Here's what you need: red potatoes, garlic, milk, kosher salt, butter, pepper, fresh chive

Number Of Ingredients 7

4 red potatoes, diced
2 cloves garlic, minced
½ cup milk
1 teaspoon kosher salt
1 tablespoon butter
pepper, to taste
fresh chive, chopped, for garnish

Steps:

  • In a medium bowl, add the potatoes and garlic and stir until evenly combined.
  • Microwave for 13 minutes. Remove from the bowl from the microwave.
  • In a liquid measuring cup or small bowl, combine the milk, salt, and butter and stir to combine.
  • Pour the milk mixture over the potatoes.
  • Microwave for 2 minutes.
  • Remove from the microwave and mash the potatoes with a fork.
  • Add the pepper and stir to incorporate.
  • Garnish with chives.
  • Enjoy!

2-3 small-medium potatoes
2 tablespoons butter
1-2 tablespoons cream, half and half (or milk)
roasted garlic cloves from a head of garlic
1 tablespoon cream cheese
salt and pepper, to taste

Steps:

  • Wash and cube potatoes and place in a microwave-safe bowl. Cover with water just enough to cover potatoes.
  • Microwave for 8-10 minutes, until potatoes are soft.
  • Drain potatoes.
  • Add butter, cream, and cream cheese and let it sit for a minute to melt.
  • Follow these directions to make roasted garlic in the microwave.
  • Take the roasted garlic cloves and mash them with a fork before adding them to the potatoes.
  • Mashed potatoes and ingredients together.
  • Give it a good stir once it's mashed to incorporate all ingredients.
  • Serve immediately!

2 1/2 pounds potatoes, peeled and cut into small chunks, about 3/4-inch pieces
3/4 to 1 cup milk, or light cream)
4 to 6 tablespoons butter, or to taste; cut into 1/2-inch pieces
Salt to taste
Freshly ground black pepper to taste

Steps:

  • Gather the ingredients.
  • Rinse the peeled potato chunks and put them in a large microwave-safe bowl or a casserole dish.
  • Cover the dish or bowl with plastic wrap and cut a small vent in the top for steam to escape.
  • Microwave on high for 9 to 12 minutes, or until the potatoes are tender and can be gently poked through with a fork.
  • With pot holders or oven mitts , carefully remove the bowl from the microwave . If necessary, transfer to a larger bowl for mashing.
  • Warm 3/4 cup of milk with 4 tablespoons of butter in the microwave until the butter is melted or nearly melted, from 30 to 50 seconds.
  • If desired, put the potatoes through a ricer before mashing with the rest of the ingredients.
  • Add the milk mixture to the hot potatoes and mash with a hand masher or small electric hand mixer. If using an electric mixer, be careful not to overmix, or the potatoes may become gummy. Add more of the remaining milk and butter as needed to achieve your desired consistency. Add salt and pepper to taste, and mix well.
  • Serve alongside your favorite entrée. Enjoy.

1/2-3/4 cup milk
1/4 cup butter

Steps:

  • Rinse peeled and quartered potatoes.
  • Arrange potatoes in medium glass bowl.
  • Cover with plastic wrap.
  • Cook at HIGH for 9 to 10-1/2 minutes; stir once. You can set your kitchen timer for a reminder to stir. Potatoes should be tender.
  • Let stand, covered, for 5 minutes.
