Creamy Garlic Chicken and Rice image

This yummy one pot garlic chicken and rice is a delicious family meal that's ready to serve in 30 minutes. Wonderfully creamy and simple to make, it's a great option for an easy weeknight meal.

1 pound boneless skinless chicken breasts (cut into bite size pieces)
4 cloves garlic (minced)
¾ teaspoon garlic salt
¼ teaspoon black pepper
1 cup white rice (uncooked)
3 cups chicken stock
2 cups fresh spinach
½ cup heavy cream
¼ cup parmesan cheese

Steps:

  • Season the chicken with the garlic salt and pepper.
  • Spray a large skillet with oil and cook the chicken over medium high heat for 5-7 minutes until brown.
  • Add the garlic and saute 1 minute more.
  • Add rice and chicken broth to the pan.
  • Heat to boiling and then cover; cook 12 to 15 minutes until most of the liquid is absorbed.
  • Add in the heavy cream and spinach, stir and replace cover and cook another 5-7 minutes.
  • Stir in the parmesan cheese and serve!

Vegetable cooking spray
1 ¼ pounds skinless, boneless chicken breast halves
2 cloves garlic, minced
1 ¾ cups Swanson® Chicken Broth or Swanson® Chicken Stock
¾ cup uncooked white rice
1 (16 ounce) package frozen vegetable combination (broccoli, cauliflower, carrots)
⅓ cup grated Parmesan cheese
Paprika

Steps:

  • Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and garlic and cook for 10 minutes or until the chicken is well browned on both sides. Remove the chicken from the skillet.
  • Stir the broth, rice and vegetables in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes. Stir in the cheese.
  • Return the chicken to the skillet. Sprinkle the chicken with the paprika. Cover and cook for 10 minutes or until the chicken is cooked through and the rice is tender.

1 1/2-2 lbs boneless chicken thighs, cut into 1-inch cubes (or boneless breast)
2 medium onions, diced (smaller or larger are ok)
2 tablespoons garlic powder (dollar store garlic powder works great! Fresh garlic does NOT)
1/3 cup margarine (Shed Spread works great! Butter does NOT...It burns!)
salt & pepper

Steps:

  • Add 1/2 of the margarine in a large frying pan over medium heat until melted. Add the diced onions and 1 tbls garlic powder to pan and cook until soft and clear. Add chicken cubes and remaining margarine and garlic powder. Continue to cook over medium heat until chicken is cooked through (about 10-15 minutes).
  • NOTE: Margarine and garlic powder amounts may be altered as desired.

1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup lemon juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon honey
2 teaspoons ground ginger
1 boneless skinless chicken breast half (5 ounces), cut into strips
1/2 cup chicken broth
1/2 cup uncooked instant rice
1 tablespoon chopped fresh parsley
1/2 teaspoon grated orange zest

Steps:

  • In a small bowl, combine the onion, garlic, lemon juice, soy sauce, honey and ginger. Pour half into a small resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Cover and refrigerate remaining marinade., In a small saucepan, bring chicken broth to a boil. Remove from the heat; stir in rice, parsley and orange zest. Cover and let stand for 5 minutes. Meanwhile, in small skillet, cook the chicken and reserved marinade until chicken is no longer pink. Serve with rice.

3 tablespoons plus 2 teaspoons low-sodium soy sauce
1 tablespoon toasted sesame oil
2 teaspoons sugar
2 teaspoons sambal oelek or other hot chili paste
7 cloves garlic (6 thinly sliced, 1 grated)
1 1/4 pounds thin-sliced chicken cutlets
3 tablespoons vegetable oil
1 tablespoon minced fresh ginger
4 cups roughly chopped green cabbage (about 1/2 small head)
Kosher salt
3 cups cooked long-grain white rice, cooled
4 scallions, thinly sliced

Steps:

