4 ounces tomato paste (about 1 tube)
1/4 cup chili powder
1 teaspoon chipotle powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
4 cloves garlic, chopped
6 cups vegetable broth
One 28-ounce can diced tomatoes
2 cups canned (drained) or frozen corn
One 15-ounce can black beans
One 15-ounce can garbanzo beans
One 15-ounce can kidney beans
One 15-ounce can pinto beans
2 teaspoons Worcestershire sauce
Sour cream or Greek yogurt
Shredded Cheddar
Cooked chopped bacon
Chopped yellow onions
Chopped chives
Sliced jalapenos
Corn chips, such as Fritos
Tortilla chips

Steps:

  • For the chili: In a Dutch oven over medium heat, cook the onions with 2 tablespoons of the olive oil and a pinch of salt and pepper until the onions are soft, about 3 minutes. Mix in the remaining 2 tablespoons olive oil along with the tomato paste, chili powder, chipotle powder, coriander, cumin, cayenne and garlic. Cook to toast the spices and tomato paste, 1 to 2 minutes. Then add the vegetable broth, tomatoes, corn, black beans, garbanzo beans, kidney beans, pinto beans, Worcestershire and 1 tablespoon salt. Bring to a simmer and cook for 1 hour, stirring occasionally.
  • Serve the chili with the toppings bar.

3-4 tablespoons of olive oil
1 teaspoon of mustard
1 tablespoon of finely chopped cilantro
Salt and pepper to taste
1 15 oz can of cooked garbanzos or chickpeas, drained
1 5oz can of tuna fish, drained
½ medium sized red onion (diced)
2 medium sized ripe tomatoes (diced)
1 avocado (peeled, pitted and diced)
1 tablespoon chopped cilantro
Lettuce leaves and/or crackers

Steps:

  • Place the lemon juice, olive oil, mustard, cilantro, salt and pepper in a small jar, close tight and shake until the ingredients are well mixed.
  • Combine the chickpeas, tuna fish, diced red onion, diced tomatoes, cilantro, and avocado in a large bowl; add the lemon mustard cilantro dressing and mix.
  • The salad can be served immediately or refrigerated until ready to serve - if preparing ahead of time add the diced avocado right before serving.
  • Serve the chickpea avocado salad alone or on top of lettuce leaves. Can also be served as an appetizer dish with crackers/toast.

  • Steam the green beans over a double boiler until they are bright green and al dente. Cool; then cut in half.

Southwestern Salad, with garbanzos, and chipotle, lime and roasted garlic dressing has a bit of a kick from the chipotle in the dressing. Load it up with fresh veggies and you have a colorful, delicious summer salad!

30 oz cans garbanzos ((chick peas))
15 oz can large black olives
15 oz can corn
1 pint mixed color cherry tomatoes (halved)
1 red bell pepper (diced large)
1 small cucumber (large dice)
1/2 cup diced red onion
1 tsp Olive Oil
1 chipotle in adobo finely minced and about 1 tsp. of the sauce
1 roasted garlic (whole large head )
1 fresh lime (juiced and zested)
1/2 c mayonnaise
1 Tbsp ground cumin
salt and Pepper to taste

Steps:

  • To roast garlic, Cut the top off of the head with a sharp knife.
  • Drizzle with olive oil. Sprinkle with a pinch of salt. Roast in oven or on a grill on the top rack at 400°F for 30-40 minutes until golden and very soft.
  • Drain garbanzo beans and rinse well.
  • Drain corn and olives.
  • Chop tomatoes and cucumber into bite sized chunks. Slice olives (or by sliced olives and skip this step.) Mix beans, corn, olives tomatoes, cucumber in a large bowl.
  • Mince chipotle peppers. Measure adobo sauce. Add to small bowl.
  • Squeeze garlic out of papery casings.
  • Paste roasted garlic with the side of your chef's knife.
  • Add the mayonnaise to garlic and chipotle. Add lime juice, cumin and lime zest to dressing.
  • Mix well. Season with salt and pepper to taste.
  • Mix a couple tablespoons of the dressing to the salad until desired amount of dressing for your tastes.

1/3 cup olive oil
3/4 cup finely chopped red onion
1/4 cup minced fresh parsley

Steps:

  • Place beans in a large bowl.
  • Add enough cold water to cover by 2 inches.
  • Let stand at least 4 hours.
  • or overnight.
  • Combine vinegar and mustard seeds in medium bowl.
  • Let stand at least 1 hours.

  • Drain beans.
  • Place in a heavy large saucepan.
  • Add enough water to cover beans by 3 inches.

  • Whisk sun dried tomatoes, molasses,and chilis into vinegar mixture.
  • Gradually whisk in oil.
  • Combine beans, onion, and parsley in bowl.
  • Add enough dressing to coat salad.
  • Season to taste with salt and pepper.
