8 medium-size red-skinned potatoes
1/2 cup olive oil
40 small bay leaves
1 tablespoon coarse sea salt
2 teaspoons herbes de Provence*
1 1/2 teaspoons coarsely cracked black pepper

Steps:

  • Preheat oven to 350°F. Using small sharp knife and working on 1 potato, make 5 crosswise vertical cuts, spaced evenly apart, from 1 side to other side (do not cut through). Place potato in 13x9x2-inch broilerproof baking dish. Repeat with remaining potatoes. Add some of oil to dish and toss potatoes to coat. Slide 1 bay leaf into each cut in each potato. Mix salt, herbs, and pepper in small bowl and sprinkle over potatoes. Roast potatoes until tender, about 55 minutes. Remove dish from oven. Preheat broiler. Drizzle remaining oil over potatoes. Broil until potatoes begin to brown, about 4 minutes.
  • *A dried herb mixture available at specialty foods stores and in the spice section of some supermarkets. A combination of dried thyme, basil, savory, and fennel seeds can be substituted.

This is a great side dish! It is sauteed in Olive Oil with Bay Leaf and Garlic. It is very light and a healthy alternative to potatoes and butter.

10 -15 red potatoes (cut in halves or quarters if larger)
14 1/2 ounces one can French style green beans
1 -2 tablespoon minced garlic
5 bay leaves
olive oil
cracked black pepper

Steps:

  • Boil your cut potatoes in water for about 10 minutes or until cooked through.
  • Add Oilve Oil to large sautee pan (enough to coat).
  • Add garlic and bay leaves to infuse the olive oil. Constantly swirl bay leaf to get the flavor through out the oil.
  • Add the drained can of green beans and sautee (these will not brown, just want to coat the green beans in the garlic and bay leaf oil for taste) and warm them.
  • After potatoes are cooked and drained add to oil/green bean mixture.
  • Add cracked black pepper throughout dish.
  • Toss and add to seperate serving bowl.
  • Delicious!
  • In my personal use, I add A LOT more garlic and bay leaf. Depending on how much you like the flavor, you should do the same. I have also added other herbs but the garlic and bay leaf are my favorite.
  • If you're not counting calories, you can always drizzle more olive oil to make the dish tastier, either during the sautee or after!

1 ham hock (use 2 if they are small)
2 (14 1/2 ounce) cans green beans, drained and rinsed
1 large onion, chopped
10 small red potatoes, peeled and cubed
1 tablespoon seasoning salt (if needed, use your own judgement as ham is often quite salty on it's own. You can always add the se)
2 teaspoons ground black pepper
1 tablespoon garlic powder

Steps:

  • Place the ham hock('s) and onion into a 4 quart Dutch oven and fill half way full with water.
  • Season water with salt, pepper and garlic powder and bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot.
  • Discard bones and skin.
  • Add the green beans to the Dutch oven and simmer for 20 minutes, then add the potatoes. Simmer for 10 to 15 minutes more, or until they can be easily pierced with a fork.

  • Preheat oven to 450°F. Combine oil and bay leaves in small skillet. Cook over medium heat just until warm. Remove from heat. Let stand 15 minutes so that bay leaves flavor oil.
  • Toss potatoes with bay leaf oil in large roasting pan. Sprinkle with salt and pepper. Roast until potatoes are brown and tender, stirring occasionally, about 45 minutes. Discard bay leaves. Transfer potatoes to bowl and serve.

Steps:

  • Preheat oven to 450°F. On a large rimmed baking sheet, toss together sweet potatoes, onion, and oil; season with salt and pepper. Spread evenly and roast until sweet potatoes are browned and tender, about 20 minutes, tossing potatoes halfway through.
  • Add green beans and walnuts to sheet; toss. Roast until beans are tender, about 5 minutes.
  • Meanwhile, in a small bowl, whisk together yogurt, vinegar, and garlic; season dressing with salt and pepper.
  • Place lettuce in a large serving bowl; top with roasted vegetable mixture, and drizzle with dressing. Serve immediately.

2 pounds purple and/or white fingerling potatoes, scrubbed
1 pound green beans, trimmed
1/4 cup chopped mixed fresh herbs such as chives and garlic chives (with blossoms, if desired) and thyme, parsley, mint and summer savory leaves
2 tablespoons extra-virgin olive oil
1/2 teaspoon freshly grated lemon zest

Steps:

  • In a large kettle, simmer potatoes in salted water to cover until tender when pierced with a fork, about 10 minutes, and drain in a large colander.
  • In a large saucepan, cook beans in 3 inches salted boiling water over high heat until crisp-tender, about 3 to 5 minutes. With tongs or a slotted spoon, transfer beans to colander with potatoes and drain well.
  • In a large bowl, toss together warm potatoes, beans, herbs, oil, zest, and salt and pepper to taste. Salad may be made 1 day ahead and chilled, covered.
  • Serve salad warm or at room temperature.

The smoked turkey tails make an excellent broth that is seasoned beyond words. Let the meat cook until it falls off the bone for the ultimate flavor, at least 2 hours.

2 lbs baby red potatoes
9 garlic, chopped
1/4 cup olive oil
1/2 teaspoon kosher salt
2 tablespoons mint, chopped (or rosemary)
chives, to garnish
wooden skewer

Steps:

  • Soak wooden skewers for 1 hour.
  • Infused oil: Combine olive oil and garlic over medium heat until garlic turns golden, about 5 minutes. Immediately strain the garlic oil, reserving 1 T of the garlic solids and 1 T of the garlic oil in a large bowl.
  • Cut potatoes in half and thread onto wooden skewers. Poke the potatoes with a fork to help infuse the oil into the potatoes. Brush with garlic oil and microwave in a single layer for 8 minutes or until 3/4 cooked. Brush a cookie sheet with some of the garlic oil and use this as a transfer tray. Sprinkle with salt and pepper.
  • Put the potatoes, cut side down, on the BBQ for until nice grill marks appear. Turn over and cook for about 5 minutes. Continuously brush with the garlic oil through the whole cooking procedure. Transfer the potatoes to a cool part of the grill and cover with some tin foil and continue to cook until the potatoes are soft when a knife is poked through them.
  • Remove the potatoes from the grill and transfer to the bowl with the reserved garlic solids and oil. Remove the skewers and sprinkle with chopped chives and mint.
  • Serve the potatoes with sour cream or vinegar.
