Steps:
- Wash the peanuts and place them in a pot. Add salt and water. Bring the water to a boil.
- Let the water boil for 3 hours.
- Taste the peanuts, if they are not salty enough for your taste add more salt. If you would like the peanuts to be softer, return the water to boil and cook until they reach the consistency you desire.

- Wash the peanuts in cool water until the water runs clear. Soak in cool water for 30 minutes to loosen any remaining dirt.
- Drain and rinse the peanuts. Add the peanuts to a 12-quart pot along with the salt and 3 gallons of water. Stir well. Cover and cook on high for 4 hours. Check the texture of the peanut at this point for doneness. When done, boiled peanuts should have a similar texture to a cooked dry bean. It should hold its shape, but not crunch when bitten. Add more water throughout the cooking process, if needed. If necessary, continue cooking for 3 to 4 hours longer.
- Drain the peanuts and store in a covered container in the refrigerator for up to 1 week.
- *Cook's note: The cooking time can vary greatly depending on how fresh the peanuts are. The fresher the peanut, the less time it will take to cook.

- 1. Mix seasonings with 4 cups hot water until salt is dissolved in Cock Pot. Add the raw peanuts in the shell to the mixture and fill the Crock Pot to full with hot water.
- 2. Cook 24 hours on high, check the peanuts to see that they are soft, and then on low for 24 hours (this is not a typo - 48 hours total allows them to soften and absorb the seasonings), keeping an eye on your water level. You will need to check your peanuts and adjust the time accordingly because all Crock Pots heat differently. I fill the crockpot with water every 8-10 hours to keep the water level full.
PRESSURE COOKER BOILED PEANUTS RECIPE - (4/5)

- Wash green peanuts well in cool water. The shells hang on to a lot of dirt because peanuts grow underground. Trust me, you don't want dirt in your cooking water. Place peanuts in a pressure cooker and add enough cool water to completely cover them. Stir in the salt then place the lid on the pressure cooker. Turn the heat on high and cook at 10 pounds of pressure for 45 minutes. If you are using a pressure cooker with a gauge, start timing after the indicator on the gauge reaches 10 pounds. If you are using a pressure cooker with a pressure regulator (jiggler), then start timing when the pressure regulator starts jiggling. You can lower the heat so that the pressure regulator only jiggles a few times per minute. At the end of the 45 minutes, turn off the heat and allow the pressure to drop of its own accord. If the peanuts are not soft enough or salty enough, leave the lid off of the pressure cooker and boil the peanuts until they are to your personal liking. Instructions for using raw, dry peanuts: Put peanuts in cooking pot and cover with cool water. Allow to soak overnight. The next day, drain off water and refill pot with enough fresh water to completely cover the peanuts. Add salt as above. Pressure cook for an hour at 10 pounds pressure. Turn off heat and allow the pressure of it own accord. Follow #5 above.
INSTANT POT SPICY BOILED PEANUTS

- Wash and drain the raw peanuts to remove any dirt.
- Add the peanuts to the pressure cooking pot along with the salt, Cajun seasoning and water to cover. If you like, you can place the trivet that comes with the Instant Pot over the peanuts to make sure they stay immersed in the water.
- Place the lid on the Instant Pot and turn the valve to seal. Cook on high pressure for 30 minutes, if you prefer tender and crunchy peanuts. For soft peanuts, cook for 60 minutes at high pressure. When the cook time ends, let the pressure release naturally for 30 minutes.
- Open the lid and allow the peanuts to sit in the cooked salty water for an hour. Serve and enjoy.

- Add salt, red pepper flakes, and seasoning.
- Add water to cover the peanuts.
- Place the steamer rack for the Instant Pot on top of the peanuts to help weight them down.
- Place lid on Instant Pot, check to see that the valve is in "sealing" position.
- Set to "Pressure Cook" for 75 minutes.
- Let do a natural pressure release for 30 minutes. Open the valve to release any remaining pressure and remove the lid.

- Stir together the peanuts, salt, and enough water to just cover them in a 3- to 6 quart Instant Pot. You can actually place the trivet upside down on top of the peanuts to hold them down in the water. Secure the lid on the pot.
- Close the pressure release valve, making sure it is on sealing, not venting. Select MANUAL or PRESSURE COOK and set the pot at HIGH pressure for 70 minutes. (70 minutes is middle of the road softness. If you like your boiled peanuts barely soft try 60 minutes. You can always put the lid back on and go another 10 minutes. If you like your boiled peanuts down right mushy cook them for 80 minutes.) This will take about 17 minutes to come up to full pressure.
- At the end of cooking time and it beeps, allow the pressure to release naturally, undisturbed (NPR). (This means do nothing. The shiny metal pressure valve will drop when all pressure is released. This will take about 25 to 30 minutes. Make sure the pressure release valve has dropped, then remove the lid carefully. The liquid inside the shells will be HOT so be careful if you eat the peanuts immediately. I like to let them cool enough so they are still warm but not piping hot. This is one of those recipes, like soup, that gets better the next day. My favorite part is the salty, slurpy liquid and it is more prevalent when the peanuts soak in water overnight before cooking or in the fridge after cooking. Enjoy!

- In a 3-gallon stockpot, dissolve ½ cup of the salt in 2 gallons of water and add the peanuts (the peanuts will float, but you can keep most of them submerged by using a dinner plate as a cap). Allow the peanuts to soak for 8 hours or overnight (see note below).
- Discard the soaking water and fill the pot with 2 gallons of fresh water and the remaining 1 cup salt. Bring to a boil, lower the heat to medium-low, and cook at a low boil, covered, for 5 to 8 hours. Keep the water in the pot at roughly the same level with hourly additions of 2 cups water until the peanuts are soft (South Carolina-style peanuts are very soft, but some cooks prefer them al dente).
- When the peanuts have boiled for 3 hours, sample them to check for texture and saltiness. Allow a peanut to cool, then crack open the shell to get at the kernels inside. If you find them too salty, remove some brine with a ladle or small pot and replace it with an equal amount of fresh water. If the peanuts are not salty enough, add salt in ¼ cup increments, turn off the heat, and let them soak for an hour to absorb the salt. If the peanuts are too crunchy for your taste, boil on. It can take as long as 12 hours if you prefer them mushroom-soft. Sample them every hour.
- When the peanuts are cooked to your satisfaction, turn off the heat and cool for 1 hour. When cool enough to handle, drain and eat immediately or store (in the shell) in a sealed container in the refrigerator or freezer. Boiled peanuts will keep for 7 days in the refrigerator, several months in the freezer.
