- Preheat the oven and Prepare the Pan - Preheat the oven to 350 degrees Fahrenheit and grease the pan.
- Prepare the Cake Mix - In a large bowl, combine cake mix, peanut butter, canola oil, and egg. Mix until the ingredients are fully combined.
- Bake the Mix - Add two-thirds of the peanut butter mix to the pan. Bake for ten minutes and allow to cool for five minutes on a wire rack.
- Prepare the Fudge - On low heat, combine the sweetened condensed milk, semi-sweet chocolate chips, and butter in a heavy saucepan. Stir until smooth, then pour over the peanut butter mixture and sprinkle with the remaining peanut butter mixture. Be careful while pouring the fudge, as it will be hot.
- Bake the Mix - Bake for 20-25 minutes, until golden brown. Allow to cool on a wire rack and then cut into bars.
- These peanut butter bars are great treats for bake sales, games, parties and any sort of occasion. Both kids and adults will love the perfect combination of chocolate and peanut butter.

- Line a 13cm x 18cm baking dish or tin with cling film so it overhangs the edges. Fill the sink with cold water.
- Put all the ingredients in a large heavy-based saucepan and heat very gently, without stirring, until the sugar is completely dissolved - take your time and make sure all the grains are melted, otherwise the fudge won't be smooth. Use a wet pastry brush to wipe down the sides of the pan and dissolve any stray sugar crystals - if left they may cause the sugar syrup to crystallise during cooking.
- Bring the mixture to the boil and bubble (see tip), stirring constantly to ensure the mixture isn't catching on the base, until it reaches 116°C on a sugar or digital probe thermometer. Otherwise, drop 1 tsp of the mix into a bowl of cold water and bring it together with your fingers - it should form a soft ball.
- When the fudge has reached this soft-ball stage, immediately plunge the base of the pan into the sink of cold water to stop the cooking process. Transfer the pan to a cold work surface and leave to stand for 5 minutes - it's important to do this, otherwise the texture of the fudge will become crumbly.
- Beat the fudge mixture with an electric hand mixer for 5-10 minutes until very thick, then quickly tip it into the prepared tin and smooth the surface. Leave to set at room temperature.
- When completely cold, cut the fudge into squares or bars.

YUMMY PEANUT BUTTER FUDGE
This was not an original recipe from me, got it out of a local fundraiser cookbook years ago, delicious! Easiest fudge I have ever made, and delicious. Everyone we know ask me to make it for them now. A lot of people want a box of it for Christmas, so saves me money too! :)

- 1. In a Large Saucepan, combine Sugar, Evaporated Milk and Vanilla.
- 2. Bring to a boil, and cook approximately 4 minutes, stirring CONSTANTLY! Very important, otherwise, it will not set, or be too dry.
- 3. Remove from heat. Add Chocolate Chips, marshmallows and peanut butter. Stir until smooth. It starts setting quickly, so is a little hard to stir, if you can see some bits of marshmallow, it is no big deal. Makes it look pretty anyway. :)
- 4. Pour into pan and let cool.
- 5. Enjoy!!! It is always a hit!!! :)

- Generously butter a 9-inch square pan or line with parchment paper.
- Combine the sugar, evaporated milk, butter and salt in a wide saucepan and bring the mixture to a boil, stirring often. Cook until the temperature reaches 240°F when measured with a candy thermometer, about 5 minutes. (If you don't have a candy thermometer you can determine if the fudge has boiled for long enough and reached the "soft ball" stage by dropping a ¼ teaspoon of the mixture into a bowl of chilled water. It should form a soft ball when picked up with your fingers.)
- Remove the saucepan from the heat and stir in the peanut butter until smooth. Then add the marshmallow crème and vanilla extract. Stir until melted and smooth.
- Immediately pour the mixture into the prepared pan and smooth it out evenly. Sprinkle the chopped nuts on top, pressing them slightly into the fudge. When ready to enjoy, cut into squares and serve. Store in an airtight container in the fridge or freeze for up to 3 months.

- Sift the confectioners sugar to avoid any small lumps in the fudge; set aside.
- Melt the butter in a medium heavy saucepan over medium heat.
- Stir in the brown sugar and half and half cream; bring to a boil stirring to combine all ingredients.
- Once the mixture is at a full boil allow to boil for 2 minutes.
- Remove from heat and stir in vanilla and peanut butter until smooth.
- Stir in the sifted confectioners sugar until combined (this may take a few minutes).
- Pour into an 8 x 8-inch pan.
- Chill until firm.
- Cut into small squares.

PEANUT BUTTER FLAXSEED FUDGE RECIPE

- Place the milk, honey, peanut butter and flax seeds in a food processor.
- Blend together until smooth and fudgy (add extra milk if needed). Stir in the remaining peanuts.
