through. Meanwhile, mix together the remaining ingredients, then season well. When the pizza comes out of the oven, top with the tomato mixture and serve straight away.

CHICAGO-STYLE BUTTER AND GARLIC PIZZA CRUST
This is a recipe I got from Rachael Ray's magazine. It looks so good and I want to try it soon. She got the recipe from nine-time World Pizza champion Tony Gemignani (a pizza throwing champion). This is a deep-dish pizza baked in a 9x13 inch baking dish. This will make 1 14-inch pizza. The number of servings is just an estimate. The rising time is included in the prep time.

- In large bowl, dissolve yeast in 1/4 cup lukewarm water.
- Add 1/4 cup flour and the sugar, stir together.
- Cover with plastic wrap and let rise in a warm place for 20 minutes.
- Stir the remaining 1 cup lukewarm water, 3 cups flour, the cornmeal and salt into the yeast mixture.
- Combine the butter and garlic; mix into the dough.
- Turn out onto a lightly floured work surface and knead until soft and elastic, 10-12 minutes.
- Lightly grease a large bowl, add the dough and turn to coat.
- Cover and set in a warm place until the dough is doubled in size, 1 hour.
- Punch dough down, then knead for 2-3 minutes.
- Grease a 9x13-inch baking pan, then press in dough to cover the bottom and 2 inches up the sides; let rise for 20 minutes.
- Preheat the oven to 500 degrees.
- Top the pizza dough with your favorite toppings.

- Place the ingredients into the pan of a bread machine in the order recommended by the manufacturer. Close the lid, select the Dough cycle, and press Start.
- When the machine signals the end of the cycle, remove the dough and knead into a tight ball on a lightly floured surface. Let rest for about 15 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Stretch the dough out to fit your desired pizza pan. Let rise for about 20 minutes for a thicker crust.

- Prepare Basic Pizza Dough as recipe instructs below and set aside to rise.
- Combine butter and garlic in a small saucepan over low heat. Cook until the garlic is fragrant and tender, 3 to 4 minutes. Cover, remove from the heat and set aside. Keep warm.
- Preheat oven to 375 degrees F and lightly grease 2 large baking sheets. Set aside.
- Remove risen dough from the bowl and place on a lightly floured surface. Using a lightly floured rolling pin, roll dough out into a large rectangle, about 16 by 12 inches. Brush the dough lightly with the olive oil. Cut the dough in half lengthwise and then cut crosswise into strips about 1 1/4 inches wide. Tie each strip loosely into a knot, stretching gently if necessary, and place on prepared baking sheets about 2-inches apart. Sprinkle the tops of the knots with salt. Cover with plastic wrap or a clean kitchen towel and let rise in a warm, draft-free place for about 30 minutes.
- Bake until golden brown and risen, about 20 minutes. Transfer to a large mixing bowl and toss gently with the warm garlic butter, Pecorino Romano cheese, and parsley. Add salt to taste if necessary. Serve immediately.

- Allow pizza dough to be in the refrigerator for at least one day so it will be defrosted.
- Allow pizza dough to sit out for 30 minutes.
- Combine margarine, 2 tbsp. parmesan cheese and garlic powder.

- Combine yeast with warm water, let sit about 10 mins until yeast has completely dissolved.
- Meanwhile, in the bowl of a mixer fitted with a dough hook, combine flour, sugar, salt, rosemary and garlic.
- When yeast is dissolved, on low speed, slowly add yeast and oil to dry ingredients.
- Work on low speed until the dough forms a ball and pulls away from the bowl.
- Turn mixer to med speed and knead dough for 10 mins.
- Cover dough with damp towel, let sit until dough rises (about 1 hr).
- When dough has risen, punch down dough once then transfer to floured surface. Knead by hand 5-6 times then cut in half.
- Roll one half of dough out to 1/8 inch thickness then transfer to greased pizza pan.
- Brush dough with oil (i prefer to use butter with a bit of garlic and rosemary, to taste instead of the oil).
- Bake at 425 degrees for 10 minutes.
- Allow to cool slightly then top with your favorite toppings.
- Bake at 425 for 20 more minutes.

- In a small bowl, add yeast and water. Stir and set aside until foamy (10 minutes).
- In a large bowl, add flour, oil, salt, sugar, and the yeast mixture. Mix with a wooden spoon and then your hands until the dough comes together. If the dough is too dry, add water (1 tablespoon at a time). If the dough is too sticky, add more flour (1 tablespoon at a time).
- After the dough has been thoroughly mixed, knead it by hand for 5-10 minutes.
- Brush a bowl with olive oil. Add the dough to the bowl. Cover and set in a warm area to rise until doubled (about 30 minutes).
- When ready, preheat the oven to 475°F.
- Turn the dough out onto a well-floured surface. Roll out the dough into a 10-12 inch circle, about ¼-inch thick and place onto a 12" (or larger) pizza pan.
- Add toppings and bake 15-18 minutes, or until golden brown.

PIZZA WITH GARLIC AND OLIVE OIL
Steps:
- At least 45 minutes before baking pizza, put a pizza stone or 4 to 6 unglazed "quarry" tiles arranged close together on oven rack in lowest position in oven and preheat oven to highest setting (500°-550°F).
- Finely chop garlic and in a small bowl combine with oil, oregano, red pepper flakes, and coarse salt.
- On a lightly floured surface pat out dough evenly with your fingers, keeping hands flat and lifting and turning dough over several times, into a 9-inch round. (Do not handle dough more than necessary. If dough is sticky, dust it lightly with flour.)

- Cut pizza into wedges and serve immediately.

- Preheat the oven and a baking sheet to 475°F / 250°C for 20-30 minutes. If you are baking with a pizza steel, preheat for 45-60 minutes.
- If you have a pizza peel, sprinkle it generously with semolina and set it aside. Otherwise, sprinkle a piece of parchment paper with semolina and set aside.
- Combine the olive oil and garlic and set aside.

- Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered.
- In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. Pour the hot mixture into a blender, cover tightly, and process until smooth. Transfer to a small bowl and cool slightly, placing a piece of plastic wrap directly on the surface.

- Spread the cooled sauce over pizza dough, leaving a 3/4-inch border. Place sliced mozzarella on top of the sauce. Sprinkle the remaining roasted garlic cloves (whole) over the cheese and top with the grated fontina. Bake the pizza for 8 to 10 minutes, or until the crust is golden and cheese is melted and bubbly and golden brown in spots. Remove from the oven and sprinkle chopped herbs over the top. Serve immediately.
- Preheat the oven to 350 degrees F.
- Place the garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt and pepper and place, cut side down, on the baking sheet. Bake until the cloves are soft and golden, about 1 hour. Remove from the oven and let sit until cool enough to handle. Carefully remove each clove of garlic from the head. Squeeze each head of garlic to expel any cloves that you cannot remove individually. Set aside until needed.