  • Combine 3 tablespoons soy sauce, the sesame oil, sugar, sambal oelek and grated garlic in a shallow baking dish. Add the chicken and toss to coat; set aside while you fry the garlic and make the rice.
  • Meanwhile, heat 2 tablespoons vegetable oil in a large nonstick skillet over medium heat. Add the sliced garlic and cook, stirring, until golden and crisp, 2 to 3 minutes. Remove the garlic with a slotted spoon to a plate, leaving the oil in the skillet.
  • Add the ginger to the skillet and cook over medium heat, stirring, until sizzling, about 20 seconds. Add the cabbage and a big pinch of salt. Cook, tossing, until lightly browned, 3 to 5 minutes. Add the rice and 1/2 teaspoon salt and cook, tossing occasionally, until toasted, 3 to 5 minutes. Stir in the remaining 2 teaspoons soy sauce and all but 2 tablespoons scallions; season with salt.
  • Heat another large nonstick skillet over medium heat. Remove the chicken from the marinade, add 1 tablespoon water to the marinade and reserve. Season the chicken lightly with salt. Add the remaining 1 tablespoon vegetable oil and the chicken to the skillet. Cook until browned, about 3 minutes per side, adding the marinade to the skillet during the last 30 seconds of cooking and spooning it over the chicken.
  • Divide the rice and chicken among plates. Top with the fried garlic and reserved 2 tablespoons scallions.

1 tablespoon olive oil
1 (18 ounce) can progresso recipe starters cooking sauce (i used garlic)
1 (8 ounce) package cream cheese (room temp)
1 cup shredded cheddar cheese
2 teaspoons garlic powder
2 teaspoons onion powder
1 tablespoon cumin
1 cup rice
2 cups water

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease 9x13 baking dish.
  • Brown chicken breast in olive oil in skillet, season with 1 tsp garlic powder 1 tsp onion powder and 1 tbs cumin about 2 minutes each side.
  • While chicken browning mix 1 can progresso recipe starters, cream cheese, cheddar cheese 1 tsp onion powder and 1 tsp garlic powder in medium bowl.
  • Once chicken lightly browned add to 9x13 dish and cover with mixture and bake at 350 for 40-45 minutes.
  • While chicken in oven bring 2 cups water to boil then add 1 cup white rice simmer for 20-25 minutes until rice is tender and water is absorbed.

2 teaspoons reduced-calorie margarine
1 clove garlic, minced
1/2 cup frozen peas, thawed
2 teaspoons lemon juice
2 tablespoons white wine
parsley, minced
1/2 cup brown rice, cooked

Steps:

  • Melt the butter in a skillet and saute the garlic in it.
  • Add the chicken and all the other ingredients (except the rice,) cover and cook until done, about 5-10 minutes.

4 boneless skinless chicken breasts (about 1 pound)
1/4 teaspoon salt
1/4 teaspoon pepper
40 cloves garlic (cut any large cloves in half)
1 tablespoon oil
1/2 cup dry white wine or 1/2 cup chicken broth
1/2 cup chicken broth
1 tablespoon fresh lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano
4 teaspoons flour
2 tablespoons dry white wine or 2 tablespoons chicken broth

Steps:

  • Season chicken on both sides with salt and pepper to taste.
  • Brown chicken and garlic in hot oil in a large saute pan.
  • Add wine, broth, lemon juice, and spices.
  • Bring to a boil, then reduce heat, cover and simmer 6-8 minutes or until chicken is cooked through.
  • Remove chicken and garlic from pan and keep warm.
  • Mix together remaining wine with the flour and mix into the pan juices, stirring briskly.
  • Bring to a boil and cook until thickened.
  • Serve sauce with chicken and garlic.
  • Mashed potatoes or rice may be served, if desired.

225 g long grain rice
1 tablespoon stir-fry oil or 1 tablespoon vegetable oil
350 g chicken meat, stir-fry strips
1 bunch spring onion, trimmed and finely sliced
175 g mange-touts peas or 175 g sugar snap peas, trimmed and sliced
2 tablespoons chili-garlic sauce
salt & freshly ground black pepper
1 tablespoon chopped fresh chives, to garnish

Steps:

  • Put the rice on to cook in plenty of lightly salted boiling water. It will take about.
  • 12 minutes, so start cooking the stir-fry about 8 minutes before the rice is ready.
  • Heat the oil in a wok or large frying-pan and add the chicken strips. Stir-fry for about 3-4 minutes, then add spring onions and mange-tout peas or sugar snap peas. Stir-fry for another 2-3 minutes.
  • Add the chilli-garlic sauce and cook for a further minute. Season to taste with salt and pepper.
  • Drain the rice, divide between four warm bowls or plates and pile the chicken and vegetable mixture on top. Garnish with chives and serve at once.
  • Cook's note 1: Use a combination of white and wild rice for extra interest.
  • Cook's note 2: If you can't find chilli-garlic sauce, add a crushed garlic clove to the stir-fry and use ordinary chilli sauce instead.
