Gina's Shrimp Scampi with Angel Hair Pasta image

1 pound angel hair pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 lemon, juiced, plus 1/2 lemon, zested
1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

Steps:

  • Into a large pot or deep saute pan, add Olive Oil (2 tablespoon) and the Garlic (4 clove) and cook for a few minutes until fragrant.
  • To the pot, add Butter (1 tablespoon) and Freshly Ground Black Pepper (to taste).
  • Add Chicken Stock (3 cup) and bring to a boil.
  • Once boiling, add the Angel Hair Pasta (250 gram). Cook for 4 to 5 minutes, or until the pasta is tender.
  • Once the pasta has absorbed most of the liquid, turn the temperature down to medium.
  • Add the Fresh Parsley (1 tablespoon), Grated Parmesan Cheese (1 cup) and Cream (3/4 cup) and stir through until the cheese has completely melted.
  • Serve as is or as a side dish. You can also add some pancetta or cooked chicken bits at the end. Enjoy!

1 pound angel hair pasta
1/2 cup Chili Oil, recipe follows
1/2 cup chopped fresh Italian parsley leaves
1 lemon, juiced
2 tablespoons lemon zest
Coarse sea salt
Dried crushed red pepper flakes
1/2 teaspoon grated lemon peel, optional
2/3 cup freshly grated Parmesan
2 cups olive oil
4 teaspoons dried crushed red pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
  • Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
  • Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
  • Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
  • Yield: 2 cups

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. lemon juice
1/8 tsp. ground black pepper
1 cup julienned zucchini
1 cup sliced fresh mushrooms
1 Tbsp. olive oil
1/2 cup water
1 medium tomato, chopped
8 oz. angel hair pasta, cooked, drained

Steps:

  • Spray each head of garlic lightly with cooking spray; wrap each head separately in foil. Place in small baking pan. Bake at 400°F for 45 minutes. Cool 10 minutes. Separate garlic cloves. Squeeze cloves to extract pulp; discard peels.
  • Place garlic pulp, mustard, lemon juice and pepper in food processor or blender container; cover. Process until pureed; set aside.
  • Cook and stir zucchini and mushrooms in hot oil in large skillet on medium-high heat for 3 minutes or until zuccini is crisp-tender. Add garlic mixture, water and tomato; mix well. Reduce heat to low; cook until thoroughly heated, stirring frequently. Toss with hot cooked pasta.

1/4 cup fresh lemon juice

  • Bring a large pot of water to a boil over high heat and maintain at a boil.

BUTTERY GARLIC ANGEL HAIR PASTA



Buttery Garlic Angel Hair Pasta image

1/3 cup EVOO, Extra Virgin Olive Oil
1/2 cup Butter, 1 cube
1/2 tsp Red Pepper Flakes (Increase if you prefer more spice/heat)
1 Tbsp Salt, for pasta water
1-2 Scallions, white bulbs & two inches of greens, chopped
2-3 Large cloves of garlic, minced
1 lb Angel Hair Pasta, cooked Al Dente
1/2 cup pasta water reserved
Grated Parmesan Roman cheese, to taste
Fresh parsley, chopped for garnish
Salt and pepper to taste for buttery garlic sauce

Steps:

  • Fill a large pot with 6 or more quarts of water, and bring to a rolling boil. Note: we set the heat to high.
  • Add 1 Tbsp salt to boiling pasta water, this is the only time you can or should salt the pasta.
  • Add 1 lb of Angel Hair pasta to boiling water, we add a handful at a time, and cook until Al Dente or tender but firm, and approximately 2-6 minutes depending on your personal preference.
  • When pasta is cooked and before straining pasta into collander reserve 1/2 cup of pasta water,
  • Use a colander to strain water from cooked pasta.
  • While waiting for the water to boil, begin heating the oil and butter in a large skillet and over medium heat; 1/3 cup EVOO & 1/2 or one stick of butter.
  • Finely slice or chop the scallions and green stalks. Add to your large frying pan when oil and butter are bubbling, and saute for 3-5 minutes.
  • After the scallions have sauteed add the minced garlic, red pepper flakes, and salt and pepper to taste. Saute for another few minutes.
  • Add reserved 1/2 cup of pasta water to the butter garlic sauce and saute until the mixture has thickened slightly. Note: The reserved pasta water will help the sauce cling to the pasta.
  • Slowly add the drained pasta to the buttery garlic sauce and toss until the pasta is evenly coated.
  • Remove pasta to a serving bowl, garnish with freshly chopped parsley and grated cheese if desired.
  • Serve and enjoy.
  • This is delicious when served with our Riced or Shredded Zucchini recipe and our Cheesy Butterflied Broil Shrimp.

3 medium chicken breasts
60 gms butter
1/4 cup extra virgin olive oil
6 large cloves of garlic finely minced - see notes
6 cups chicken stock - 1.6 quarts (we used chicken stock cubes)
500g angel hair pasta (1 pound)
120 gms grated parmesan cheese 4 1/4 oz
375 ml pouring cream 1 1/2 cups
1/4 cup chopped flat leaf parsley
salt
freshly milled black pepper

Steps:

  • season chicken with salt and pepper
  • on a medium heat add half the butter and oil to a large frypan and when the butter melts and gently foams add the chicken and cook for 3-4 minutes a side
  • remove chicken onto a plate and cover with alfoil - see step 3 in the notes below
  • add the remaining butter and oil to the pan and gently fry the garlic for a minute or two until the garlic is transparent but not browned
  • add stock and bring to the boil
  • add pasta and stir briefly to prevent sticking then stir occasionally while the pasta is cooking until most of the stock has been absorbed. Pasta is not fully cooked at this point
  • add cream, parmesan and parsley
  • mix and gently simmer until pasta is almost cooked, remove from heat- see step 8 in the notes below
  • slice chicken and add to pasta tossing to coat the chicken
  • serve and enjoy!

