SKILLET HAMBURGER STROGANOFF

This easy one-pan meal is full of flavor, but kept light with lean ground beef, hearty mushrooms and calcium and fiber enriched pasta. A touch of paprika gives a rosy color to the lightly creamy sauce made with reduced fat sour cream and 1/3 less fat cream cheese.

1 pound 90 percent lean ground beef
Kosher salt and freshly ground black pepper
1 (10-ounce) package white mushrooms, halved or quartered, if large
1 tablespoon extra-virgin olive oil
1 small onion, chopped
1 carrot, peeled and cut into 1/4-inch dice, 1 cup
3 cloves garlic, finely chopped
1/2 teaspoon paprika
1 tablespoon tomato paste
1 (15-ounce) can low-sodium beef broth
1 1/2 cups water
1 tablespoon Worcestershire sauce
2 cups (6-ounces) calcium and fiber enriched penne pasta, (recommended: Ronzoni Smart Taste)
1/4 cup (2 ounces) 1/3 less fat cream cheese, room temperature
1/4 cup reduced-fat sour cream
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh chives

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the beef, season to taste with salt and pepper and cook, breaking into small pieces with a wooden spoon, until well browned, about 5 minutes. Transfer the meat to a bowl, leaving behind any drippings; reduce the heat to medium.
  • To the same skillet, add the mushrooms, season with salt and cook until golden brown, 8 to 10 minutes. Add the cooked mushrooms to the bowl with the beef. Add the oil, onion, carrot, garlic, and paprika to the skillet and continue to cook until the carrots are soft and the onion is lightly browned, about 10 minutes.
  • Stir in the tomato paste and cook until the tomato paste has toasted and is evenly coating the vegetables, 2 to 3 minutes. Add the broth, water, and the Worcestershire sauce to the skillet. Bring to a simmer and stir in the pasta. Cover and cook according to package directions until the noodles are just al dente. Uncover, stir in the reserved beef and mushrooms until heated through. Remove from heat and stir in the cream cheese, sour cream, chopped parsley, chopped chives, and salt and pepper, to taste, until the cream cheese melts and the sauce is creamy. Divide among 6 bowls. Serve.

Mom made this all the time growing up. My step-sister recently e-mailed me asking for the recipe, thinking it had been from scratch! Of course, growing up our tastes weren't very refined and now i can tell that it's not from scratch. A few variations to the directions on the package and I still think it's delicious. My husband loves this recipe. I am not sure on the size of the egg noodles bag, but just cook up however many noodles your family needs.

1 onion, diced
1 (4 ounce) can mushrooms (or you can use fresh)
1 (1 1/4 ounce) package beef stroganoff sauce mix
1 cup water

1 (8 ounce) package egg noodles

Steps:

  • BROWN the ground beef with the onion and mushrooms and garlic if using.

1/2 cup chopped onion
Dash garlic salt
2 tablespoons all-purpose flour
1 cup water or beef broth
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4-1/2 ounces) mushrooms, drained
1 cup sour cream
Salt and pepper to taste
Cooked noodles or rice
Chopped fresh parsley, optional

Steps:

  • In a skillet, cook beef over medium heat until no longer pink, breaking into crumbles 5-7 minutes; drain. Add onion and garlic salt to beef; continue to cook until onion is soft. This was not served when I was a kid. I think Mom learned to make it when she decided she liked Hamburger Helper Stroganoff and she wanted to do it from scratch. Someone at church gave her this recipe and it is good and easy.

1/2 c chopped onions

1 can(s) cream of mushroom soup

Steps:

  • 1. In a large skillet brown and crumble beef. Drain grease from pan. Add onion and cook until it is tender, stirring occasionally. Add remaining ingredients except sour cream and noodles and reduce heat to a simmer. Cook, stirring frequently, for about 20 minutes.
  • 2. Meanwhile prepare noodles according to package directions. When beef mixture is ready stir in sour cream and heat thoroughly without boiling. Serve over noodles. Optional garnish: Sprinkle a bit of paprika over the dish before serving.

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

1 1/2 pounds 90/10 (lean) ground beef
1/2 cup yellow onion, chopped small
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon fresh black pepper
2 teaspoon minced garlic (about 1 large clove)
3-4 cups sliced white button mushrooms
4 ounces cream cheese, cubed (not fat free)
2 1/2 cups room temperature homemade beef stock *see note
1/2 cup cold milk
3 tablespoon corn starch
2 cups peas *see note
1/2 cup plain Greek yogurt or fat free sour cream
Salt and pepper to taste
Wide Egg Noodles and Perfect Mashed Potatoes for serving

Steps:

  • In a large nonstick skillet over medium high heat, add in the meat, onions, salt, pepper and Worcestershire sauce. Stir occasionally to break up the meat into small nickel-sized pieces. Cook until the meat is almost cooked through but still slightly pink, ~5 minutes. Drain excess grease.
  • With the meat mixture still in the pan, add in the garlic and sliced mushrooms and cook until the mushrooms and meat are cooked through, ~5-6 minutes. Reduce the heat to medium and add in the cream cheese. Do not stir. Let it melt first. ~3-5 minutes.
  • Gently mix until the cream cheese is incorporated throughout the meat mixture.
  • In a large mixing bowl, add in the milk and beef stock. Add the cornstarch into the broth milk mixture and whisk until the mixture is smooth and there are no lumps. Slowly pour in the beef milk mixture into the pan and cook over medium-high heat. Stir to combine and let the mixture start to bubble then reduce the heat to a simmer to allow it to thicken slightly. ~2-4 minutes. Add in the peas and gently stir in. Add in the yogurt or sour cream and gently combine. Taste for seasoning and add salt and pepper if necessary.
  • Serve with cooked egg noodles and mashed potatoes.

1 lb round steaks or 1 lb sirloin steak, cut into bite size pieces
4 tablespoons flour, to coat meat
1 tablespoon olive oil
1/2 cup chopped onion
