SCRAMBLED EGG WHITES

- Separate the eggs and add the egg whites and salt to a mixing bowl. Whisk until the eggs appear somewhat frothy, about 30-45 seconds.
- Add the oil to a medium-sized, non-stick saute pan over medium heat, and allow to come to temperature.
- Once the oil is heated through, swirl it to make sure it is evenly coating the pan, and then pour in the egg whites and allow the mixture to sit, undisturbed for about 30-45 seconds (just until the outer ring of the eggs begins to look opaque).
- Reduce the heat to medium-low and begin working from the outer edges of the pan, using a silicone spoon or spatula, begin gently pushing the eggs toward the center, allowing the uncooked egg to flow over and spill outward, toward the perimeter of the pan. Resist the urge to stir.
- Continue with this process until the eggs are no longer in liquid form. Turn off the heat. Then, slowly begin gently folding the eggs within the pan so that any uncooked portions make contact with the bottom of the saute pan. Continue folding until the egg whites are done to your liking.The entire process should take no longer than 2-3 minutes for a soft scramble. Remove from the heat and serve right away.

- Melt the butter in a nonstick skillet over medium heat. Break the eggs into the pan when it is warm but not yet hot. Sprinkle the eggs lightly with salt.
- Let the pan heat up, and don't move the eggs until the egg whites begin to set. Using a heat-resistant spatula, move the whites around the pan to help them cook through, while keeping the yolk unbroken, for about 30 seconds. When the whites fluff up and are almost completely set, remove from the heat and fold the yolks into the whites. The residual heat should cook the whites through and leave the yolks soft. This is kind of like scrambling an over easy egg.
- Sprinkle with herbs, if desired.

SCRAMBLED EGG WHITES

- Heat olive oil in a non stick frying pan.
- When the oil is hot, add garlic and fry for a few seconds, till they turn slightly brown.
- Add dried parsley, rosemary and oregano in the pan and immediately add the egg whites in the pan. Simmer the heat to medium low.
- Add salt and pepper and keep mixing the whites with a spatula so that they don't form lumps.
- Switch off the heat once the whites are 80% done. They will cook further with the heat in the pan.
- Serve hot with whole grain bread toast.

PERFECT SCRAMBLED EGGS

- Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
- TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
- Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
- Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
- Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.
EGG WHITES SCRAMBLED WITH EGG SUSTITUTE
I ususally cook these eggs and eat with a serving of my hot cereal recipe (#431403). I don't add any salt or pepper to my eggs. But that is just me. Sometimes, I add alittle Cabot"s 75% reduced fat cheddar cheese to the eggs before adding to the pan.

- One at a time, seperate the whites from the yolks and place the whites into the same cup. Using a fork, gently stir to combine.
