1 cup milk
1/2 cup vegetable oil
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup granulated sugar
1/2 cup unsweetened baking cocoa
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup chopped maraschino cherries, well drained and 2 tablespoons cherry juice reserved
1 cup powdered sugar

Steps:

  • Heat oven to 375°F. Grease bottoms only of 6 jumbo muffin cups (3 1/2x1 3/4 inch) or 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line muffin cups with paper baking cups.
  • In medium bowl, beat milk, oil and egg with fork. Stir in remaining ingredients except cherries, juice and powdered sugar just until flour is moistened. Stir in cherries. Divide batter evenly among muffin cups. (For 12 regular-size muffins, cups will be almost full.)
  • Bake jumbo muffins 23 to 25 minutes, regular-size muffins 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool jumbo muffins 10 minutes or regular-size muffins 5 minutes; remove from pan.
  • In small bowl, mix powdered sugar and reserved 2 tablespoons cherry juice with spoon; drizzle over warm muffins. Serve warm.

1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/3 cup 2% milk
1/4 cup canola oil
1 teaspoon almond extract
1/2 cup halved maraschino cherries

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk, oil and extract. Stir into dry ingredients just until moistened. 1 ¼ cups white sugar

1 teaspoon almond extract

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 jumbo (3 1/2-inch) muffin cups or line with paper baking cups.
  • Stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a separate large bowl, and make a well in the center; set aside. Whisk together the sour cream, milk, vegetable oil, eggs, and almond extract in a bowl until evenly blended. Pour the sour cream mixture into the well, then stir in the flour mixture until just combined. Fold in the cherries and chocolate chips. Spoon into prepared muffin cups, filling half full.
  • Bake until a toothpick inserted into centers comes out clean, about 20 to 25 minutes. Cool in pan on wire rack 5 minutes. Remove from pan and cool completely on wire rack. Store tightly covered at room temperature.

250g self-raising flour
1 tsp bicarbonate of soda
140g dried sour cherry
100g bar white chocolate , cut into chunks
100g bar dark chocolate , cut into chunks
100g golden caster sugar
2 eggs , beaten
150ml pot natural yogurt
100g butter , melted

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with some paper cases. Sift the flour, and bicarbonate of soda into a large bowl, then stir in the cherries, chocolate and sugar. Add the beaten eggs, yogurt and then the butter and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
  • Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool. They are especially delicious eaten slightly warm.

1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk
1/4 cup canola oil
1 jar (10 ounces) red maraschino cherries
3/4 cup miniature semisweet chocolate chips
1/2 cup chopped pecans
1 cup confectioners' sugar
Softened cream cheese, optional

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened. Drain cherries, reserving 2 tablespoons of juice for glaze (discard remaining juice or save for another use). Chop cherries; fold the chips, pecans and cherries into the batter. , Drop by tablespoonfuls into greased or paper-lined heart-shaped or miniature muffin cups. Bake at 375° for 10-13 minutes or until a toothpick inserted in the center comes out clean. , Cool for 10 minutes; remove from pans to wire racks. 1/2 cup of butter (1 stick) at room temperature
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg at room temperature
2 tsp vanilla extract
2 cups all purpose flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
3.5oz dark chocolate bar cut into small chunks
1/2 cup pitted and chopped fresh sweet cherries

Steps:

  • Add room temperature butter, brown sugar and granulated sugar to a large mixing bowl. Mix with a hand mixer or the paddle attachment of a stand mixer. Mix until smooth and fluffy.
  • Pour room temperature egg and vanilla extract into the bowl and mix again. Mix until a smooth mixture remains. Add flour, salt, baking soda, and baking powder to the mixing bowl and mix once more.
  • You should be left with a smooth, thick dough. Add chopped cherries and chocolate chunks to the bowl and mix in with a spatula. Pop the bowl into the fridge to chill for 20 minutes.
  • Preheat oven to 350F and line a baking sheet with parchment paper. Scoop out 2 tbsp of dough for each cookie and roll into a ball. Place on the baking sheet with space between each cookie.
  • Bake at 350F for 20-22 minutes. Remove from the oven and cook on a cooling rack and enjoy!

I get my dried cherries from nutsonline.com, and they are very moist (for a dried fruit, that is), so I didn't need to plump them first. Because there is so little fat in the batter, muffin papers will stick, so grease your muffin cups well. These do not rise very high, but they taste wonderful.

1 teaspoon salt

1/4 cup brown sugar, packed
1 teaspoon almond extract
1/2 cup miniature semisweet chocolate chips
1/2 cup dried sour cherries

  • Preheat oven to 400.

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Whisk the flour, sugar, baking powder, cinnamon, cardamom and salt in a medium bowl. Whisk the eggs, milk, 1 1/2 sticks melted butter, the almond paste and vanilla in a large bowl (it?s OK if the almond paste is still a little chunky).   • Step 5 Add egg and vanilla, scraping sides of bowl frequently. ( if the mixture looks a little lumpy or curdled, keep mixing on medium speed until it gets smooth)
  • Step 6 Add the zucchini, Greek yogurt, and buttermilk to the egg mixture. Scrape sides and fold all ingredients together.
  • Step 7 Gently fold in the dry ingredients until just blended.
  • Step 8 Add the cherry pieces and chocolate chips and fold to blend.
  • Step 9 Scoop into muffin tins filling each well 3/4 full.
  • Step 10 Bake at 350 degrees for 18-20 minutes.
  • Step 11 Check for doneness by inserting a toothpick in the center.
