1/2 cup coarsely chopped sun-dried tomatoes (not packed in oil)
1 cup boiling water
3 tablespoons butter
1 large onion, thinly sliced
2 garlic cloves, minced
2 tablespoons all-purpose flour
2-1/4 cups chicken broth
1 cup half-and-half cream
3 cups coarsely chopped fresh spinach
2 cups cubed cooked chicken breast
1/4 teaspoon salt
1/8 teaspoon pepper
Thinly sliced fresh basil

Steps:

  • Cook mostaccioli according to package directions for al dente. Meanwhile, in a small bowl, combine tomatoes and boiling water; let stand 5 minutes. Drain., In a Dutch oven, heat butter over medium heat. Add onion and garlic; cook and stir 4-5 minutes or until tender. Stir in flour until blended; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Stir in spinach, chicken, drained tomatoes, salt and pepper., Drain mostaccioli; add to the pan. Cook until heated through and spinach is wilted, stirring occasionally. Sprinkle with basil.

1 pound lean ground beef
1 large onion (diced)
3 cloves garlic (minced)
28 ounces marinara sauce
14 ounces diced tomatoes (undrained)
½ cup water
1 ½ teaspoons Italian seasoning
1 teaspoon sugar
1 cup heavy cream
2 cups mozzarella cheese (shredded)
¼ cup parmesan cheese (shredded)

Steps:

  • Preheat oven to 375°F. Grease a 9x13 pan.
  • Cook pasta according to package directions in salted water until al dente. Do not overcook.
  • Meanwhile, in a large saucepan brown ground beef, onion, and garlic until no pink remains. Drain any fat.
  • Stir in marinara sauce, diced tomatoes, water, Italian seasoning, and sugar. Simmer 5 minutes. Stir in heavy cream and simmer an additional 5 minutes or until thickened.
  • Spread 1 cup of sauce in the bottom of the prepared pan. Add half of the cooked pasta and top with half of the remaining sauce.
  • Add remaining pasta, top with remaining sauce and cheeses.
  • Bake 25-30 minutes or until hot and the cheese is lightly browned.

1/2 cup chopped celery
1 tablespoon butter
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained

Steps:

  • In a large saucepan, saute onion and celery in butter until tender. Stir in the soups, milk, mushrooms, pimientos, olives, Worcestershire sauce and seasonings. Add the chicken, mostaccioli, 3/4 cup cheddar cheese and the Swiss cheese; toss to mix. , Pour into a greased 13x9-in. baking dish. Cover and bake at 350° for 40 minutes. Uncover; sprinkle with remaining cheddar cheese and bake 15-20 minutes longer or until bubbly and cheese is melted. Freeze option: Cool unbaked casserole; cover and freeze. 1 small yellow onion, finely chopped

2 tablespoons tomato paste
1/2 teaspoon dried oregano, plus 1/4 teaspoon more for the ricotta

One 28-ounce can crushed tomatoes, preferably San Marzano
3 sprigs fresh parsley, plus more finely chopped parsley leaves for serving (about 1 tablespoon)
1 pound mostaccioli
One 15-ounce container whole-milk ricotta
1 large egg

Steps:

  • Heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion, a good pinch of salt and several grinds of black pepper. Cook, stirring occasionally, until the onion is tender and translucent, about 5 minutes. Add the ground beef and sausage; cook, breaking up the meat with a wooden spoon, until crumbled, golden brown and no longer pink, about 8 minutes.   • Meanwhile, stir together the ricotta, 1/4 cup of the Pecorino Romano, the egg, remaining 1/4 teaspoon oregano, pinch of salt and a couple grinds of black pepper in a medium bowl until smooth and combined; set aside.
  • Preheat the oven to 350 degrees F and lightly grease the bottom and sides of a 9-by-13-inch baking dish with olive oil. Once the meat sauce is finished cooking, remove the parsley sprigs and discard. Stir in the al dente mostaccioli until well coated.
  • Transfer half of the pasta and sauce to the prepared baking dish, then spread the ricotta mixture on top in an even layer with a rubber spatula or small offset spatula. Top with the remaining pasta and sauce, followed by the mozzarella, then the remaining 3 tablespoons Pecorino Romano.
  • Cover the baking dish with foil and bake until heated through, about 20 minutes. Remove the foil and bake until the cheese is completely melted and the sauce is bubbling at the edges, 10 to 15 minutes more. Sprinkle with chopped parsley. Let rest for about 5 minutes before serving.

