- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan.
- Spread dough with sauce, then sprinkle with garlic. Cover with cheese. On top of the pizza, arrange chicken, green pepper, onion and tomato.

I like to figure out restaurant recipes so I can make my favorites at home (we have a 20 month old girl need I say more!) This is a yummy version that makes great leftovers. Recipe #123659 makes two 9 by 13 deep dish pans or you can make 1 pizza and a small batch of breadsticks.

Steps:
- Make one batch homemade breadstick dough (this makes a yummy deep dish pizza) (recipe #123659). Spread dough out in 2 buttered 9 by 13 pans.
- Mix alfredo with minced garlic divide and spread evenly over both pans.
- Sauté chicken with garlic till lightly browned and spread over pizzas.
- Sprinkle pizzas with onions, tomatoes, and cheeses.
- Let rise 20 minutes.
- Bake in 350° oven till cheese is melted and bubbly and crust edges are golden brown (approx 25 minutes depending on oven).

- Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
- Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.

DEEP-DISH PIZZA

- Make the dough: Combine the flour, cornmeal, salt, yeast, olive oil, melted butter, vegetable oil and warm water in the bowl of a stand mixer fitted with the dough hook. Mix on medium speed until the dough comes together and pulls away from the side of the bowl but still sticks to the bottom, about 3 minutes. Reduce the mixer speed to low and knead 5 minutes. Transfer the dough to a lightly oiled bowl and turn to coat. Tightly cover with plastic wrap and let rise in a warm place, 1 hour.
- Meanwhile, make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is slightly softened, about 1 minute. Add the tomato puree and 1 cup water. Stir in the oregano and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until slightly thickened, about 8 minutes.
- Preheat the oven to 425 degrees F. Generously brush two 9 1/2-inch round deep-dish pizza pans (or 9-inch cake pans) with about 3 tablespoons olive oil each. Divide the dough in half; press each half into the bottom of a pan. Let the dough rest, 15 minutes. Push the dough down and press it up the sides of the pans with your fingers. Layer the cheese on top of each crust and spread each with 1 1/2 cups sauce.
- Bake the pizzas until the crust is dark golden brown and the cheese is bubbling, 40 to 45 minutes (it will still be jiggly in the center). Sprinkle with parmesan (if using); let cool 15 minutes. Transfer to a cutting board and cut into wedges.
- You can freeze the baked pizza for up to a month. Let it cool, then tightly wrap in plastic and foil. To reheat, unwrap and bake at 325 degrees F until hot and bubbling, 50 to 60 minutes.

CHICKEN PARM PIZZA

- Preheat oven to 425 degrees F.
- Coat hands and work surface with a little cornmeal or flour. Using your hand or a rolling pin, form a 14-inch round pizza. Place pizza on a baking sheet or pizza stone and poke the top with a few holes. Drizzle a little bit of extra-virgin olive oil down over the dough and place in oven. Bake 10 minutes.
- Meanwhile, heat a deep skillet over medium-high heat with 2 tablespoons of extra-virgin olive oil. Add meat and break it up with a wooden spoon. To browned meat, add garlic and onions, then season with salt and pepper. Cook together 5 to 6 minutes then add parsley, red pepper flakes, oregano and the tomatoes to the pan. Heat the sauce through.
- Remove pizza from oven after 10 minutes and top with sauce and cheeses. Return to oven and bake until golden and bubbly, another 10 to12 minutes. Top the pizza with basil, cut and serve.

I got this recipe from Jeff Smith, The Frugal Gourmet back in 1987. He made this recipe and ran it by Pizzeria Uno in Chicago and they smiled and nodded "It's almost as good as ours." This is easy, no roll recipe.

