Creamy Chicken and Garlic Picnic Pasties-Parcels With Boursin image

Delectable litle pasties or pastry parcels filled with tender chunks of chicken breast and French Boursin cream Cheese, delicious! These are so easy to make, as they use cooked chicken breast, making them very handy for any leftovers you might have. France meets England in these pastry parcels, I have taken the idea of a traditional pasty, then added a little French touch with the Boursin cheese, thus dispensing with any need to make a white sauce to bind the chicken! Great for lunch boxes, picnics, lunch, supper or a light meals or snacks.NB: (I would not advise re-heating these, as the chicken has already been cooked twice before - they are just as delicious warm or cold.)

8 ounces pre-prepared puff pastry
8 ounces cooked chicken breasts, chopped
5 ounces cream cheese with garlic and herbs, such as Boursin
3 ounces mushrooms, chopped
1 tablespoon fresh parsley, chopped
fresh ground black pepper
eggs or milk, for glaze

Steps:

  • Heat oven to 200ºC, 400ºF, Gas Mark 6. Grease and line a large baking tray.
  • Thoroughly mix together all the filling ingredients, seasoning with black pepper. (You can pre-fry the mushrooms if you wish.).
  • Roll out the pastry to a 30 cm (12 inch) square, then cut into 4 squares, place them on the baking tray.
  • Pile the ingredients into the middle of the pastry sqaures. With the back of a spoon firmly press ingredients together.
  • Brush edges with milk, fold corners to the centre sealing edges.
  • Brush with beaten egg or milk and bake for 35 minutes until golden brown.
  • Eat warm or cold.

These Garlic Chicken Parcels are easy to make and look super impressive, plus they are make ahead! Individual puff pastry parcels (using pie crusts) are filled with juicy chicken and oozing with garlic butter. Serve with potatoes and salad for an easy weeknight family dinner, half the recipe and serve them just for two on a date night. Or they are fancy enough for entertaining and can be prepared ahead of time and then just popped in the oven to cook when you sit down for appetizers.

1 shallot (or 1/4 red onion)
4 garlic cloves
large handful fresh flat leaf parsley
1/2 tsp lemon juice
1 stick unsalted butter (- softened (see note 1))
1 tsp salt
1/4 tsp black pepper
4 skinless boneless chicken breasts
4 sheets puff pastry (- defrosted)
1 egg

Steps:

  • Peel the shallot/red onion and the garlic then place them in a food processor along with the parsley. Whizz until you have quite a finely chopped mixture.
  • Add in the lemon juice, butter, salt and pepper, then whizz well to combine. (If you forget to soften the butter then this will still work but you will need to leave it to whizz for a longer time.)
  • Use a spoon to roughly divide the butter into 4 pats and set aside.
  • Line a baking tray with cooking paper and pre-heat the oven to 200ºC/390ºF.
  • Take each chicken breast and cut off the thinner pointed end, to create a sort of square shape of chicken (see pictures in post) Refrigerate/freeze these pieces for another dish (I have a few suggestions above)
  • Lay a sheet of puff pastry out on the chopping board. I find it easiest if I keep it sat on the plastic/paper that is used to divide them.
  • Place a chicken square in the centre of the pastry. Spoon over a pat of the butter mixture and then gather up the pastry to enclose the chicken and create a pouch. Gently squeeze the pastry closed.
  • Carefully slide the chicken parcel onto a prepared baking sheet.
  • Repeat with the remaining chicken pieces.
  • Crack the egg into the bowl you used for the butter and whisk with a fork.
  • Brush the parcels with egg wash and then bake for 25-30 minutes until golden brown.

1 garlic clove, crushed
1 tablespoon fresh sage, chopped
2 tablespoons honey
1 1/2 teaspoons coarse grain mustard
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
4 chicken breast fillets, no skin
4 sage leaves
2 slices lemons, halved
aluminum foil

Steps:

  • Preheat oven to 190°C.
  • Mix together garlic, chopped sage, mustard, honey, lemon juice and soy sauce. Season with salt and pepper to taste.
  • Place each chicken breast on foil and drizzle with lemon mixture, top with a piece of sage, and piece of lemon.
  • Fold foil to enclose chicken and make parcels.
  • Place in a roasting pan and cook for 25 minutes or until cooked through.
  • Open chicken parcels, remove sage and lemon and serve, drizzled with sauce.

