Nice breakfast or brunch treat. If you substitute table salt for the kosher salt, make sure to decrease the amount.

1 1/4 cups egg substitute or 5 large eggs
4 tablespoons freshly grated parmesan cheese
2 tablespoons skim milk
1/4 teaspoon freshly grated lemon zest
1/2 teaspoon kosher salt (or to taste)
fresh ground black pepper
1 tablespoon extra virgin olive oil
4 ounces medium asparagus spears, woody stems trimmed, cut into 1/2-inch pieces (about 8)
4 slices Canadian bacon, coarsely chopped (about 2 ounces)

Steps:

  • Position an oven rack in the upper part of the oven and preheat the broiler.
  • Whisk the eggs, 3 tablespoons of the cheese, the milk, lemon zest, salt, and pepper to taste together in a bowl.
  • Heat the olive oil in an 8-inch nonstick skillet over medium heat.
  • Add the asparagus and Canadian bacon, and cook until the asparagus is crisp-tender, about 4 minutes.
  • Reduce heat to low, pour the egg mixture into the skillet, stirring gently to distribute the fillings evenly.
  • Cover, and cook until the bottom sets, but does not get too brown, about 9 minutes.
  • Remove the cover, scatter the remaining 1 tablespoon of cheese over the surface.
  • Run the frittata under the broiler until the top sets and browns slightly, about 1 minute.
  • Set aside for about 5 minutes before unmolding.
  • Slip the frittata out of the pan onto a cutting board, cut into wedges.
  • Serve warm or room temperature.

1 ml red hot chili flakes
4 bacon, slices chopped
6 asparagus spears, cut into 1-inch pieces

Steps:

  • Whisk eggs with salt and hot red chili flakes in a bowl.
  • Cook bacon slices in a medium skillet over medium until crisp. Transfer to a plate. Discard fat, leaving 15 mL (1 tbsp) in pan.
  • Add asparagus spears and sauté until almost tender.
  • Pour egg mixture into pan and sprinkle with bacon. Reduce heat to low and cover with foil.

1/4 teaspoon freshly ground black pepper

12 ounces asparagus, trimmed, cut into 1/4 to 1/2-inch pieces
1 tomato, seeded, diced

3 ounces Fontina, diced

Steps:

  • Preheat the broiler. Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend. Set aside. Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat. Add the asparagus and saute until crisp-tender, about 2 minutes. Raise the heat to medium-high. Add the tomato and a pinch of salt and saute 2 minutes longer. Pour the egg mixture over the asparagus mixture and cook for a few minutes until the eggs start to set. Sprinkle with cheese. Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Place the skillet under the broiler. Broil until the top is set and golden brown on top, about 5 minutes. Let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate.

8 mushrooms, quartered
6 spears asparagus, chopped
Salt and freshly ground black pepper
12 large eggs
1/2 cup grated Monterey Jack
1/4 cup grated Parmesan
2 dashes hot sauce
2 tablespoons butter
1 medium onion, halved and sliced thin
1 cold baked potato, diced
1/4 cup chopped green olives with pimentos
2 jarred roasted red peppers, sliced thin
8 fresh basil leaves, chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Drizzle olive oil over the mushrooms and asparagus on a baking sheet, sprinkle with salt and pepper and roast until a nice color is achieved, about 12 minutes. Set aside.
  • Beat together the eggs with some salt and pepper in a bowl. (Do not over-beat; just mix until the eggs mostly come together.) Stir in the Monterey Jack, Parmesan and hot sauce and set aside.
  • In a large ovenproof nonstick skillet, melt the butter over medium-high heat. Add the onions and cook, stirring frequently, until soft and golden brown, several minutes. Add the diced potatoes, sprinkle with salt and pepper and stir to cook for a couple of minutes. Finally, add the asparagus, mushrooms, olives and roasted red peppers and cook, stirring, until everything is hot.
  • Make sure all the ingredients are evenly distributed across the bottom of the skillet, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for 30 to 45 seconds to set the edges, then put the skillet in the oven. Cook, watching it carefully, until the eggs are set but not very brown on top, 10 to 12 minutes.
  • Slide the frittata out of the skillet and onto a cutting board. Sprinkle on the basil and slice into wedges with a long serrated knife.

1/2 cup heavy cream

Steps:

  • Preheat the broiler. Melt the butter in a 9-inch cast-iron frying pan. Add the onions and saute until they are softened, about 5 minutes. Add the asparagus and cook until just softened, 2 minutes.
  • Whisk together the eggs, cream, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until smooth. Fold in the feta. Pour the egg mixture over the asparagus mixture and cook until almost set, 2 to 4 minutes. Transfer the skillet to the broiler and cook until golden brown on top, 8 to 10 minutes. DH and I have never eaten, let alone made, a Frittata. "Healthy Life Magazine: Greater Binghamton, NY's Source for Family Health" is a free quarterly found in doctors' offices, grocery stores, etc. The Spring, 2009 issue carried this recipe. DH and I decided to finally take the plunge and were quite pleased with the outcome/taste. He's more of a veggie human than me, but we both love cheese; so, this satisfied both of us.

2 tablespoons breadcrumbs, fine dry
1 lb thin asparagus
1 1/2 teaspoons extra virgin olive oil
1 cup onion, diced
1 red bell pepper, chopped
2 garlic cloves, minced
1/2 teaspoon salt, divided
1/2 cup water
fresh ground pepper, to taste
4 large eggs
2 large egg whites
1 cup part-skim ricotta cheese
1 tablespoon chopped fresh parsley
1/2 cup shredded gruyere cheese

Steps:

  • Preheat oven to 325 degrees. Coat a 10-inch pie pan w/cooking spray.
  • Sprinkle w/breadcrumbs, tapping out the excess.
  • Snap tough ends off asparagus.
  • Slice off the top 2 inches of the tips and reserve.
  • Cut the stalks into 1/2 inch slices.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add onions, bell pepper, garlic and 1/4 teaspoon salt; stir, cook until just softened.
  • Add water and the asparagus stalks to the skillet.
  • Cook, stirring until the asparagus is tender and the liquid has evaporated, about 5 minutes (the mixture should be very dry).
  • Season with salt and pepper.
  • Arrange the vegetables in an even layer in the prepared pan.
  • Whisk eggs and egg whites in a medium size bowl.
  • Add ricotta, parsley, 1/4 teaspoon salt and pepper; whisk to blend.
  • Pour the egg mixture over the vegetables, gently shaking the pan to distribute.
  • Scatter the reserved asparagus tips over the top; sprinkle with Gruyere.
  • Bake at 325 degrees for 35 minutes (until knife comes out clean).

1 large baking potato, peeled and thinly sliced
1 lb asparagus
4 large eggs
4 egg whites
1/2 cup nonfat milk
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup grated parmesan cheese, divided
1 onion, chopped

Steps:

  • Preheat oven to 350f.
  • Put potato in saucepan and cover with water by 3 inches. Cover pan and bring to boil over high heat; boil 5 minutes.
  • Add asparagus and boil an additional 2 minutes.
  • Drain and set aside to cool.
  • Combine whole eggs and egg whites, milk, salt, baking powder, and three tablespoons of the parmesan cheese in a bowl. Mix in the potato and asparagus.