2-1/2 Tbsp butter, divided
2 Tbsp olive oil
Garlic
1 lb peeled, deveined large shrimp, thawed if frozen
1 Tbsp grated lemon zest
1/4 tsp each salt and crushed red pepper
1/4 cup lemon juice
1/3 cup chopped parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook as pkg. directs, reserving about 1 cup of cooking water before draining.
  • Meanwhile, heat 2 Tbsp. of the butter and the oil in a large nonstick skillet over medium-high heat. Add garlic and cook over medium-low heat 30 seconds or until fragrant. Add shrimp, lemon zest, salt and crushed red pepper; saute over medium heat 3 to 5 minutes until shrimp is just cooked through. Stir in lemon juice; remove from heat.
  • Pour shrimp mixture over drained pasta; add remaining 1/2 Tbsp. butter, the parsley and about 1/2 cup of the cooking water (more if desired). Toss to mix and coat.

I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
1 lemon, juice of
1 tomatoes, diced
sea salt, to taste
8 ounces angel hair pasta
1/4 cup fresh basil, roughly chopped

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
  • Add the pasta to the boiling water and cook until desired tenderness, following package directions. Drain, then add the cooked pasta to the pan with the garlic & tomato mixture, along with the basil and some freshly ground pepper. Toss well, (if your pan isn't big enough, just do the tossing in a large serving bowl).
  • *Tip: 4 ounces of uncooked pasta (spaghetti, angel hair, vermicelli, fettuccine or linguine) = a 1-inch diameter bunch of dry pasta = 2 cups cooked pasta. Generally they say 2 ounces of pasta is one serving, but for larger appetites this might not be enough.

My easy garlic Parmesan angel hair pasta recipe is rich, buttery, and the ultimate dinner for any garlic lover! Sauteed garlic in a creamy Parmesan sauce coats delicate angel hair pasta and makes a rich comfort food your whole family will enjoy!

2 Tbsp butter
2 tsp garlic ((minced))
1 1/2 cups chicken broth
1 cup milk
8 oz angel hair pasta
1/4 tsp each, salt & pepper ((to taste))
1/3 cup Parmesan cheese ((freshly grated or shaved))
1 Tbsp parsley ((optional garnish, chopped))

Steps:

  • Bring a large, deep skillet or small stock pot to medium-high heat with the butter. Once the butter is melted add the garlic and saute until fragrant, stirring occasionally for about 1 minute.
  • Stir in the chicken broth, milk, angel hair pasta, salt, and pepper until the pasta is softened and completely covered with liquid. Bring to a boil then reduce your heat to low and simmer.
  • Simmer on low, stirring occasionally, for approximately 4-6 minutes or until your pasta is cooked fully. Remove from heat and stir in the grated Parmesan cheese until fully melted.
  • Serve immediately garnished with fresh, chopped parsley if desired.

1 lb uncooked medium shrimp, peeled and deveined
1/2 teaspoon dried dill weed
1 (500 ml) jar garlic, and parmesan sauce (Bertolli)
1 cup frozen green pea, thawed
1/4 cup chicken broth
8 ounces angel hair pasta, cooked and drained
salt and pepper
parmesan cheese

Steps:

  • Heat olive oil in 12-inch skillet over medium-high heat and cook shrimp with dill, stirring occasionally, 3 minutes or until shrimp turn pink. Stir in sauce, peas and broth. Continue cooking and stirring occasionally, 2 minutes or until sauce is heated through. Season, if desired, with salt and ground black pepper.
  • Serve over hot angel hair pasta and garnish, if desired, with grated parmesan cheese.

Tender angel hair pasta noodles tossed in a delicious coating of sauteed garlic, Parmesan, butter, and olive oil. The perfect side-dish or simple pasta dinner for when you want something yummy but only have ten minutes.

1 16 oz package of angel hair pasta
8-10 large segments of garlic, finely chopped (I usually use a whole clove)
4 tbsp butter
4 tbsp olive oil
2 tbsp dried parsley
½ cup freshly grated Parmesan cheese
½ tsp salt
¼ tsp pepper
1 large lemon wedge (optional)

Steps:

  • Boil pasta according to package directions for al dente pasta. Make sure to salt the water.
  • While waiting for water to boil and pasta to cook, add olive oil and butter to a large sauté pan. (You want the pan to be large enough that you will be able to add the pasta once it finishes cooking.)
  • Once butter has melted, add garlic, dried parsley, salt, and pepper. Sauté, stirring constantly, until it starts to turn golden brown. Do not overcook the garlic. Once it starts to turn a light brown or golden, remove from heat.
  • Once pasta is done, drain and quickly add it to the garlic, olive oil, butter mixture. Toss until evenly coated.
  • Add grated Parmesan and squeeze of lemon, if desired. Toss again. At this point, taste it and decide if you need to add more salt. You can also drizzle with a little more olive oil if desired.
  • Salt to taste if needed and serve immediately. I like to reserve a spoonful of the sautéed garlic to put in the center of the serving dish with a little more Parmesan cheese...as pictured.
  • Enjoy!
