Garlic-Chili Shrimp Skewers with Peanut Noodles and Broccoli image

This may seem like a lot of work but this delicious meal should be ready well under an hour.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 45m

Number Of Ingredients 9

8 ounces spaghetti
Coarse salt
2 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon light-brown sugar
32 large frozen shrimp, (1 1/2 pounds), peeled, deveined, thawed
Garlic-Chili Oil
1 1/2 pounds (1 to 2 heads) broccoli, cut into florets, stems peeled and sliced 1/2 inch thick

Steps:

  • Make peanut noodles: Cook spaghetti in a large pot of boiling salted water until al dente, according to package instructions; drain and rinse with cool water.
  • In a large bowl, whisk together peanut butter, soy sauce, vinegar, and brown sugar until smooth. Add spaghetti, season with salt, and toss to combine; set aside.
  • Make shrimp skewers and broccoli: Heat broiler, with rack set 4 inches from heat. Thread shrimp onto 8 skewers (4 shrimp each); transfer to a broiler pan or broilerproof baking sheet. (If using bamboo or wooden skewers, cover exposed parts with aluminum foil to prevent scorching.) Dividing evenly, spoon 2 tablespoons garlic-chile oil onto shrimp; set aside.
  • Place broccoli, 1 tablespoon Garlic-Chili Oil, and 3/4 cup water in a large skillet. Simmer, covered, over medium heat, until tender, 5 to 7 minutes.
  • Meanwhile, broil shrimp until opaque throughout, 3 to 4 minutes. Serve with noodles and broccoli; drizzle all with remaining garlic-chile oil.

CHILE-GARLIC SHRIMP

Chile-Garlic Shrimp image

This is one of my favorite recipes that can be made as an appetizer of a main course. My wife and I have been making these delicious shrimp for a few years now and the entire family loves it.

Provided by DadLuvs2Cook

Categories     Seafood     Shellfish     Shrimp

Time 15m

Yield 4

Number Of Ingredients 8

1 pound uncooked medium shrimp, peeled and deveined
1 (1.6 oz) package buffalo wing seasoning mix (such as McCormick® Original Buffalo Wings Seasoning Mix)
5 tablespoons unsalted butter
2 teaspoons bottled minced garlic
¼ teaspoon crushed red pepper flakes
¼ cup coarsely chopped fresh cilantro
2 teaspoons lime juice
4 lime wedges, for garnish

Steps:

  • Rinse the shrimp with cold water and pat dry with paper towls. Add the shrimp and seasoning mix to a plastic bag and shake to coat.
  • Heat the butter, garlic, and red pepper flakes in a large skillet over medium heat until the butter has melted. Raise the heat to medium-high; when the butter begins to pop and sizzle add the shrimp to the pan. Cook and stir the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, about 4 to 5 minutes. Do not overcook.
  • Remove the pan from the heat and stir in the cilantro and lime juice. Garnish with lime wedges and serve hot.

GRILLED THAI CHILE GARLIC SHRIMP

Grilled Thai Chile Garlic Shrimp image

Provided by Food Network

Time 25m

Yield 4 servings for appetizer, 2 servings for entree

Number Of Ingredients 11

12 large raw shrimp (wild U-10 or 15/20 count) peeled, deveined and cut in "fan" shape (similar to butterfly)
1 tablespoon fresh lime juice (from1 small lime), plus lime wedges for garnish
1 teaspoon Thai chili sauce (recommended: Sriracha) or more, to taste
1 tablespoon light brown sugar
2 tablespoons bottled minced garlic or 6 fresh cloves, minced
2 tablespoons ketchup
1 Thai chile, sliced thin or habanero or Scotch bonnet
1/4 cup canola or olive oil
1/4 cup toasted sesame oil
1/4 cup soy sauce
4 to 5 grinds black pepper

Steps:

  • Heat a grill to medium-high heat.
  • Put the shrimp into a glass bowl. Whisk the remaining ingredients in a medium bowl and pour 1/2 to 2/3 if it over the shrimp. (Reserve the remaining marinade to brush on the shrimp during grilling.) Allow the shrimp to marinate for only 8 to 10 minutes or the lime juice will begin to "cook" the shrimp. Grill the shrimp, approximately 2 to 3 minutes per side while brushing with the reserved marinade. I use a silicone brush. Remove the shrimp from the grill to a platter and serve garnished with lime wedges.

