THE HIRSHON ANCIENT ROMAN GARLIC AND HERB CHEESE SPREAD - MORETUM

The Hirshon Ancient Roman Garlic and Herb Cheese Spread - Moretum image

Provided by The Generalissimo

Number Of Ingredients 17

¾ lb. aged goat or sheep cheese (Pecorino is TFD's choice)
¼ lb. fresh ricotta cheese (cow or goat)
1 head fresh garlic, broken into cloves, peeled and rough-chopped
Handful fresh parsley
¼ cup leaves from a bunch of celery
⅛ cup arugula or dandelion greens
1 tsp. dried dill
½ tsp. dried mint
½ tsp. dried coriander seeds, lightly toasted and pulverized in a spice grinder
½ tsp. dried Summer savory
½ tsp. dried thyme (remove twigs)
2 chives, minced
1 Tbsp. white wine vinegar
salt to taste
***
Mortar and Pestle (or if you must, use a food processor)
2 Tbsp. olive oil for garnish

Steps:

  • Given that the receptacle of most modern mortars are quite small, it's best to work with the ingredients in batches. Once the mortar is full, dump the pulverized herbs in a bowl on the side and keep going.
  • Start processing all of your herbs and greens by loading the bowl of the mortar to capacity. Press your pestle into the herbs/greens and mince them by moving the pestle in a circular motion around the inner edge of the mortar.
  • You'll be shocked as to how much you can reduce the greens and herbs in a very short amount of time.
  • Once you've reduced all of your herbs and greens, you'll want to add in the remaining spices, vinegar, cheeses, salt and pepper. Mix everything together in a large bowl. TFD prefers a texture that should be thick and slightly creamy to scoop up with flatbread.
  • Once you've achieved the texture that you like, roll the finished mixture into a firm ball ready for serving along with flat bread. Drizzle the olive oil over the cheese ball before serving, massage it into the ball to make it shiny.

CREAMY GARLIC AND HERB FOOTBALL SPREAD

Creamy Garlic and Herb Football Spread image

This spread is irresistible not only for its near-life-size football shape, but for its creamy fluffy texture and bright herb flavor. A layer of ground toasted walnuts and some sour cream stitching complete the look, making this the world's most delicious football.

Provided by Food Network Kitchen

Categories     appetizer

Time 8h25m

Yield 10 to 12 servings

Number Of Ingredients 8

12 ounces cream cheese, softened
3/4 cup heavy cream
1/2 cup plus 2 tablespoons sour cream
1/4 cup mixed chopped fresh herbs, such as chives, parsley and dill
1 small clove garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup walnut halves, very finely chopped
Assorted crackers, for serving

Steps:

  • Beat the cream cheese with an electric mixer on medium-high speed until fluffy, about 2 minutes. Reduce the speed to low and slowly beat in the heavy cream. Increase the speed to medium and beat until smooth. Beat in 1/2 cup of the sour cream. Beat in the herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Line a medium strainer about 7 1/2 inches in diameter with a few layers of cheesecloth, letting the ends hang over the edges of the strainer. Set the strainer over a bowl. Pour the cream cheese mixture into the strainer and fold the ends of the cheesecloth over the top. Gently flatten with your hands and shape into an oval football. Gather the edges of the cheesecloth up and twist until tight, trying to keep the oval shape of the spread. Place the strainer and bowl in the refrigerator 8 hours or overnight.
  • To serve, unwrap the spread and invert onto a serving dish so the rounded side is facing up. Use the cheesecloth to gently reshape the oval and taper the ends to look like a football, then discard the cheesecloth and any liquid in the bottom of the bowl.
  • Put the walnuts in a medium skillet set over medium heat and cook, stirring, until they are toasted, about 5 minutes; watch carefully so that they do not burn. Remove from the heat and cool. Sprinkle and press the nuts into the spread so it is covered. Put the remaining 2 tablespoons sour cream in a small resealable plastic bag and snip about 1/8 inch off the end of one corner. Pipe the sour cream over the spread to create the laces of a football. Serve with assorted crackers.

EASY GARLIC HERB VEGAN CHEESE SPREAD

Easy Garlic Herb Vegan Cheese Spread image

This savory vegan cheese spread is packed with garlic and herbs and is so easy to make. Serve this delicious dairy-free cheese on sandwiches, crackers, toast, or bagels. Healthy, oil-free, and gluten-free!

Provided by Shane Martin

Time 1h10m

Number Of Ingredients 11

1/2 cup of water
1/4 cup of lemon juice or apple cider vinegar
1 1/2 cups almond flour
1 tablespoon nutritional yeast
2 cloves of garlic
1 tablespoon dried oregano
2 teaspoons dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon dried dill
1/2 teaspoon dried basil
Salt to taste

Steps:

  • To a high-speed blender or food processor add the water, lemon juice, garlic, and almond flour. Blend until the texture is smooth and creamy. You may have to stop a couple of times to scrape down the sides. You can also add 1 tablespoon of water at a time to help the blending process, but don't add too much or you will get runny cheese.
  • Transfer the mixture to a small mixing bowl, add nutritional yeast and herbs, and stir until everything is well combined. Taste and season with salt as necessary.
  • Spoon the vegan cheese spread into the desired container, make sure it's packed really well, place it in the fridge, and allow the cheese to sit for 1-2 hours if you prefer a firmer spread.
  • Enjoy with veggies, crackers, bagels, or sandwiches.

  • Watch my YouTube video recipe for step-by-step instructions, in the post above! Prepare the garlic and herb spread for the lamb first. Place the garlic, rosemary, thyme, mustard, olive oil, salt and pepper into a food processor and pulse everything together for about 1 minute. If the paste is too thick, add more olive oil. Don’t have a food processor? Finely mince the rosemary, thyme and garlic, the combine with the rest of the spread ingredients.
  • Remove the racks of lamb from their packaging and pat the meat dry with paper towels. Use a sharp fileting knife to trim off any excess fat. Place the lamb onto a baking sheet lined with parchment paper. Using a spatula or your hands, apply the prepared garlic spread all over the lamb, especially on the top side. Allow the lamb to rest for at least 1 hour at room temperature. If preparing ahead of time, keep the lamb stored in the fridge, then remove 1 hour prior to roasting.
  • Start preheating the oven to 450F about 30 minutes before roasting. Roast the lamb with the fatty side up first for 10 minutes, then turn and roast on the other side for 10 minutes. Turn one last time and continue roasting until the internal temperature reaches 125F (medium/rare), 140 (medium), or 150F (well). The timing will depend on the thickness of the rack, anywhere between 5 to 20 minutes. Remove the lamb from the oven and allow the meat to rest for at least 5 to 10 minutes prior to cutting and serving.
  • If the garlic and herb spread stick to the parchment paper when you turn the lamb over the second time, use a spatula to spread it back onto the lamb.

IS GARLIC AN HERB, SPICE, VEGETABLE, OR SOMETHING ELSE ...
The entire head of garlic can be roasted whole and the tender cloves used as a spread or added to a soup or sauce. Before adding garlic to a recipe, the papery skin needs to be removed. There are several tricks to accomplish this task, the simplest being to gently press down on the clove with the flat side of a large knife; the skin should easily peel off.
