This Chocolate and Vanilla Marbled Quick Bread is great on its own - not too sweet, and great for breakfast toasted with a bit of butter.

2 ounces Semisweet Chocolate
3 Tablespoons Milk
1 cup All-Purpose Flour
2 teaspoons Baking Powder
¼ teaspoon Salt
5 Tablespoons Butter, softened
½ cup Sugar
1 large Egg
3 Tablespoons Sour Cream
½ teaspoon Vanilla Extract

Steps:

  • Preheat the oven to 325 degrees. Grease two mini loaf pans.
  • Combine the chocolate and milk in a small bowl over a simmering pan of water and heat, whisking continuously, until smooth. Set aside to cool to room temperature.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and sour cream until smooth. Pour the butter-sugar mixture over the dry ingredients and fold together just until evenly combined.
  • Divide the batter in half. Add the melted chocolate to half and the vanilla to the other half.
  • Pour the vanilla batter into the prepared pans. Pour the chocolate batter over the top. Gently swirl the batters together with a a knife to achieve a marbled effect.
  • Bake for 30-35 minutes or until the surface of the bread is firm and a toothpick inserted into the center comes out with just a crumb or two.
  • Cool the bread in the baking pan for 10 minutes before turning it out and allowing it to finish cooling.

4 cups flour
2 ¼ teaspoons yeast
1 cup whole milk, warm to the touch
1 teaspoon salt
1 ½ teaspoons vanilla
¼ cup sugar
¼ cup honey
1 egg
2 egg yolks
10 tablespoons butter, softened
12 oz bittersweet chocolate
¾ cup butter
½ cup sugar
¼ cup cocoa powder
1 tablespoon ground cinnamon
2 tablespoons espresso powder
½ cup turbinado sugar
1 egg wash

Steps:

  • Combine the yeast and warm milk and let sit until foamy, about 5 minutes.
  • In large mixing bowl, add the egg, egg yolks, vanilla, sugar, and honey and whisk to combine.
  • Add in the milk and yeast mixture and whisk until fully incorporated.
  • Gradually add in the flour and mix until fully incorporated.
  • Gradually add in the butter and mix until fully incorporated.
  • Cover with a towel and let rest for 30 minutes.
  • Bring out the dough onto floured work surface and knead until smooth.
  • Divide the dough into two equal parts and place in bowls and cover each with plastic wrap. Let the dough sit at room temperature for at least two hours, or when it has doubled in size.
  • Preheat oven to 375˚F (190˚C).
  • For the chocolate sauce, combine bittersweet chocolate, butter, sugar, cocoa powder, cinnamon, espresso powder, and turbinado sugar in a medium sized mixing bowl and microwave for 1-2 minutes. Stir to combine and set aside.
  • Once the dough has doubled in size, transfer to a floured work surface and roll both pieces of dough into a rectangle roughly 10x15-inches.
  • Cover the dough with half of the chocolate sauce leaving an ½ inch - 1 inch of room on all sides.
  • Gently roll the dough up and repeat with second piece of dough and remaining chocolate sauce.
  • Using a bench scraper or a knife, carefully cut each log vertically in half making sure the seam is side down.
  • Lay one piece of dough horizontally and lay another piece over it vertically so you have a rough 'plus sign'.
  • Lay another piece horizontally over the vertical piece and above the other horizontal piece.
  • Lay the final piece vertically on the right of the other vertical piece having it go over the top horizontal piece but weaving it under the lower horizontal piece.
  • Starting with the bottom vertical piece on the right side, bring it to the left layering it over the other vertical lower piece.
  • Follow this method around the dough clockwise.
  • Once returned to the bottom lower vertical pieces. Take the original piece you crossed over (the lower left vertical piece) and cross that over to the right layering it over the last piece you used. Continue this counterclockwise until back at the bottom or you are unable to layer the dough anymore.
  • Tuck in the excess pieces of dough under the bread.
  • Transfer the bread into a parchment paper-lined baking sheet and brush with egg wash.
  • Bake for 35-45 minutes, until lightly browned and cooked through.

