BUTTER FRIED POTATOES
This is not the healthiest dish, although it is delicious. For the people who do not like them, the onion is optional. I make it for my family often and the restaurant I work at changed their recipe to this! Add diced tomatoes alongside the onion and garlic for a tasty addition.

Steps:
- Melt 4 1/2 tablespoons butter in a large skillet over medium-high heat; cook and stir potatoes until golden brown, 10 to 15 minutes.
- Meanwhile, melt remaining 1 1/2 tablespoons butter in another skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Reduce heat to medium-low and continue cooking until garlic is lightly browned, 5 to 10 minutes more. Stir onion mixture into potatoes.
- Cook and stir potatoes and onion until potatoes are tender, about 10 minutes more.

CRISPY FRIED POTATOES

- Preheat the oven to 250 degrees F. Combine the potatoes, garlic, bay leaves and peppercorns in a large pot. Add 2 tablespoons salt and enough water to cover the potatoes by 1 inch. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, about 15 minutes. Remove the potatoes to a paper towel?lined plate with a slotted spoon; gently blot dry (it?s OK if some of the potatoes crumble). Let cool completely.
- Set a wire rack on a rimmed baking sheet. Melt the schmaltz in a large pot or Dutch oven over medium heat (you should have about 2 inches in the pot) and heat until a deep-fry thermometer registers 350 degrees F. Working in batches, fry the potatoes until browned and crisp, 4 to 6 minutes. Remove to the rack with a slotted spoon and immediately sprinkle with salt. Keep warm in the oven between batches.
- Add the parsley and sage leaves to the hot schmaltz and fry a few seconds until just crisp. Remove to a paper towel?lined plate with a slotted spoon and sprinkle with salt. Top the potatoes with the fried herbs.
GERMAN-STYLE FRIED POTATOES
Boiling the potatoes and chilling them overnight makes them easy to cut and saute. From Bon Appetit October 2009. Time does not reflect chilling the potatoes over night.

Steps:
- Cook potatoes in large pot of boiling salted water until just tender when pierced with sharp knife, about 25 minutes.
- Drain.
- Refrigerate potatoes overnight.
- Cut potatoes into 1/2-inch cubes (do not peel).
- Whisk oil, vinegar, and mustard in small bowl to blend for vinaigrette.
- Heat 3 tablespoons lard in each of 2 large nonstick skillets over medium-high heat.
- Add half of potatoes to each skillet; sprinkle with coarse salt.
- Sauté until potatoes begin to brown, stirring frequently, about 7 minutes.
- Add 3 tablespoons beer, then 1 1/4 cups red onions to potatoes in each skillet; cook until beer evaporates, stirring occasionally, about 1 minute.
- Reduce heat to medium and sauté until potatoes are brown around edges, about 5 minutes.
- Pour half of vinaigrette over potatoes in each skillet and toss to coat.
- Remove from heat.
- Season to taste with salt and pepper.
- Transfer all potatoes to large bowl.
- Sprinkle with chives.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
- In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
- Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

- In a skillet, melt bacon fat.
- Add onions and saute 2-3 minutes.
- Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange).
- Fry, covered, over medium heat until soft and tender.
- If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.

- Put a large skillet on the stove on Med High. Put oil in the pan and add the chopped onions and garlic. Peel and cube the potatoes. The smaller the cube the less cooking time. Add salt and pepper to season accordingly to your taste. Turn the potatoes every few minutes till they are browned on all sides. Slice the smoked sausage (I use the skinless with cheese inside) and add to the pan. Cover then stir every few minutes. We like the meat really browned so I turn up the heat to high till the sausage slices are the right color.
- Serve with a salad and some sweet tea, and you have the perfect midweek meal.

- (If you're uisng pre-boiled potatoes start with Step 2). Boil your potatoes in a pot on the stove with the skin on until the potatoes are tender. Then take the potatoes out of the pot and rinse them under cold water long enough so that they cool slightly and you can touch them without burning your hands.
- Heat 1 tablespoon of oil in a large pan and fry the chopped onion on medium heat until translucent and slightly browned. Take the onions back out of the pan and set them aside.
- In the same pan, heat more oil (approx. 2 tablespoons) and add enough potato slices so that the bottom of the pan is covered. The slices should not overlap to allow them to become crispy! You'll most likely not be able to fit all of the potatoes in the pan so you'll have to fry them in several batches. You can also use more than one pan if you want to be done faster.