1 tbsp olive oil, for frying
200g cooked chicken, torn into pieces
2 garlic cloves, thinly sliced
1 chicken stock cube
160g dried short pasta
100g frozen peas
200g long-stem broccoli, cut into 3-4 pieces
150g crème fraîche
1 lemon, juiced
30g parmesan, grated, plus extra to serve
small bunch fresh mint, leaves picked

Steps:

  • Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. Pour in 900ml boiling water, then add the stock cube and pasta along with some seasoning. Bring to the boil, then cover and simmer for 8 mins.
  • Stir in the peas and broccoli for the last 4 mins of cooking time, and replace the lid. You might need to increase the heat slightly to get the temperature back up to a simmer. Add a splash more water if the pasta is looking dry. After 4 mins, remove the lid and reduce the heat to low, then stir in the crème fraîche. Taste for seasoning. Remove the pan from the heat and stir through the lemon juice, parmesan and mint leaves. Finish with some extra parmesan, if you like.

375 g pasta (I use shells, penne or rigatoni)
2 chicken breasts, diced
1 medium onion, sliced
200 -250 g mushrooms, sliced
1/4 teaspoon ground chili powder
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 cup of liquid chicken stock
300 ml thickened cream
2 teaspoons coarse grain mustard
olive oil
shaved parmesan cheese

Steps:

  • Cook pasta until cooked, drain and return to the pan.
  • In a large frypan, add olive oil and fry the onion until translucent, add chicken, chilli, basil and oregano and cook until browned. Remove from pan.
  • In the same pan add mushrooms and cook until tender.
  • Add chicken stock, cream and mustard and return the chicken and onion mixture to the pan.
  • Bring to boil. Bring to boil, reduce heat and simmer until chicken is cooked through and the sauce is thickening.
  • Add the chicken sauce to the pasta and fold through.
  • Top with shaved parmesan cheese.

Yummy pasta -- It makes a lot (2 9x13 pans) but could be easily halved. Everyone in my office is RAVING about this this week, and it's great b/c it can be adjusted to your own liking.

2 (16 ounce) boxes penne pasta
2 tablespoons butter
3 tablespoons minced garlic
2 quarts heavy whipping cream
2 cups shredded parmesan cheese
1 lb mild Italian sausage
2 red bell peppers
25 -30 sliced mushrooms
15 roma tomatoes
fresh basil
diced garlic
olive oil

Steps:

  • Cook both boxes of noodles until they are semi done.
  • Drain and set aside, but do not rinse.
  • Melt 1 Tbsp butter in a saucepot.
  • Add minced garlic (more or less if desired).
  • Slowly add heavy whipping cream to melted butter and garlic mixture.
  • Bring sauce to a slow simmer, then add 2 cups shredded Parmesan cheese.
  • Stir until melted.
  • Let sauce simmer on low.
  • Break into pieces and brown Italian sausage.
  • Add 2 thinly sliced peppers to meat mixture.
  • When both are fully cooked, dump them into the sauce.
  • Saute sliced mushrooms in 1 Tbsp butter seasoned with salt and pepper.
  • When cooked, add to sauce.
  • Place tomatoes in a food processor and process until blended with chunks.
  • Add fresh basil to taste (don't be stingy - a lot is better).
  • Add diced garlic to taste.
  • Add olive oil.
  • Don't be afraid to start small and add more basil, garlic and oil as you go.
  • This tomato mixture can be made a day early; let set in refrigerator overnight.
  • Add this dish to the sauce.
  • Bring the huge pot to a boil, let it simmer just a minute or two.
  • Take the penne noodles and divide them into the two 9x13-inch pans, spreading them out evenly.
  • Divide sauce into each pan filled with the noodles and mix it with the noodles.
  • Sprinkle Parmesan cheese over the top of both pans.
  • Bake, uncovered, at 350 degrees for 20 to 25 minutes.

2 tsp olive oil
1 garlic clove, crushed
75g baby spinach leaves
250g soft cheese
25g parmesan
4 cooked chicken breasts (about 450g), shredded with a fork
100g frozen peas
small bunch of parsley or basil, chopped

Steps:

  • Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
  • Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.

  • In another large pot, brown sausage over medium heat, crumbling with a spoon as it cooks, until no longer pink; Remove sausage to paper towel lined plate and set aside.