4 cups flour
2 (1/4 ounce) packages yeast, quick rise
1 cup milk
1/3 cup sugar
6 tablespoons butter
1 teaspoon salt
2 eggs
1 (6 ounce) package English toffee bits (1 cup) or 4 finely chopped Heath candy bars (1 cup)
1 1/2 cups powdered sugar, sifted
1 tablespoon water
1/2 teaspoon vanilla

Steps:

  • In a large mixing bowl combine 1 1/2 cups of the flour to yeast.
  • In a sauce pan heat and stir the milk, sugar, butter and salt until warm (120 to 130) and butter almost melts. Add to flour mixture; mix well. Add eggs.
  • Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high for 3 minute.
  • Using spoon, stir in as much of the remaining flour as you can.
  • Turn out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 min).
  • Divide dough into 2 equal portions. Roll out both portions of dough separately to form two 14x10-inch rectangles.
  • Reserve 2 tablespoons of the Heath Bits. Sprinkle remaining over dough rectangles.
  • Starting from short side, roll up each one. Seal seams and edges. Line a baking sheet with foil, grease the foil. Transfer loaves to prepared baking sheet. Cover let rise until nearly double (25 to 30 min.).
  • Bake at 375 for about 20 minute or until done. Remove to wire racks to cool.
  • For icing; combine powdered sugar, water and vanilla. Spread over cooled loaves and sprinkle with reserved Heath Bits.

  • In a separate bowl, stir together the egg whites, oil, buttermilk, and vanilla.

Indulgent buttery brioche gets a Neapolitan treatment. We divided the dough into three portions and kneaded in the flavors of strawberry, vanilla and chocolate, then stacked and rolled the portions to create a mesmerizing swirl with a trio of flavors in every bite. Enjoy it as is or with a slather of strawberry jam, or use it to make a delightfully different bread pudding.

Number Of Ingredients 11

2 3/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
2 tablespoons sugar
2 1/2 teaspoons kosher salt
1 1/4 teaspoons active dry yeast (about half of a 1/4-ounce package)
1/2 cup whole milk
4 large eggs
1 1/4 sticks (10 tablespoons) unsalted butter, cubed and at room temperature, plus more for the loaf pan and plastic wrap
One 1.2-ounce bag freeze-dried strawberries
2 tablespoons unsweetened dark cocoa powder
2 teaspoons vanilla bean paste
Pink gel food coloring, for the strawberry dough

Steps:

  • Place the flour, sugar, salt and yeast in the bowl of a stand mixer fitted with the dough hook and mix on low speed to combine. Add the milk and 3 of the eggs and mix on low speed until well combined. Increase the speed to medium high and mix until the dough starts to pull away from the sides of the bowl, about 5 minutes.
  • Reduce the speed to medium and start adding the butter a little at a time, waiting until completely incorporated before adding more and beating for 7 to 10 minutes total. Increase the mixer to medium high and continue to mix until the dough is glossy and slightly tacky but not sticky, 7 to 10 minutes more.
  • Meanwhile, bring 1/4 cup water to a boil. Put the dried strawberries in a spice grinder or mini chopper and pulse until finely ground (you should have a scant 1/2 cup). Add the strawberry powder and 7 teaspoons of boiling water to a small bowl and stir until combined into a paste (the texture should be like thick, sticky peanut butter).
  • Add the cocoa powder and 5 teaspoons of boiling water to another small bowl and stir until combined.
  • Divide the dough into 3 pieces. Add one portion of the dough back to the bowl of the stand mixer along with the vanilla bean paste. Knead with the dough hook on medium speed until combined and the dough is still tacky but not sticky, 3 to 5 minutes. Transfer to a small bowl.
  • Add another portion of the dough to the mixer bowl along with the strawberry paste and a few drops of the food coloring. Knead on medium speed, adding more food coloring as needed to get the desired shade, until combined and the dough is still tacky but not sticky, about 7 minutes. Transfer to a separate small bowl. Wipe the mixer bowl and dough hook clean.
  • Add the last portion of dough to the mixer bowl along with the chocolate paste. Knead on medium speed until combined and the dough is still tacky but not sticky, about 6 minutes. Transfer to a third small bowl.
  • Cover each bowl of dough with plastic wrap and allow the dough to rest in the refrigerator for at least 8 hours and up to 12 hours.
  • To assemble, individually roll out the 3 pieces of chilled dough on separate sheets of parchment, dusting with flour as needed, into three 9-by-5-inch rectangles. Stack the pieces on top of each other with the chocolate dough on the bottom, vanilla in the middle and strawberry on the top.
  • Roll out the stack of dough into a 17-by-8-inch rectangle, flipping the stack over now and then to keep the layers even and making sure to square off the ends (this will ensure that all the layers stick and bake together). With the chocolate layer on the bottom and starting from a shorter end, start rolling the dough into a tight spiral, like a jelly roll cake.
  • Generously butter a 9-by-5-inch nonstick loaf pan and place the rolled dough inside, seam-side down. Generously butter a piece of plastic wrap large enough to cover the pan and place it butter-side down loosely over the pan. Let the dough rise in a warm place until it reaches 1 inch above the rim of the pan, about 3 hours.
  • Position an oven rack in the middle of the oven and preheat to 350 degrees F.
  • Beat the remaining 1 egg with 1 tablespoon water in a small bowl. Brush the top of the loaf with the egg wash. Bake, rotating the pan halfway through, until the loaf is golden brown and an instant-read thermometer inserted in the middle reaches 190 degrees F, 35 to 40 minutes.
  • Transfer to a wire rack and let cool 5 minutes, then run a knife around the sides of the loaf to loosen and turn the loaf out of the pan. Let cool completely top-side up on the rack.

