Steps:
- Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
- Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
- Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

- Into a large pot or deep saute pan, add Olive Oil (2 tablespoon) and the Garlic (4 clove) and cook for a few minutes until fragrant.
- To the pot, add Butter (1 tablespoon) and Freshly Ground Black Pepper (to taste).
- Add Chicken Stock (3 cup) and bring to a boil.
- Once boiling, add the Angel Hair Pasta (250 gram). Cook for 4 to 5 minutes, or until the pasta is tender.
- Once the pasta has absorbed most of the liquid, turn the temperature down to medium.
- Add the Fresh Parsley (1 tablespoon), Grated Parmesan Cheese (1 cup) and Cream (3/4 cup) and stir through until the cheese has completely melted.
- Serve as is or as a side dish. You can also add some pancetta or cooked chicken bits at the end. Enjoy!

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.

- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. - Bring a large pot of water to a boil over high heat and maintain at a boil.
- Put the olive oil and garlic in a saute pan and cook over medium heat just until the garlic begins to brown.
- Remove the saute pan from the heat and pour in the wine.
- Return it to the heat.
- Cook for another 1 to 2 minutes, until the wine has been reduced by 1/2.
- Stir in the lemon juice and tomato.
- Remove the pan from the heat.
- Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
- Drain the pasta and put it into a warm serving bowl.

BUTTERY GARLIC ANGEL HAIR PASTA
Steps:
- Fill a large pot with 6 or more quarts of water, and bring to a rolling boil. Note: we set the heat to high.
- Add 1 Tbsp salt to boiling pasta water, this is the only time you can or should salt the pasta.
- Add 1 lb of Angel Hair pasta to boiling water, we add a handful at a time, and cook until Al Dente or tender but firm, and approximately 2-6 minutes depending on your personal preference.
- When pasta is cooked and before straining pasta into collander reserve 1/2 cup of pasta water,
- Use a colander to strain water from cooked pasta.
- While waiting for the water to boil, begin heating the oil and butter in a large skillet and over medium heat; 1/3 cup EVOO & 1/2 or one stick of butter.
- Finely slice or chop the scallions and green stalks. Add to your large frying pan when oil and butter are bubbling, and saute for 3-5 minutes.
- After the scallions have sauteed add the minced garlic, red pepper flakes, and salt and pepper to taste. Saute for another few minutes.
- Add reserved 1/2 cup of pasta water to the butter garlic sauce and saute until the mixture has thickened slightly. Note: The reserved pasta water will help the sauce cling to the pasta.
- Slowly add the drained pasta to the buttery garlic sauce and toss until the pasta is evenly coated.
- Remove pasta to a serving bowl, garnish with freshly chopped parsley and grated cheese if desired.
- Serve and enjoy.

- season chicken with salt and pepper
- on a medium heat add half the butter and oil to a large frypan and when the butter melts and gently foams add the chicken and cook for 3-4 minutes a side
- remove chicken onto a plate and cover with alfoil - see step 3 in the notes below
- add the remaining butter and oil to the pan and gently fry the garlic for a minute or two until the garlic is transparent but not browned
- add stock and bring to the boil
- add pasta and stir briefly to prevent sticking then stir occasionally while the pasta is cooking until most of the stock has been absorbed. Pasta is not fully cooked at this point

- Bring a large pot of salted water to boil over high heat.
- Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
- Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
- Add the pasta to the boiling water and cook until desired tenderness, following package directions. - Boil pasta according to package directions for al dente pasta. Make sure to salt the water.
- While waiting for water to boil and pasta to cook, add olive oil and butter to a large sauté pan. (You want the pan to be large enough that you will be able to add the pasta once it finishes cooking.)
- Once butter has melted, add garlic, dried parsley, salt, and pepper. Sauté, stirring constantly, until it starts to turn golden brown. Do not overcook the garlic. Once it starts to turn a light brown or golden, remove from heat.
- Once pasta is done, drain and quickly add it to the garlic, olive oil, butter mixture. Toss until evenly coated.
- Add grated Parmesan and squeeze of lemon, if desired. Toss again. At this point, taste it and decide if you need to add more salt. You can also drizzle with a little more olive oil if desired.
- Salt to taste if needed and serve immediately. I like to reserve a spoonful of the sautéed garlic to put in the center of the serving dish with a little more Parmesan cheese...as pictured.

- Remove the pan from the heat and pour in the wine. Return the pan to the heat and cook for 1 to 2 minutes, until wine is reduced by half. Stir in lemon juice and chopped tomato. Remove the pan from the heat.
- Place the pasta in boiling water and cook until desired tenderness. Drain and place in a large serving bowl. Add the basil, Parmesan cheese, pepper and olive oil/ tomato mixture. Toss and serve.
