CREAMY BROCCOLI CASSEROLE
RECIPE VIDEO ABOVE. This is the broccolli version of Cauliflower Cheese! Tender broccoli smothered in a creamy garlic-parmesan cheese sauce which is pretty much the one I use for everybody's favoure Mac and Cheese. It's nice and saucy, rather than being stodgy and so thick you can cut into it like cake, so there's extra cheese sauce to spoon over once served.

Steps:
- Preheat oven to 180C/350F.
- Mix Topping ingredients in a bowl with a pinch of salt and pepper. Set aside.
- Melt butter in a large pot over medium heat. Add garlic and cook for 1 minute until it smells incredible.
- Add flour and cook for 1 minute, stirring constantly.
- While whisking, slowly pour in half the milk. Once fully incorporated, whisk in the remaining milk plus the chicken broth.
- Cook for 4 to 5 minutes, whisking every now and then and more towards the end, until the sauce thickens so that it coats the back of a wooden spoon and when you draw your finger across it, the path stays (see video).
- Turn off heat, add cheeses, stir in (don't worry if it doesn't melt fully). Then do a taste test and add a bit of salt if required.
- Add broccoli and stir well to coat.
- Pour into a casserole dish, pat down to fill. Sprinkle over Topping, cover with foil then bake for 25 minutes.
- Remove foil and bake for a further 20 minutes until the topping is deep golden and the broccoli is tender.
- Stand for 5 minutes before serving.

- Use a vegetable peeler to remove the tough skin from the lower portion of the thick broccoli stems. Cut the florets off the crown, including a 1 to 2-inch spear of stem on each (see photos below). Use a microplane, zester, or fine cheese grater to remove the yellow zest from the lemon. Set the zest aside.
- Add one to two inches of water to the bottom of a medium sauce pot. Place a steam basket in the pot, then add the broccoli. Place a lid on the pot and heat the water over high flame until it begins to steam. Steam the broccoli for about five minutes, or until it is bright green and can be pierced with a fork, but is still slightly crisp. Remove the broccoli from the heat and remove the lid to prevent further cooking.
- While the broccoli is steaming, mince two cloves of garlic and add them to a large skillet along with the the olive oil. Sauté the garlic over medium heat for one to two minutes, or just until soft and fragrant. Turn the heat off if needed, to wait for the broccoli to finish steaming.
- Once the broccoli is finished steaming, transfer it from the sauce pot to the skillet with the oil and garlic. Squeeze a small amount of lemon juice over top, then toss to coat in the infused oil. Season to taste with salt and freshly cracked pepper, then top with grated parmesan and a pinch of the lemon zest.

- Place the rice in a large pot and add 3 cups water. Place a lid on the pot and bring it up to a boil over high heat. Once it reaches a boil, turn the heat down to low and let it simmer for 15 minutes. After simmering for 15 minutes, turn the heat off and let the rice rest without removing the lid for an additional 5 minutes. (OR use your favorite method of cooking rice -- rice cooker, Instant Pot, etc.)
- Once the rice has cooked, fluff it gently with a fork. Add the butter, salt, garlic powder, cayenne, and some freshly cracked pepper. Fold the butter and spices into the rice until fairly well combined (the butter should melt quickly in the hot rice).
- Add the chopped broccoli and gently fold it into the rice. The broccoli should bring the temperature of the rice down just to the point where it is hot/warm, but not so hot that the cheese immediately melts when stirred into the rice.

- Saucy Paleo Mongolian Beef Broccoli “Rice” Bowls. Eating beef and broccoli on its own, without rice to ladle it on top of, seems kind of incomplete.
- Quick Vietnamese Pork and Riced Broccoli Bowl. From the sweet and sour homemade sauce to the ginger and garlic sautéed meat and the crunch of the fresh veggies, there’s so much to enjoy in this bowl that you honestly might forget that the rice is actually made of broccoli.
- Vegan Broccoli Cranberry Walnut Salad. Although this salad is free of grains, gluten, dairy, eggs, or meat, it still manages to be chock-full of nutritious, filling ingredients.
- Grain-Free Tabbouleh. Just ’cause we call it broccoli rice doesn’t mean it can’t stand in for other grains. In this Middle Eastern-inspired salad, it works as a fantastic bulgur substitute, fitting in seamlessly with the bolder flavors of the parsley, sun-dried tomatoes, and lime.
- Broccoli Rice Sushi Rolls. Going low-carb doesn’t necessarily mean saying sayonara to sushi—we’d never let you do that! All you have to do is get creative with alternatives.
- Keto Cheesy Broccoli and Cauliflower Rice. Say goodbye to pre-packaged, pre-seasoned rice packets. This keto version is just as quick to make (13 minutes!)
- Paleo Broccoli Flatbread. If making actual bread from scratch is too time-consuming, and the store’s gluten-free loaves resemble cardboard, this broccoli flatbread offers a more-than-adequate alternative.
- Raw Broccoli Salad With Chickpeas and Almonds. Broccoli florets can be tough to eat raw, but pulverize them in a food processor into rice, and they become a crunchy base for the creaminess of the chickpeas and the avocado dressing.
- Thai Broccoli and Cauliflower Rice With Stir Fried Veggies. If you think riced veggies can never take the place of fragrant jasmine rice, this recipe might urge you to reconsider.
- Broccoli Rice Red Pepper Egg Muffins. Build a better breakfast muffin with these portable, vegetarian mini-frittatas. They contain zero sugar, are bulked up with broccoli rice instead of gluten or dairy, and come together in 20 minutes flat.
