  • Separate the crowns and snip off any leaves of the broccoli.

  • Drop the broccoli florets into a pan of boiling salted water. Bring back to the boil, cook for 3-5 mins until tender, then drain.
  • Melt the butter in a large frying pan and, once sizzling, add the broccoli. Season with salt and pepper and sprinkle in as much of the parmesan as you want to use. Gently stir the florets in the cheese and butter. Scatter on a little more grated parmesan to serve.

600g / 1.2 lb broccoli florets (, small to medium (2 large heads, Note 1))
60g / 4 tbsp unsalted butter
4 garlic cloves (, minced)
6 tbsp plain flour
2 cups milk (, preferably warm (full or low fat))
1 1/2 cups chicken broth/stock (, preferably warm)
1.5 cups cheddar cheese, freshly grated ((Note 2))
1/2 cup grated parmesan cheese
Salt and pepper
1/2 cup panko breadcrumbs
1/4 cup grated parmesan cheese
20g / 1.5 tbsp unsalted butter, melted

Steps:

  • Preheat oven to 180C/350F.
  • Mix Topping ingredients in a bowl with a pinch of salt and pepper. Set aside.
  • Melt butter in a large pot over medium heat. Add garlic and cook for 1 minute until it smells incredible.
  • Add flour and cook for 1 minute, stirring constantly.
  • While whisking, slowly pour in half the milk. Once fully incorporated, whisk in the remaining milk plus the chicken broth.
  • Cook for 4 to 5 minutes, whisking every now and then and more towards the end, until the sauce thickens so that it coats the back of a wooden spoon and when you draw your finger across it, the path stays (see video).
  • Turn off heat, add cheeses, stir in (don't worry if it doesn't melt fully). Then do a taste test and add a bit of salt if required.
  • Add broccoli and stir well to coat.
  • Pour into a casserole dish, pat down to fill. Sprinkle over Topping, cover with foil then bake for 25 minutes.
  • Remove foil and bake for a further 20 minutes until the topping is deep golden and the broccoli is tender.
  • Stand for 5 minutes before serving.

1 lb. chicken tenders
Salt and pepper
1/2 teaspoon garlic powder
2 tablespoons olive oil
1/2 cup butter ((1 stick))
2 tablespoons minced garlic
1/4 teaspoon red pepper flakes
1 teaspoons salt (divided)
1/2 cup dry white wine ((such as Pinot Grigio))
1 1/2 cups white rice ((uncooked))
3 cups chicken broth
1/2 cup Parmesan cheese ((grated or shredded))

Steps:

  • Heat olive oil over medium heat in a large skillet. Season chicken with salt and pepper and garlic powder. Sauté chicken tenders until nicely browned and just cooked through. Remove from skillet and set aside.
  • Add butter, garlic, pepper flakes and 1/2 teaspoon of salt to the empty skillet and sauté garlic for a couple of minutes on medium heat.
  • Turn heat to medium high and add white wine. Cook and stir for about 5 minutes. Remove and set aside 3 tablespoons of pan sauce to use later.
  • Add uncooked rice to skillet with remaining butter sauce. Stir well - make sure it's completely covered. Add chicken broth and remaining 1/2 teaspoon of salt. Bring mixture to a low boil then reduce heat to medium-low, cover pan and simmer for 20 minutes or until rice is tender. Stir several times while it's cooking
  • Sprinkle parmesan over rice then arrange chicken tenders in skillet over rice. Cover, remove from heat then let stand for 5 minutes.
  • Drizzle reserved 3 tablespoons of pan sauce over chicken tenders when serving and garnish with parsley.

Instant Pot Garlic Parmesan Chicken and Rice is creamy, rich comfort food with chunks of white chicken meat. It is probably my favorite chicken Instant Pot meal to date.

1 1/2 pounds boneless, skinless chicken breasts
2 tablespoons butter
1/2 cup chopped onion
2 1/2 cups water
1 1/2 cups heavy cream
1 (10.5-ounce) can cream of chicken condensed soup
2 cups uncooked long grain rice
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 1/2 cups shredded Parmesan cheese
1/2 cup shredded cheddar or colby jack cheese
1 tablespoon chopped fresh parsley
4 ounces cream cheese, (cut into chunks and softened)

Steps:

  • Cut chicken into strips.
  • Turn Instant Pot to "Saute" mode. Add butter. When melted add chicken and onion and cook until most of the pink in the chicken is gone.
  • Add water, heavy cream and chicken soup. Stir.
  • Add rice, sprinkling it in so that it is evenly distributed. Add garlic powder, onion powder, salt and pepper. Do not stir.
  • Place lid on. Make sure valve is in "sealing" position. Pressure Cook on HIGH for 5 minutes. Manually release pressure.
  • Once the pin drops, remove lid and stir in cream cheese. Stir in Parmesan cheese, cheddar, and parsley. Place lid back on for a few minutes to melt cheese. Stir and serve. It will thicken up as it cools.

