1 pound garlic (peeled)
2 tablespoons olive oil (optional)

Steps:

  • Place the garlic head on a cutting board, root side up. Smash it hard, then loosen and separate the cloves.
  • Cut the root tip and and peel the cloves. Skip this step if using store-ready peeled garlic cloves.
  • Add garlic cloves and olive oil to the blender jar and blend for 30-45 seconds to make a smooth paste. Scrape down the sides of the blender jar once in between.
  • Store in airtight containers or mason jars and refrigerate for up to a week. Alternatively, add to ice cube trays, cover and freeze for up to 3 months.

1 pound garlic heads (leave the skin on)
1/2 cup olive oil
Salt and pepper (to taste)

Steps:

  • Preheat oven to 350 F.
  • Cut off the top 1/3 of the garlic heads. Place the garlic heads (cut side up) in a small baking dish. Pour the olive oil over the garlic. Sprinkle with a little salt and pepper.
  • Cover the dish with a lid or aluminum foil and bake for about 45 minutes. Remove lid or foil and bake for another 15 minutes. Cloves will begin to brown. Remove dish from oven and let cool until you can handle the garlic with your hands.
  • Into a medium bowl, squeeze the garlic cloves out of their skins. Using a strainer, add the oil from the baking dish to the garlic. Use a food processor or mash together with a fork until the paste has a smooth consistency.
  • Cover tightly and refrigerate. Will last about one week in the fridge.

1/2 stick (1/4 cup) unsalted butter, softened
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped fresh flat-leaf parsley
1 (15- by 3 1/2-inch) loaf Italian bread

Steps:

  • Preheat oven to 350°F.
  • Mince and mash garlic to a paste with a rounded 1/4 teaspoon salt using a heavy knife. Stir together butter, oil, and garlic paste in a bowl until smooth, then stir in parsley.
  • Without cutting completely through bottom, cut bread diagonally into 1-inch-thick slices with a serrated knife, then spread garlic butter between slices.
  • Wrap loaf in foil and bake in middle of oven 15 minutes. Open foil and bake 5 minutes more.

¼ cup grated Parmesan cheese
2 cloves garlic, minced
¼ teaspoon dried marjoram
¼ teaspoon dried basil
¼ teaspoon fines herbs
¼ teaspoon dried oregano
ground black pepper to taste
¼ teaspoon dried parsley, or to taste
1 loaf unsliced Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the butter, Parmesan cheese, garlic, marjoram, basil, fines herbs mix, oregano, black pepper, and parsley until thoroughly combined. Split the Italian bread loaf in half lengthwise, and spread each half generously with the butter mixture.
  • Bake the garlic bread on the top rack of the preheated oven until the butter mixture melts and bubbles, 10 to 15 minutes; turn on the broiler, and broil until the bread is your desired shade of golden brown, 1 to 2 more minutes.

We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

4 heads garlic
1/3 cup extra-virgin olive oil
3 sprigs thyme, plus 1 tablespoon finely chopped
Grey salt and freshly ground black pepper
8 tablespoons unsalted butter (1 stick), at room temperature
1 loaf of good, crusty bread, cut into slices

Steps:

  • Preheat oven to 350 degrees F.
  • Cut top from each head of garlic, exposing the cloves. Place heads of garlic (cut side up), on a piece of heavy duty aluminum foil. Pour olive oil over them, and top with thyme springs. Season with salt and pepper. Wrap the foil tightly. Place in a small ovenproof pan, and bake until the cloves begin to pop out, about 1 hour. Remove from the oven and cool.
  • To remove the cloves, open the foil and squeeze the lower part of the head of garlic. In a small bowl, mash the cloves to form a paste. (At this point the paste can be used or stored in the refrigerator or freezer.)
  • Add butter and chopped thyme to the bowl, stirring to combine. Season with salt and pepper, to taste.
  • Toast both sides of the bread, using a hot grill, grill pan, or broiler. Spread the roasted garlic butter paste onto the toasted bread. Serve immediately.

Steps:

  • Preheat the oven to 400°F.
  • Make a packet out of a piece of foil by folding it in half, then making small folds along two of the open edges.
  • Add the garlic, salt and oil to the packet. Fold the open side a few times to seal.
  • Bake until the garlic is very soft and golden brown. In my oven, this takes about an hour.
  • Once the garlic is done, remove from the oven and let cool slightly.
  • Place garlic in the food processor, and process until it is a smooth paste.
  • Place in a seal-able container and store in the refrigerator.

1/2 cup olive oil
salt & freshly ground black pepper

Steps:

  • Preheat oven to 375°.
  • Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
  • Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown; cool.
  • Squeeze the cloves out of their skins into a bowl; add the oil from the baking dish and mix well, forming a paste.
  • Store, refrigerated, up to one week.

  • Slice the garlic.
  • Add salt.
  • Begin to crush until salt has dissolved.
  • Now add 1/2 tps of Virgin Olive Oil and stir in until it disappears.
  • Once the garlic has absorbed the oil add another 1/2 tps and repeat.
  • If you keep doing this 3 cloves of garlic will then become a whole bowl of garlic paste.
  • It is time consuming but the results pay off.
  • Its fantastic as it keeps well and you can use it whenever required for cooking.
  • It tastes great on bbq or grilled chicken.