- In the bowl of your electric mixer- KitchenAid is perfect for this- dissolve the yeast in the water.
- Add the oils, cornmeal, and 3 cups of the flour.
- Beat for 10 minutes with the mixer.
- Add the dough hook and mix in the additional 2½ cups flour.
- Knead for several minutes with the machine.
- It is hard to do this by hand since the dough is very rich and moist.
- Pour out the dough on a plastic countertop and cover with a very large metal bowl.
- Allow to rise double in bulk.
- Punch down and allow to rise again.
- Punch down a second time and you are ready to make your pizza.
- Oil round cake pans or deep dish pizza pan.
- Put a bit of dough in each and push it out to the edges, using your fingers.
- Put in enough dough so that you can run the crust right up the side of the pan.
- Try to make it approximately 1/8" thick throughout the pan.
- The filling for 9 or 10 inch pan:.
- Place the cheese in tilelike layers on the bottom of the pie.
- Next put in the tomatoes and the basil, oregano, garlic and salt- reserve the Parmesan cheese for the top.
- Drizzle the olive oil over the top of the pie and bake.
- Additional variations: BEFORE you put on the Parmesan cheese and olive oil drizzle you might like to add any or all of the following:.
- Italian Sausage- hot or mild.
- Yellow Onions- peeled and sliced or diced.
- Pepperoni- sliced thin.
- Mushrooms- sliced.
- Green Sweet Bell Peppers- cored and sliced thin.
- Sliced Black Olives.
- Very Thinly Sliced Ham or Canadian Bacon.
- Put any or all of these on your pie and then top with the Parmesan and the olive oil.
- Bake the pie in 475º oven until the top is golden and gooey and the crust a light golden brown.
- This should take about 35-40 minutes.
DEEP DISH PIZZA RECIPE BY TASTY

- For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.

- Lay slices of mozzarella across the dough, covering the entire bottom.

- Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
- Garnish with parmesan, cut and serve.

- Pour water into the bowl of a stand mixer fitted with a paddle attachment. Sprinkle in yeast and let dissolve, about 10 minutes. THE REAL CHICAGO DEEP DISH PIZZA DOUGH
I have it on good authority that this is the real deep dish pizza dough that's used in Chicago. The real thing is nothing like bread, or even pizza, dough. It is a buttery, flaky crust that is achieved by: 1) using corn oil (not butter) and 2) minimal mixing and kneading times. The pizza itself is built with cheese, toppings, and sauce, in that order. I suggest you use 6-in-1® tomatoes which are far superior to other brands. Classico® ground tomatoes are very similar. Contrary to popular opinion, cornmeal is not used in the dough by Chicago pizzerias.

- In a measuring cup or small bowl, dissolve sugar and yeast in water.
- Combine flour, parmesan and salt in a large bowl and make a well in the center.
- Pour yeast mixture and oil in well and stir into dry ingredients until dough forms; let rise 5 minutes.

- For the dough: In a sm bowl, dissolve yeast in warm water.
- In a separate bowl combine flour and salt.
- Add yeast mixture and oil and mix thoroughly until dough forms in a ball.
- Place dough ona well-floured board and kneed until smooth; about ten min.
- Dust a lg bowl lightly w/ flour and place dough in it.
- Cover w/ plastic wrap.
- Let dough rise for about an hr.
- or until doubled in size.
- (You may try putting the dough into a warmed oven. If you do this, make sure that the oven is warm and turned off when you put the dough in. Also make sure that you put a little oil in the bowl and roll the dough around in it to prevent it from getting har) Once doubled, punch the dough down and w/ a rolling pin, roll out until about one inch thick.
- Place the dough in well greased pie pan and fold the edges over.
- (Or you can cook the it like a regular pizza. I've tried both ways and both have been equally good) For the pizza: Marinate the chicken in the Italian seasonings as the directions on the packet tell you to.
- (or use your own Italian marinade) Cook the chicken (I use my George Foreman Grill) until no longer pink.
- Cut the chicken into strips or chuncks.
- Spread the pizza sauce on the dough and then cover with enough mozz.
- cheese.
- Next add the feta cheese; as much as you feel comfortable with.
- Top with the chicken pieces and sprinkle with a little parm.
- cheese and dried Italian seasoning (opt.) Pop into the oven at about 400 degrees for around 20-25 min.
- Check periodically for doneness.
- Enjoy!

- Position oven rack on the 2nd-lowest level in the oven and place a baking stone on the rack; preheat oven to 500°.
- Brush a 14-inch deep-dish pizza pan with ½ tablespoon olive oil.
