This is from the Frugal Gourmet cookbook. I've always counted on this recipe for a simple, yet fantastic, side pasta dish.

8 garlic cloves
3 tablespoons olive oil
1/2 cup whipping cream
salt
pepper
1/2 lb pasta, cooked (weight before cooking)
parmesan cheese (to taste) or romano cheese, grated (to taste)
2 tablespoons fresh parsley, chopped, for garnish

Steps:

  • Thinly slice the garlic and saute in the olive oil until not quite browned.
  • Add the cream, tiny bit of salt, and ample pepper.
  • Simmer for a moment to reduce the cream.
  • Toss the cream with the hot pasta, just removed from the water.
  • Add lots of cheese and a parsley garnish.

1/2 cup olive oil
1/2 cup chopped fresh parsley

Steps:

  • Separate garlic into cloves; remove papery skins. In a large skillet over low heat, saute garlic in oil for 20 minutes or until golden brown. Remove from the heat; add parsley, oregano, salt and pepper. Toss with pasta serve immediately.

First EVERY ingredient in this recipe is done to taste. The ingredients are just an estimate. When it's done right it hits the spot. I would say the first 2 times you make it won't be the best of the recipe, third time is a charm. Do not cut back on the salt! I can not say this enough. If you do the dish will lack that certain something.

16 ounces bow tie pasta
8 garlic cloves, pressed
1/2 cup parmesan cheese
2 tablespoons olive oil
salt and pepper

Steps:

  • Cook the pasta according to package directions. Once the pasta is cooked and drained add enough olive oil to just coat the pasta.
  • Add 2/3 of the garlic and parmesan. Add a small amount of pepper and a healthy dose of salt.
  • Taste.
  • Begin adding the rest of the ingredients as your taste desires.

1 pound spaghetti
3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional

Steps:

  • Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  • Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.

1 medium head garlic, peeled and chopped
½ cup olive oil
1 tablespoon chopped fresh basil

1 (1 lb) box penne or 1 (1 lb) box penne rigate, cooked as directed, drained and kept hot
2 tablespoons butter or 2 tablespoons margarine
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth or 3/4 cup beef broth
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Steps:

  • Melt butter and add garlic in a medium sauce pan.
  • Cook over medium for 1 minute.
  • Add flour and cook 1 minute, stirring constantly.
  • Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.
  • Add parsley, salt, pepper and cheese.
  • Stir until cheese is melted.

2 teaspoons olive oil
2 Tablespoon garlic paste or 4 cloves of garlic, minced
2 Tablespoons butter
3 Cups of chicken stock (24 ounces)
1/2 pound thin spaghetti or angel hair pasta
1 cup Parmesan cheese, shredded (as shown in photos) + additional for topping
3/4 cup heavy cream
Salt & Pepper to taste

Steps:

  • In a large pot or dutch oven, heat oil over medium low heat.
  • Add in garlic and saute for 1 - 2 minutes or until garlic is fragrant, do not burn.
  • Add butter and continue stirring until butter melts.
  • Add chicken stock and raise heat to medium high bringing stock to a boil.
  • Once broth is at a boil add noodles. You can add them whole or break them in half and add them.
  • Cook pasta for the length of time the package directs you to.
  • Pasta will absorb almost all of the broth.
  • When pasta is cooked through, remove from heat.
  • Add Parmesan and stir until cheese is melted and noodles are cheesy.
  • Add in heavy cream and mix well. Salt and pepper according to your tastes or as needed.
  • Serve immediately. Top with more cheese!!

Here's a perfect dinner for the garlic devotee: pasta with garlic three ways -- raw, roasted, and fried.

1 head plus 8 cloves garlic
1 pound spaghetti
2 tablespoons olive oil
3/4 cup dry white wine
1 cup loosely packed fresh flat-leaf parsley, roughly chopped
1 teaspoon red-pepper flakes
Salt and freshly ground black pepper
Parmesan cheese, for grating

Steps:

  • Preheat oven to 425 degrees. Wrap garlic head in foil, or place in garlic roaster; roast until soft and golden, about 1 hour. Let cool, trim tip of head; squeeze out cloves, using back of knife. Transfer to small bowl; set aside.
  • Cook pasta until al dente. Drain, and run under cold water to stop cooking.
  • Thinly slice five cloves of unroasted garlic. Finely chop remaining three cloves. Heat oil over medium heat in large skillet. Add sliced garlic; toast until golden and crisp. Remove garlic with slotted spoon; set aside. Add chopped garlic; saute until translucent, about 1 1/2 minutes. Add roasted garlic and white wine; let simmer about 3 minutes. Add pasta, parsley, red pepper, and salt and pepper to taste; toss. Serve sprinkled with toasted garlic slivers. Grate Parmesan over each serving.

GARLIC NOODLES

Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

2 teaspoons Worcestershire sauce

  • Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.

1 lb spaghetti
3 tablespoons olive oil
1 head garlic
1/2 cup heavy cream
1/2 cup grated parmesan cheese
flat leaf parsley

Steps:

  • Press all of the garlic with a garlic press.
  • Start to heat the water for cooking the spaghetti now. Don't forget the salt!
  • Heat the garlic and olive oil on very low in a frying pan for about 10-15 minutes. You know it's ready when other people can smell it from everywhere within your dwelling. DO NOT LET THE GARLIC BROWN. If it starts to sizzle, add some olive oil to cool it down.
  • Meanwhile add the spaghetti to the water if it's boiling. Cook to al dente.
  • Add the heavy cream to the garlic mixture and turn up the heat to medium. Stir occasionally until the sauce is consistent throughout.
  • Add half a handful of the parsley to the sauce and cook for another two minutes.
  • Combine the cooked pasta, sauce and parmesan cheese. Stir well and serve!
  • Use salt, pepper, parmesan and more parsley for garnish.