  • In a mixing bowl, combine heavy cream, evaporated milk and salt. With a stand mixer, beat until stiff peaks form gradually increasing speed to high, as mixture thickens. Slowly drizzle in sweetened condensed milk starting mixer speed at low and gradually increasing it to high. Beat on high speed until stiff peaks form. Add vanilla extract. Beat until it is well blended, maintaining stiff peaks. Spread one-third of the ice cream onto the bottom of a freezer-safe container. Spread half of the fudge swirl over ice cream. Spread one-third of the ice cream over the fudge swirl. Spread half of the fudge swirl over ice cream. Spread remaining one-third ice cream over the fudge swirl. With a knife, gently swirl the ice cream with the fudge swirl back and forth about two times. Cover tightly. Freeze until firm and completely solid, about 8-10 hours.
  • Fudge Swirl:.
  • Place heavy whipping cream and semisweet chocolate chips in a double-boiler. Stir until all of the chocolate chips have melted and the mixture is smooth. Cool completely. Store in a tightly covered container in the refrigerator.

1 1/3 cups warm water
2 1/2 teaspoons instant yeast
2 tablespoons unsalted butter, softened
1/2 cup sugar
2 eggs
2 teaspoons pure vanilla extract

1 teaspoon ground cinnamon
2 tablespoons nonfat dry milk powder
1/4 cup instant potato flakes
3 1/2-4 1/2 cups bread flour
milk, for brushing
1 cup raisins (plump by covering with boiling water, leave for 5 minutes, then drain well, pat dry)
2 tablespoons ground cinnamon
1/4 cup sugar

Steps:

  • Spray two 8 by 4 inch loaf pans with nonstick cooking spray.
  • Whisk the water and yeast togetherby hand in an electric mixer bowl and let stand for 2 to 3 minutes to dissolve.
  • Stir in the butter, sugar, eggs, vanilla, salt, cinnamon, dry milk, potato flakes and 3 1/2 cups flour.
  • Mix to make a soft dough.
  • Kead with the dough hook on the lowest speed of the mixer for 10 minutes, adding more flour as required to make a soft dough.

  • Cover the bowl loosely with a plastic bag and let dough rise for 45 minutes or until almost doubled.
  • Punch the dough down gently.

  • For the filling, brush with milk and sprinkle on the raisins, cinnamon and sugar.
  • With the shorter end facing you, roll up the dough snugly into a log.
  • Cut it in half widthwise and place in the prepared pans.
  • Spray the dough with nonstick cooking spray lightly.
  • Cover the pans loosely with plastic bags and let rise for a further 30 to 45 minutes, or until it puffs up 3/4 to 1 inch above the edge of the pans.
  • Preheat oven to 350*F.
  • Place pans in oven and bake for 35 to 45 minutes, or until lightly browned.
  • Let cool in the pans on a wire rack for 15 minutes before unmolding.
  • VARIATION: Use chocolate chips instead of raisins and replace the cinnamon with 2 TBS cocoa powder.

25 g butter
50 g baking chocolate
3/4 cup icing sugar, sifted
2 tablespoons hot water
100 g white chocolate (optional)

Steps:

  • Cream butter and sugar together until light and fluffy.
  • Add eggs, beating in one at a time.
  • Sift over flour and baking powder and fold into butter mixture.
  • Divide the mixture in half. Place one half in a separate bowl and mix in vanilla. Sift cocoa over other half of mixture and fold inches.
  • Place alternate tablespoon of mixture into a baking paper-lined 20cm cake tin.
  • Swirl the mixtures together with wooden skewer.
  • Bake at 180 C for 35 - 40 minutes or until cake springs back when lightly touched.
  • Cool cake a little. Turn out onto a cake rack and ice when cold.
  • Icing: Melt butter and chocolate over a low heat, stir in icing sugar.
  • Add water and mix to combine. Spread over cake when cool.
  • If you wish to decorate the cake, use a potato peeler and peel white chocolate into curls and sprinkle over icing.

BUTTERMILK CHOCOLATE SWIRL BREAD

  • Cool in pan on wire rack for 10 minutes.
  • Remove from pan; put cake right side up on rack to cool.
  • Dust with confectioners' sugar.
