6 garlic cloves, thinly sliced
1 tsp. celery seed
1 tsp. crushed red pepper flakes
2 tbsp. whole-grain mustard
2 lb. large easy-peel shrimp
2 lemons, 1 thinly sliced and 1 halved
Kosher salt
Freshly ground black pepper
Chopped fresh chives, for serving

Steps:

  • Combine oil, garlic, celery seed, and red pepper flakes in a small saucepan. Cook over medium heat, stirring constantly, until garlic is golden, sizzling, and fragrant, 2 to 4 minutes. Whisk in mustard and transfer to a bowl; cool completely.
  • Add shrimp and sliced lemon to oil mixture. Season with salt and black pepper; toss to coat. Refrigerate at least 15 minutes or up to 1 hour.
  • Heat grill to medium-high. Grill shrimp and lemon slices until lemons and shrimp are lightly charred and shrimp are just cooked through, 1 to 3 minutes per side.
  • To serve, transfer to a platter, sprinkle with chives, and squeeze lemon halves over top.

4 cloves garlic
kosher salt to taste
¼ cup olive oil
1 pound large shrimp, peeled and deveined
¼ teaspoon ground black pepper, or to taste

Steps:

  • Soak wooden skewers in water for at least 15 minutes.
  • Preheat grill for medium heat and lightly oil the grate.
  • Chop garlic on a cutting board. Sprinkle kosher salt over salt and with the back of a large knife, smash the garlic on the cutting board to form a paste.
  • Heat garlic paste and olive oil in a skillet over medium-low heat until garlic begins to brown, about 5 minutes. Remove from heat.
  • Skewer about 5 shrimp on each wooden skewer by piercing shrimp through the tail and the upper body. Season shrimp with kosher salt and pepper. Brush one side of the shrimp with garlic-infused olive oil.
  • Place shrimp oil-side down on the preheated grill and brush with more olive oil; cook until shrimp begins to turn pink and curl, about 4 minutes. Turn shrimp over and brush with olive oil again. Continue grilling until shrimp is opaque and pink all over, about 4 minutes more.

12 large raw shrimp (wild U-10 or 15/20 count) peeled, deveined and cut in "fan" shape (similar to butterfly)
1 tablespoon fresh lime juice (from1 small lime), plus lime wedges for garnish
1 teaspoon Thai chili sauce (recommended: Sriracha) or more, to taste
1 tablespoon light brown sugar
2 tablespoons bottled minced garlic or 6 fresh cloves, minced
2 tablespoons ketchup
1 Thai chile, sliced thin or habanero or Scotch bonnet
1/4 cup canola or olive oil
1/4 cup toasted sesame oil
1/4 cup soy sauce
4 to 5 grinds black pepper

Steps:

  • Heat a grill to medium-high heat.
  • Put the shrimp into a glass bowl. Whisk the remaining ingredients in a medium bowl and pour 1/2 to 2/3 if it over the shrimp. (Reserve the remaining marinade to brush on the shrimp during grilling.) Allow the shrimp to marinate for only 8 to 10 minutes or the lime juice will begin to "cook" the shrimp. Grill the shrimp, approximately 2 to 3 minutes per side while brushing with the reserved marinade. I use a silicone brush. Remove the shrimp from the grill to a platter and serve garnished with lime wedges.

2 teaspoons Italian seasoning blend

2 pounds large shrimp (21-25 per pound), peeled and deveined

Steps:

  • Whisk the paprika, garlic, Italian seasoning, lemon juice, olive oil, pepper, basil, and brown sugar together in a bowl until thoroughly blended. Stir in the shrimp, and toss to evenly coat with the marinade. Cover and refrigerate at least 2 hours, turning once.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.

  • Heat the grill to medium.
  • Whisk together 1/4 cup of the oil, 2 tablespoons of the thyme, ancho powder and chopped garlic in a small bowl. Skewer the shrimp and brush with marinade.

1/3 cup coarse kosher salt
1 cup dry white wine
6 Turkish bay leaves, divided

2 pounds uncooked large shrimp with shells (about 32 shrimp)
3/4 cup extra-virgin olive oil
4 garlic cloves, chopped
1 ciabatta bread, sliced

Steps:

  • Stir 1 cup ice water and 1/3 cup salt in small saucepan over high heat until salt dissolves, about 5 minutes. Transfer salt water to large bowl. Mix in wine, 2 bay leaves, chopped lemon, peppercorns, and remaining 7 cups water, then shrimp. Chill at least 15 minutes and up to 1/2 hour.
  • Meanwhile, prepare barbecue (medium-high heat). Whisk oil and garlic in small bowl to blend.
  • Drain shrimp, rinse, and drain well. Using kitchen scissors, cut shells down center of back side and devein, leaving shells intact. Grill shrimp in shells until charred and just opaque, 3 to 4 minutes per side. Grill bread until beginning to brown, about 2 minutes per side.

Steps:

  • Add the olive oil, lemon juice, herbs, garlic, and spices to a small mixing bowl and whisk together.
  • Place the shrimp in a bowl and pour 3/4 of the marinade on top of the shrimp. Mix together gently until the shrimp are well coated.
  • Cover the bowl and marinate the shrimp for 30 minutes to an hour.

1.5 kg (3lbs) shrimp (deveined but shell and head on)
2 tbsp cajun spice
1 tbsp lemon pepper
2 tsp salt
3 tbsp olive oil
250 g (2 sticks) butter
10 garlic cloves (crushed )
3-4 tbsp fresh lemon juice
2 tsp cajun spice
1 tsp chilli flakes
½ cup cream ((heavy or whipping) )

Steps:

  • If your prawns haven't been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein.
  • Place the prawns in a large bowl. Pour over the oil and season with the cajun spice, lemon pepper and salt. Mix well to ensure all the prawns are evenly coated.
  • To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked) and add the garlic, lemon juice and spices.
  • Allow to cook for a minute until fragrant then pour in the cream. Bring to a simmer and allow to cook for 5 minutes then remove from the heat.
  • Taste and adjust seasoning accordingly. The sauce needs to be a little too lemony and very well seasoned. Once the prawns are added, the sauce will mellow a bit.
  • Preheat the grill for 10-15 minutes. I prefer using an outdoor grill/braai/barbecue as the smoke adds incredible flavor to the shrimp once cooked but you can use a griddle pan too.
  • Add the prawns and cook for 2-3 minutes per side until they are coral/orange in color. As the prawns cook, add them to the pot with the sauce.
  • Once all the prawns have been added, toss to coat the prawns in the sauce.
  • Serve over rice or with crusty bread and extra lemon wedges.

2 quarts water

2 lbs large shrimp, brined for 20-25 min

Steps:

  • Prepare brining solution and brine shrimp for 20-25 minutes -- remove shrimp feet and devein with shells left on (this isn't absolutely necessary but it does seem to result in moister grilled shrimp), rinse and dry.
  • Using mortar& pestle smash garlic and salt into a smooth paste.
  • Add cayenne and paprika and mix well.
  • Add olive oil and lemon to form a thin paste.
  • (NOTE: Make sure the paste isn't too loose or it will not cling to the shrimp.) Toss shrimp with paste until evenly coated.
  • (This mixture can be covered and refrigerated for up to an hour before grilling).
  • Grill until shells are bright pink- 2-3 minutes per side.

1 dash Worcestershire sauce
1/2 cup butter
3 lemons, juice of

  • Light fire, and let coals ash, you want a slow-med fire.
  • Sauté garlic in butter.