CHINESE CHILI GARLIC SHRIMP

Chinese Chili Garlic Shrimp image

Spicy, garlicky, and sweet all at once, these crispy chili garlic shrimp will be your new favorite takeout dish at home in your own kitchen!

Provided by Maggie Zhu

Categories     Main

Time 25m

Number Of Ingredients 10

1 lb (450 g) raw shrimp (, peeled & deveined (*Footnote 1))
1 teaspoon Shaoxing wine ((Optional))
1/2 teaspoon salt
1 and 1/2 tablespoons cornstarch
1 tablespoon all-purpose flour
1/4 cup chili garlic sauce
2 tablespoons brown sugar
2 teaspoons light soy sauce ((or soy sauce))
4 1/2 tablespoons peanut oil ((or vegetable oil))
1 tablespoon ginger (, minced)

Steps:

  • Combine the shrimp and Shaoxing wine in a medium-sized bowl. Sprinkle evenly with salt. Mix until the salt is evenly dispersed. Set aside while preparing the rest of the ingredients.
  • Combine all the sauce ingredients in a bowl and stir until the brown sugar is dissolved. Set aside.
  • Heat 4 tablespoons of oil (or just enough to cover the bottom of the pan) in a medium-sized skillet until hot. Meanwhile, add the cornstarch and all-purpose flour to the bowl with the shrimp. Toss until the shrimp are fully coated.
  • Shake the extra flour off the shrimp and add them to the pan. You might need to cook them in two batches. Let the shrimp cook without touching them, until the bottom turns golden, 2 to 3 minutes. Flip to brown the other side, another 2 to 3 minutes. Once done, transfer the shrimp to a large plate without overlapping and keep cooking the rest.
  • Once you're done cooking the shrimp, turn off the stove and use paper towels to wipe the pan to remove any residue.
  • Add the remaining 1/2 tablespoon of oil to the pan and heat over medium heat. Add the ginger and stir until fragrant, about 1 minute.
  • Add the sauce to the pan. Cook and stir until the sauce becomes thick and glossy, 20 to 30 seconds.
  • Turn the heat off and return the shrimp into the pan, tossing to coat thoroughly.
  • Serve hot as a main dish.

Yield 30 satays, 10 serving(s)

Number Of Ingredients 23

1 small onion, chopped
4 garlic cloves, chopped
3 large stalk fresh lemongrass, sliced
1/4 cup fresh ginger, minced
1/3 cup vegetable oil
1 tablespoon ground coriander
1 tablespoon honey
1 teaspoon ground fennel
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon coarse sea salt
30 large shelled prawns (about 1 3/4 lb)
1/4 cup minced onion
2 garlic cloves, chopped
1 large stalk fresh lemongrass, sliced
1 tablespoon vegetable oil
1 tablespoon ground coriander
2 tablespoons Thai sweet chili sauce
1/2 cup coconut milk
1 tablespoon tamarind paste
1 tablespoon evaporated unbleached cane sugar (or regular sugar)
2 1/2 tablespoons natural-style peanut butter
1 teaspoon salt

Steps:

  • In food processor, combine the onion, garlic, lemongrass and ginger and process to a paste. In large skillet, heat the oil. Add paste and cook over low heat, stirring occasionally, until browned, approximately 20 minutes.
  • Add coriander, honey, fennel seeds, cumin, turmeric, and salt to the skillet and cook over high heat, stirring until fragrant, about a minute. Scrape into a bowl and let cook completely.
  • In a large, shallow dish, coat the shrimp with the spice paste. Cover and refrigerate for at least 3 hours.
  • Soak 30 small bamboo skewers or 10 large in water for 30 minutes. Light the grill. Thread the shrimp onto the skewer, stretching them out. If skewers are long, put 3 shrimp on each.

  • For sauce: In food processor, combine onion, garlic, and lemongrass, and process to a paste.
  • In a large skillet, heat the vegetable oil. Add the onion paste and cook over medium-low heat, stirring occasionally until brown, about 8 minutes. Add the coriander and cook until fragrant, about 2 minutes. Add Thai chili sauce and cook, stirring, for another 2 minutes. Add coconut milk and boil over high heat until thickened, about 2 minutes. Stir in tamarind concentrate, sugar, and peanut butter until smooth. Remove from heat and season with salt. Let cool: transfer to a bowl. Can be refrigerated for up to two days.
