Cheese Tortellini in Garlic Butter Sauce image

An easy, delicious recipe for Cheese Tortellini in a simple garlic butter sauce with basil. Keep it warm in a crockpot for a party appetizer, or serve up in a big bowl for a comforting weeknight meal in 15 minutes or less.

32 ounces chicken broth (or vegetable broth, divided (see note 1))
2 tablespoons cornstarch ((see note 2))
1 (16 ounce) package frozen cheese tortellini ((see note 3))
4 tablespoons butter ((see note 4))
2 cloves garlic (minced)
2 teaspoons dried basil
1/4 cup Parmesan cheese (for garnish)
Fresh basil (chiffonade, for garnish, optional)

Steps:

  • In a large pot, bring 2 1/2 cups broth to a boil. Add cheese tortellini. Return to a boil and cook until the tortellini float to the top of the water, about 3 minutes. The internal temperature of a tortellini should be 165ºF. Drain completely.
  • Meanwhile, whisk together remaining 1 1/2 cups broth with corn starch. In a large non-stick skillet, melt butter over medium-high heat until foaming. Stir in garlic and basil and cook 2 minutes.
  • Add broth-cornstarch mixture and bring to a boil; simmer until the mixture thickens, about 2 minutes longer. Add the cooked tortellini to the skillet and toss to coat.
  • Pour into a serving dish and garnish with Parmesan cheese and fresh basil, if desired.

1 ¼ pounds cheese tortellini
1 (16 ounce) can diced tomatoes, drained
1 cup chopped fresh parsley, divided
5 tablespoons grated Parmesan cheese, divided
1 ½ tablespoons dried basil
¼ teaspoon ground black pepper
1 cube chicken bouillon
¼ cup olive oil
2 cloves garlic, minced
¼ teaspoon kosher salt
1 cup heavy cream

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 3 to 5 minutes. Drain and keep warm.
  • Blend tomatoes, 1/4 cup parsley, 4 tablespoons Parmesan cheese, basil, pepper, and bouillon in a food processor until smooth. Set aside.
  • Heat olive oil in a large saucepan over medium heat. Cook and stir garlic until softened and fragrant, about 1 minute. Pour in tomato-basil blend. Add salt; reduce heat to medium-low and let simmer 5 minutes. Pour in heavy cream; bring to a slow boil over medium-high heat. Reduce heat and let sauce simmer until thickened, 10 to 15 minutes.

This is a great soup that you can throw together on a night when you don't really feel like cooking. You can leave out the tomatoes if you want and you can also substitute the fresh basil for a little bit of dried basil to taste. I imagine you could add some cooked chicken too if you wanted. 1 cup chicken broth
14 1/2 ounces petite diced tomatoes
1 cup heavy whipping cream
2 1/2 tablespoons dried basil leaves
3 tablespoons minced garlic
1 tablespoon vegetable oil
1/4 cup sweet unsalted butter
9 -10 ounces cheese tortellini

Steps:

  • Sauté minced garlic in vegetable oil until slightly browned and fragrant.
  • Combine garlic with tomato juice, chicken broth, and petite diced tomatoes in a sauce pan and bring to a boil. Let simmer for 15-20 minutes.
  • Add cheese tortellini and basil leaves, then simmer for 5-10 minutes.

1 tablespoon olive oil
1 medium yellow onion, finely diced
4 garlic cloves, minced
2 tablespoon tomato paste
28 ounce can whole San Marzano tomatoes
4 cups reduced sodium chicken broth
1 teaspoon granulated sugar
3 cups cooked shredded chicken
1 wedge fresh parmesan cheese
9 ounce package refrigerated cheese tortellini
½ cup fresh basil, sliced into ribbons, plus more for garnish
1 teaspoon fresh or dried oregano
½ cup heavy cream
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper

Steps:

  • Heat a dutch oven or large soup pot over medium heat, add olive oil, yellow onion, and a pinch of salt.
  • Cook until onions are translucent, about 4 minutes. If onions begin to brown, add a splash of chicken broth to cool the pot.
  • Add in tomato paste and garlic, cook for 1 minute.
  • Slice the rind off the end of the parmesan cheese wedge, save the rest for serving.
  • Add the tomatoes to the pot and mash with a potato masher or spoon.
  • Add broth, sugar, chicken, and parmesan cheese rind to the pot, reduce to low and simmer for about 15 minutes.
  • Add refrigerated tortellini, oregano and basil, and simmer until tortellini have puffed up and just cooked through, about 5 minutes.
  • Turn off heat. Stir in heavy cream, taste for seasoning and add salt and pepper.
  • Serve with freshly grated parmesan cheese, more fresh basil, and crusty bread.