125g butter, softened
5 cloves garlic, crushed
6 plump, skinless chicken breasts
4tbsp plain flour
200g breadcrumbs, from sliced loaf

Steps:

  • Heat oven to Mark 6/200°C.
  • Mix together the butter with the garlic and parsley, season with salt, wrap in clingfilm and roll up tightly to make a long, thin sausage. Chill in the fridge.
  • With a sharp knife, make an incision in the plump side of each chicken breast, to a make a pocket. Slice the butter into 6 pieces and stuff into the pockets. Toss the chicken in the flour.
  • Mix the breadcrumbs and paprika with the thyme and season well. Dip each chicken breast first into the egg, then roll in the breadcrumbs until well coated. Secure each with a cocktail stick to keep the butter in as much as possible.
  • Heat the oil until hot - it's ready when a piece of bread turns golden after 30 secs. Fry the chicken in 2 batches for 1-2 mins on each side until golden, then transfer to a shallow roasting tin. Bake for 15-20 mins until cooked through. Remove cocktail sticks and drizzle with any escaped butter to serve.

olive oil flavored cooking spray (1 spray)
1 red onion, sliced
300 g ground chicken
2 teaspoons minced garlic
2 teaspoons minced ginger
1 red bell pepper, chopped
1 tablespoon Thai fish sauce
2 tablespoons sweet chili sauce (more if you like)
2 tablespoons chopped fresh cilantro
5 cups cooked long-grain rice
12 leaves iceberg lettuce

Steps:

  • Spray pan with oil and heat.
  • Cook onion until soft.
  • Add chicken mince, garlic and ginger. Cook until chicken is browned.
  • Add pepper, cook until soft.
  • Add fish sauce and sweet chilli sauce to taste.
  • Add cilantro.
  • Scoop one spoonful of rice and one spoonful of chicken mixture into a lettuce leaf. Parcel it up to eat with your hands. Yum-o!
  • Based on NataschAnn's helpful comments I have made some improvements to this recipe. Firstly, I have changed step 6 to read "cilantro" instead of "coriander". They are one in the same, in Australia we call it coriander, and that's what I had written in the ingredients section. However, the Zaar's automatic ingredient formatter changed my coriander to cilantro and confusion has ensued! That'll learn me -- Second, I have rewritten step 7 so it is clearer to understand. The original intent of this recipe is to keep the rice separate from the chicken mixture, but really it's up to you - feel free to combine them before spooning into the lettuce, like in Stormylee's pic (which is beautiful by the way, thank you Stormylee!). I hope this clears up any issues. Thanks again for the constructive criticism.

  • Preheat oven to 375*. Cut 4 sheets of foil, about 12 inches square. Place one breast on each, arrange a quarter of the vegetables on top. Prepare seasoning mixture: In a small bowl, whisk together the oil, basil, lemon juice, and salt and pepper until combined. Spoon about 1/4 of the seasoning mixture evenly over each chicken and vegetable mound. With the chicken and vegetable mound crosswise on the foil, fold the 2 sides over both ends of the chicken. Fold the nearest edge over the chicken; then fold the farthest edge toward you over the whole parcel so that the end folds underneath the parcel. Bake the parcels in a baking dish for 30-35 minutes. Unwrap each parcel and transfer the chicken and vegetables to a serving platter with the juices. This is good with a wild and white rice and sugar snap peas.

1 savoy cabbage or 1 Chinese cabbage
sea salt
2 garlic cloves, peeled
1 piece fresh ginger, peeled (thumb-sized)
6 spring onions, trimmed
1/4 cup fresh coriander
1 -2 fresh red chili pepper
1 tablespoon fish sauce
4 trimmed boneless skinless chicken thighs, roughly chopped
1 (8 ounce) can water chestnuts
2 limes, juice and zest of
1 teaspoon sesame oil
extra virgin olive oil
sweet chili sauce
soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • Remove and discard the core and outer leaves from the cabbage, undo the remaining cabbage leaves and place them in a pan of salted boiling water for 2 minutes to soften. Cool them in a bowl of cold water, drain and put to one side.
  • In a food processor, whizz up your garlic, ginger, spring onions, coriander, chilli and fish sauce with a good pinch of salt. Then add the chicken, water chestnuts, lime zest and juice and sesame oil and pulse until you have a minced meat consistency.
  • Place a heaped dessertspoonful of the flavoured mince on to one end of each cabbage leaf. Fold it up and tuck in the sides, then roll up. Rub a bamboo steamer, colander or normal steamer with a little olive oil and place in the cabbage parcels. They may try to unfold themselves, but once you start putting them next to each other they will hold in place. When they're all in, sit the steamer over a pan of boiling water, making sure the water doesn't touch the parcels and that it's just the steam that's cooking them. Put a lid on top and steam for about 6 minutes until cooked. If you're worried about the cooking time, take one of the parcels out and cut it in half to make sure that the heat has penetrated and that they're cooked.
