A meatless winner from Betty Crocker. Fast, easy and even my non-green-vegetable eaters shovel this in! Bonus: Low calorie! (Up the cayenne if you want it hotter, or just pass hot sauce at the table.) I also like to toss in some toasted almonds.

1 cup cold cooked white rice
1 cup frozen corn
1 1/2 teaspoons dried thyme
1/2 teaspoon garlic salt
1/8 teaspoon cayenne pepper
1 (15 ounce) can black-eyed peas, rinsed and drained
2 cups lightly packed spinach leaves

Steps:

  • Spray 12" nonstick skillet with nonstick cooking spray; heat over med-high heat.
  • Cook all ingredients except spinach in skillet, stirring occasionally until hot.
  • Stir in spinach; cook until spinach begins to wilt.
  • Serve immediately (just bring the skillet to the table and watch it go.).

1/3 cup ketchup
3 tablespoons reduced sodium soy sauce
2 tablespoons packed brown sugar
1 tablespoon white vinegar
4 teaspoons cornstarch
1 (20 ounce) can pineapple chunks in juice, undrained
8 ounces fresh snow pea pods, , 2 cups (, 2 cups)
2 plum tomatoes, cut into wedges
2 teaspoons vegetable oil
2 cloves garlic, pressed
12 ounces frozen, cooked medium shrimp, thawed,rinsed and tails removed
hot cooked rice

Steps:

  • In small bowl, combine ketsup, soy sauce, brown sugar, vinegar and cornstarch; whisk until blended.
  • Drain pineapple in small colander, reserving juices in small bowl.
  • Measure 1/2 cup reserved pineapple juice; add to ketsup mixture and set aside.
  • (Discard any remaining juice.) Trim pea pods and cut diagonally in half.
  • Cut tomatoes into wedges.
  • Heat oil in stir-fry skillet over medium-high heat until hot.
  • Add pea pods and pressed garlic to skillet.
  • Stir fry for 1 minute.
  • Reduce heat to medium.
  • Stir ketsup mixture, and add to skillet.
  • Bring to a boil.
  • Cook and stir 1 minute until thickened.
  • Add pineapple and shrimp to skillet; toss and heat thoroughly.
  • Remove from heat.
  • Gently stir in tomato.
  • Serve over rice.

This recipe was shared with me by a friend from South Africa. I'm usually not a lover of curry but this was so good!

Number Of Ingredients 10

1/2 cup canola oil
1 large onion, finely chopped
2 cloves garlic, minced
2 (15 ounce) cans diced tomatoes
1 tablespoon black pepper
1 teaspoon curry powder
1 teaspoon nutmeg
1/2 lb cooked chicken or 1/2 lb cooked pork
1 1/2 cups jasmine rice
1 cup water

Steps:

  • Over medium high heat, pour canola oil in a large, heated saute pan.
  • Add onion and garlic and saute until light brown.
  • Add pepper and then tomatoes.
  • Cook for 5 minutes, stirring frequently.
  • Lower heat to medium.
  • Add meat, curry and nutmeg and cook for 15 minutes.
  • Add 1 cup water and then rice; stir and cover.
  • Cook at medium heat for 40-50 minutes or until rice is tender.
  • IMPORTANT: ADD WATER AS NEEDED TO KEEP RICE FROM STICKING TO PAN.
  • Serve as is or with tortillas.

1 envelope fajita seasoning mix (1 -1 1/2 ounces)
1/2 cup water
2 tablespoons cooking oil
12 ounces chicken (cut into strips)
1 medium green pepper
1 small zucchini (biased sliced)
1/2 onion, chopped
2/3 cup salsa
1 teaspoon chili powder
1/2 cup frozen whole kernel corn
1/2 cup cooked black beans
8 flour tortillas
1/2 cup reduced-fat Mexican cheese blend or 1/2 cup colby-monterey jack cheese

Steps:

  • Make marinade---------------.
  • Mix fajita mix, oil and water.
  • Add chicken to marinade.
  • Let stand for 15 minutes.
  • Spray a large skillet with non stick cooking spray and heat on medium heat.
  • Add green pepper, zuchini, and onion.
  • Sautee until crisp tender.
  • Set vegetables aside.
  • Drain chicken and discard marinade.
  • Cook chicken in skillet for@ 4-5 minutes.
  • Add vegetables to skillet, and add salsa and chili powder and stir together.
  • Add corn and beans to skillet and cook for@ 1-2 more minutes or until heated through.
  • Microwave tortillas for 30 seconds to heat.
  • Cover them prior to microwaving.
  • Serve mixture on warm tortillas and top with cheese.

  • Season the chicken with salt and pepper. In a large skillet, heat the oil over medium high heat. Add the chicken to the skillet and brown for 3 to 5 minutes or just until cooked through. Remove the chicken from the skillet with a slotted spoon allowing the grease to remain in the skillet. Set the chicken aside.
  • Add additional oil if necessary then add the broccoli, carrot, bell pepper, onion, and mushrooms. Cook about 5 minutes, stirring occasionally, until the vegetables are tender to your liking. Add the garlic and cook for 1 minute. Add the chicken back to the skillet.
  • In a small bowl, whisk together the chicken broth, ginger, soy sauce, rice vinegar, chili garlic sauce, and cornstarch. Pour the sauce in the skillet and bring to a boil, stirring frequently. Reduce the heat to a simmer and allow the sauce to thicken. Add the cooked rice noodles to the skillet and mix together.
