This recipe from "Hershey's Kitchen" will satisfy the strongest chocolate craving while leaving a refreshing aftertaste. (This cookie can be made with any flavour chips and all by itself).

1 cup butter, softened
1 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1 2/3 cups mint chocolate chips

Steps:

  • Heat over to 375 degrees F.
  • Beat butter, granulated sugar, brown sugar, vanilla and salt in a large bowl until creamy.
  • Add eggs; beat well.
  • Stir together flour, cocoa and baking soda.
  • Gradually add flour mixture to butter mixture beating until well blended.
  • Add chocolate chips to batter.
  • Drop by rounded teaspoons onto an ungreased cookie sheet.
  • Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.
  • Cool completely.

5 tablespoons unsalted butter (at room temperature)
2 tablespoons nonfat plain Greek yogurt (at room temperature)
3/4 cup plus 2 tablespoons coconut sugar
1/4 cup granulated sugar
1 large egg (at room temperature)
1 1/2 teaspoons pure vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 3/4 cups white whole wheat flour
10 ounces mixed mint and dark chocolate chips

Steps:

  • In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, cream the butter, Greek yogurt, coconut sugar, and granulated sugar with an electric mixer on medium speed until very light and fluffy, about 4 full minutes, stopping to scrape the bowl as needed.
  • Add egg and vanilla. Beat until incorporated, scraping down the bowl as needed. The mixture will look curdled, which is just fine.
  • Beat in the baking soda and salt until combined. Reduce the mixer speed to low and gradually add the white whole wheat flour, beating just until it disappears. The dough will look crumbly.
  • By hand with a rubber spatula or wooden spoon, stir in the chocolate and mint chips. For the best flavor and to make sure the cookies are not too dry, refrigerate for at least 1 hour or overnight.*
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. With a cookie scoop or spoon, portion the cookies by heaping tablespoons, spacing them 1 inch apart on the prepared baking sheet. Bake for 7 minutes, until barely dry on the top and edges but still gooey and soft inside. Let cool on the baking sheet for 5 minutes, then gently transfer to a cooling rack. (I like to slide my piece of parchment or silicone baking mat right off the baking sheet and onto the cooling rack.)

125g salted butter
125g light brown soft sugar
100g caster sugar
1 large egg
225g plain flour
½ tsp baking powder
2 drops peppermint extract
100g dark chocolate chips
100g dark chocolate, roughly chopped
3 peppermint candy canes, finely chopped or crushed

Steps:

  • Melt the butter in a pan, leave to cool for a few minutes, then pour into a large bowl. Whisk in both sugars and the egg until combined.
  • Use a wooden spoon to mix in the flour and baking powder until the mixture comes together into a dough. Beat in the peppermint extract, then fold in the chocolate chips. Wrap well and chill for 1 hr.
  • Heat the oven to 180C/160C fan/gas 4. Divide the cookie dough into 16 pieces (about 45g each), and roll each piece into a ball using your hands. Arrange the dough balls on two baking trays lined with baking parchment, well spaced apart, and press them down slightly. Bake for 10 mins, then remove the trays from the oven and tap sharply on a work surface to flatten the cookies. Return to the oven and repeat this after 2 mins, then again after another 2 mins (they should bake for 14 mins in total). Leave to cool completely on the trays.
  • Melt the chopped chocolate in a heatproof bowl over a pan of simmering water, or in 15-second bursts in the microwave, stirring between each burst. Line a baking tray with baking parchment. Dip one half of each cookie into the melted chocolate, place on the lined tray and sprinkle with candy cane pieces. Transfer the tray to the fridge and chill for 30 mins to set.

Found this recipe in an old cook book some time ago. This is the perfect cookie for late summer - the fresh mint has a wonderful cooling effect. I finally found the mint chocolate chips at Trader Joe's. The fruit pectin is optional, but really helps to give the cookies extra chewiness and extends their shelf life by several days.

1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon fruit pectin (optional)
1 1/3 cups sugar

Steps:

  • Heat oven to 350 degrees.
  • Combine dry ingredients. Set aside.
  • With an electric mixer, combine sugar and butter until well blended.

  • Fold in the mint chocolate chips.

2 cups heavy cream
1 cup whole milk
3/4 cup sugar (divided)
4 egg yolks
2-3 teaspoons McCormick pure peppermint extract (depending on how minty you like your ice cream)
2 teaspoons vanilla extract
2-3 drops green food coloring (optional)
1/2 cup dark or semi-sweet chocolate chips (4 ounces ghiradelli semisweet bar)
1 Tablespoon coconut oil

Steps:

  • Whisk cream, milk, and half of the sugar in a medium saucepan over medium heat. Let this heat until bubbles start to form just around the edges and the liquid steams when you stir it.
  • Meanwhile, whisk egg yolks and remaining sugar in a bowl for 1-2 minutes until light.
  • Once milk is hot, gradually whisk 1 cup of it into the egg yolks to temper the eggs so they don't scramble.
  • Pour the tempered egg yolks back into the saucepan with the hot cream mixture and continue to cook, stirring constantly, until thick enough to coat the back of a spoon or the custard reaches 170-175 degrees F on a candy thermometer.
  • Remove the ice cream base from the heat and stir in the peppermint extract, vanilla extract, and food coloring, if using. Place the pan into an ice bath to cool the mixture down quickly, then chill thoroughly before churning.
  • To churn the ice cream, transfer the mint base the frozen bowl of an ice cream maker. It will need to churn for 20-30 minutes to be the consistency of soft serve.
  • While the ice cream is churning, melt the chopped chocolate and coconut oil in a medium bowl by heating in the microwave in 20 second increments. Stir well between each burst of heat until the chocolate is melted and smooth (about 60-90 seconds total). Let this cool until just warm.
  • When the ice cream is almost done, start drizzling the chocolate in while the ice cream is churning. The chocolate will freeze on impact and shatter into small pieces and chunks. I like to hold some of the melted chocolate in reserve for layering with the ice cream, but you can add it all this way if you prefer.
  • Transfer half of the ice cream, which should be soft serve consistency, to a freezer safe container. Drizzle any reserved melted chocolate over the top, then add the remaining ice cream. Freeze for 4-6 hours to harden and cure so it is scoopable. Let the ice cream sit out for 10-15 minutes before scooping for best results.
