1 package DaVinci Spaghetti (16 ounces)
1 large zucchini (diced)
1 cucumber (peeled, seeded and diced)
1 green bell pepper (seeded and diced)
1 red bell pepper (seeded and diced)
1/2 medium red onion (diced)
15 red cherry tomatoes (halved)
15 yellow cherry tomatoes (halved)
1 bottle Italian dressing (14-16 ounces)
1/4 cup Parmesan cheese

Steps:

  • Cook pasta according to package directions (11-13 minutes). Drain and rinse with cold water.
  • Toss all ingredients, except Parmesan cheese, together in a large bowl.
  • Top with Parmesan cheese.

1 pound spaghetti (broken in half)
1 pint cherry tomatoes (halved)
2 cucumbers (diced)
1/2 small onion (diced)
1 tsp. minced garlic
1 cup kalamata olives (pitted)
1 cup parmesan cheese (shredded)
4 oz. sharp cheddar cheese (diced)
1 Tbsp. mayonnaise
1 bottle (16 oz) Italian Salad Dressing
2 Tbsp. basil pesto
salt and pepper to taste
fresh mint or parsley to garnish (optional)

Steps:

  • Break the spaghetti in half, then boil until al dente.
  • Rinse spaghetti in cold water, drain, and place in a large bowl.
  • Cut tomatoes in half. Dice cucumbers, onion and cheddar cheese into small pieces. Add veggies to spaghetti in bowl and stir.
  • Add garlic, olives and parmesan cheese. Mix with tongs.
  • In a separate bowl, mix mayonnaise, Italian Dressing and pesto together. Add salt and pepper to taste. Mix well.
  • Pour dressing over spaghetti with veggies in bowl. Mix well with tongs or spoon. Place pasta in a large serving bowl and garnish with fresh mint or parsley if desired.
  • Refrigerate pasta until ready to serve.

1 medium sweet onion, chopped
2 green onions, sliced thin
1 c sliced celery
2 medium tomatoes, chopped and seeded
1 medium green bell pepper, chopped

1/2 c shredded sharp cheddar cheese
1 can(s) black olives, drained (3.8 oz)
16 oz corkscrew pasta, cooked and drained
1 c diced smoked ham
1 bottle Italian dressing (16 oz)

  • 1. Cook and drain pasta. Add it to a large mixing bowl.
  • 2. Toss in peas, onions, green onions, and celery.

4 pints cherry tomatoes, halved
Good olive oil
2 tablespoons minced garlic (6 cloves)
18 large basil leaves, julienned, plus extra for serving
1/2 teaspoon crushed red pepper flakes
Kosher salt
1/2 teaspoon freshly ground black pepper
1 pound dried angel hair pasta
1 1/2 cups freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Combine the cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for about 4 hours.
  • Just before you're ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons salt to a boil and add the pasta. Cook al dente according to the directions on the package (be careful - it only takes 2 to 3 minutes!). Drain the pasta well and add to the bowl with the cherry tomatoes. Add the cheese and some extra fresh basil leaves and toss well. Serve in big bowls with extra cheese on each serving.

2 cups broccoli florets
1 each red onion and red pepper, chopped

1 bottle (8 oz.) KRAFT Sun Dried Tomato Vinaigrette Dressing
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min. Drain.
  • Rinse pasta mixture with cold water; drain well. Place in large bowl. Add all remaining ingredients except cheese; mix lightly.
  • Refrigerate 1 hour. Stir gently before serving; top with cheese.

I got this recipe a few years ago, but I cannot recall where. But it's a great light dinner dish for those hot summer nights when you don't feel like cooking or on those evenings when all you want is a refreshing and light meal. But we also have this year-round, and sometimes serving it warm with a bit of diced roasted chicken or proscuitto ham for a more substantial meal.

1 lb spaghetti or 1 lb fettuccine
2 tomatoes, diced
1 green pepper, seeded and diced
1 red pepper, seeded and diced
2 zucchini, diced
3 celery ribs, cut in 1/4 inch slices
2 carrots, cut in 1/4 inch slices
6 ounces sliced black olives, drained
1/4 cup olive oil
3 tablespoons parmesan cheese
2 teaspoons minced garlic
1 teaspoon basil
salt and pepper
shredded mozzarella cheese
1 1/2 cups cooked chicken, chopped (optional)

Steps:

  • In a large pot, cook pasta covered in boiling water, for 8 minutes or until limp. Set noodles aside in a colander to allow water to drain.
  • Lightly steam all of the vegetables just until they are starting to become tender. Remove them from the heat and let them cool a bit. Place all vegetables in a medium bowl and toss lightly.
  • In a separate small bowl, add the oil, cheese, garlic, basil, salt and pepper. Mix well.
  • Add the oil mixture to the vegetables and toss gently until vegetables are well coated with the oil mixture.
  • To serve, place pasta on each individual plate, and top with the vegetables. Sprinkle the top with shredded mozzarella. Serve either slightly warm, or if you prefer a refreshing cool meal then let the vegetables and pasta cool completely.