Steps:

  • Preheat oil in an oven safe skillet. Add pieces of chicken and cook it until golden brown.
  • Cut broccoli florets into bite-size pieces. Add them to the dish with chicken.
  • Combine whipped cream, parmesan cheese, and garlic salt together. Pour the sauce over the broccoli.
  • Bake at 350F for 10 minutes. Remove from the oven and sprinkle the mozzarella cheese on top.
  • Bake for 7 more minutes or until the cheese gets slightly golden. Serve right away while the cheese is still all melted.

Steps:

  • Melt the butter in a pan set over medium heat.
  • Grate the garlic into the pan with a microplane (or mince finely with a knife) and allow to cook gently for a minute until fragrant.
  • Pour the cream into the pan then bring to a gentle simmer.
  • Add the lemon juice and Parmesan then season with salt and pepper and simmer for a few minutes until the sauce easily coats the back of a spoon.

2 heads of broccoli (, stems removed and cut into florets)
12- ounces | 350 grams green beans (, ends trimmed)
1 cup grape or cherry tomatoes
1/3 cup freshly grated parmesan cheese (, divided)
1/4 cup olive oil
Juice of half a lemon
1 tablespoon minced garlic
Salt and pepper (, to season)

Steps:

  • Preheat the oven to 200°C | 400°F. Spray a baking sheet or tray with non stick cooking oil spray.
  • Arrange the broccoli and green beans on the baking sheet.
  • Top with 1/4 cup of parmesan cheese, and drizzle with the olive oil and lemon juice. Add the minced garlic and salt and pepper to suit your tastes; mix together well until all of the vegetables are evenly and completely covered in dressing.
  • Spread the veggies out in a single layer, transfer to oven and roast for 20 minutes.
  • After 20 minutes, carefully remove the sheet from the oven and add the tomatoes to the pan. Give the veggies a mix through (flipping any that are crisping or browning), and return to the oven, rotating the pan if necessary to cook evenly. Continue to roast for an additional 15-20 minutes, or until the broccoli is cooked through (the florets will have a nice crisp edge).
  • Top with the remaining 2 tablespoons of parmesan cheese and serve immediately!

Steps:

  • Preheat the oven to 400°F/200°C.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.

2 cups water
1 cup jasmine rice
3/4 teaspoon salt
For the chicken:
4 small-medium boneless skinless chicken breasts or thighs (about 4 oz each)
1 teaspoon brown or granulated sugar
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper (to taste)
1 tablespoon olive oil
2-3 cups broccoli florets
water for steaming

Steps:

  • To Cook the Rice:Bring the water to a boil in a medium saucepan. this Stir in the rice; cover and reduce the heat to low. Simmer for 15 minutes until all of the water is absorbed.
  • To Cook the chicken: Rub chicken with brown sugar, paprika, cumin, garlic powder, salt, and pepper. Heat 1-2 tablespoons oil in a large heavy-duty pan or skillet over medium-high heat.
  • Add the chicken to pan and cook for 5-6 minutes on the first side without moving, until the undersides develop dark grill marks. Flip the chicken breasts using a pair of tongs or a fork and cook the other side for 5-6 minutes. Turn off heat and allow chicken breasts to rest in pan for at least 5 minutes before cutting.
  • To steam broccoli: There are two ways to cook the broccoli. To blanch the broccoli on the stove-top. Boil water in a large pot. Add broccoli florets to pot and blanch for just 1 minute. Remove from the pot. To steam in the microwave: Place broccoli in a microwave-safe bowl and add water 3 tablespoons water to the bowl. Cover with a ceramic plate or plastic wrap. Microwave on high for 3 minutes.
  • To assemble: Cut the chicken into slices or small bite-size pieces. Use a 1 cup measuring cup to evenly spoon 1 cup of rice into each meal-prep container (4 total) Top the rice with slices chicken and broccoli florets. Cover and refrigerate for you to 4 days. To reheat microwave on high for 2 minutes or until steaming.
