THE BEST CREAMED SPINACH RECIPE
This is the Best Creamed Spinach Recipe you'll ever taste! Three kinds of cheese and vibrant spinach together with fragrant herbs make this a favorite dish at Thanksgiving or anytime.

Steps:
- Bring a large stockpot of water to a boil. Add spinach and cook down for about 2-3 minutes or until spinach is wilted but not soggy.
- Drain spinach well and then wring out using cheesecloth (preferred) or a kitchen towel. You can also press spinach in a fine-mesh strainer to try and remove excess water. Note: the spinach may be VERY hot, handle with care and allow to cool if needed.
- Note: you may be surprised to find that you only have 1-2 cups of spinach. This is totally normal.Set spinach aside.
- In a large skillet over medium heat, melt butter. Add onions and garlic and cook until onions become soft and transparent.
- Sprinkle flour over the onions and stir until flour is cooked (about 3 minutes).
- Pour in half and half a little at a time, whisking constantly making a beschamel sauce. You want it to be the consistency of a thin gravy. Add more half and half or milk if needed.
- Add salt and pepper to taste.
- Add spinach and stir until spinach is well mixed in.
- Add Parmesan cheese, Mozzarella cheese, and creamy Swiss cheese (or cream cheese). Stir until all cheeses are melted and completely mixed in.
- Serve immediately.

Steps:
- Melt the butter in a large pan over medium heat. Add the shallot and cook until softened, 3 to 4 minutes. Add the garlic and cook for 1 to 2 minutes, until fragrant. Season with salt.
- Add the spinach, season with salt, and sauté until wilted, 3 minutes. Transfer to a strainer to drain any excess water.
- Return the spinach to the pan and sprinkle with the flour. Cook for 1 minute, until the flour is lightly browned.

- Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
- Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. Sprinkle in the provolone cheese and stir to melt and coat the spinach. Once the provolone has melted, stir in the Parmesan cheese and continue to cook and stir until thickened. - In a small microwave-safe bowl, beat cream cheese and garlic powder until smooth. Stir in spinach and Swiss cheese. I love sauteed spinach with garlic, and one day I got creative and threw in some shredded cheddar cheese (Tilamook is the best). Yum! Yum! What a delightful treat my surprise turned out to be! :-) This may even appeal to non-spinach lovers because of the wonderful cheesy taste it brings. Please note that, when you first start to saute the spinach leaves, it will appear to be too much spinach, but once it begins to wilt, it becomes a much smaller quanity. Best of all, this dish literally takes about 5 minutes to throw together!

- Set oven to 350 degrees.
- Butter 1 2-qt casserole dish.
- In a medium saucepan, melt butter.
- Mix in flour to make a roux.

Steps:
- Cook spinach as directed on package and drain for as long as your patience permits (squeezing with towels to speed up drying) and set aside.
- In a skillet, melt butter over moderate heat; lightly brown garlic, adding thyme and pepper just before garlic is browned.
- Immediately add spinach and warm it up before adding cream and vinegar, then stir.
- When mixture starts to thicken up, add cheese and take off burner (cheese will continue melting).
