EASY CHOCOLATE CHIP COOKIES

120g butter, softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

For serious garlic lovers only! I know... these sound just too weird to make, but really, if you're the adventurous sort and you think there's no such thing as "too much garlic," you'll want to try these. I got the recipe on the somewhere on the net years ago.

10 fresh garlic cloves
water, boiling
1/2 cup pure maple syrup
1 cup butter, softened
3/4 cup light brown sugar
3/4 cup sugar
2 eggs
1 1/2 teaspoons vanilla
2 1/2 cups flour
1/4 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups chocolate chips

Steps:

  • Drop garlic cloves into boiling water for about 5 minutes until tender; peel cloves and chop, then soak in maple syrup for 20 to 30 minutes.
  • While cloves are soaking, cream together the butter, sugars, eggs, and vanilla until light and fluffy.
  • Combine the flour, cinnamon, baking soda, and salt, then add to cream mixture; stir the chocolate chips into the mixture (you can add a 1/2 cup of chopped nuts at this time, if you like).
  • Pour the garlic and syrup through a strainer, draining the syrup, and add the chopped cloves to cookie batter; stir well.
  • Drop the cookie batter by tablespoons onto an ungreased cookie sheet, spacing about 2 inches apart.
  • Bake at 375 degrees for 8 to 10 minutes until lightly browned (careful not to overcook!).
  • Remove from oven and cool on racks.
  • Makes about 4 dozen cookies.

150g butter , softened
150g soft brown sugar , golden caster sugar, or ideally half of each
1 egg
1 tsp vanilla extract
180-200g plain flour (see tip below)
½ tsp baking powder
200g chocolate chips or chopped chocolate

Steps:

  • Mix the butter and sugar together using an electric whisk or hand whisk until very light and fluffy, then beat in the egg and vanilla. Fold in the flour, baking powder, chocolate and ¼ tsp salt as quickly as you can. Don't overwork the dough as this will toughen the cookies.
  • For the best flavour, leave the mixture overnight: either cover the bowl and chill, or roll the mixture into balls and chill.
  • Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Divide the mixture into balls, the craggier the balls, the rougher the cookies will look. If you want to give the dough more texture, tear the balls in half and squidge them lightly back together. Space out evenly on the baking sheets, leaving enough space between each to allow for spreading.
  • Bake the fresh cookies for 8-10 mins and the chilled ones for 10-12 mins, or until browned and a little crisp at the edges but still very soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few minutes before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

1 cup shortening (Crisco is best)
3/4 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1 tsp baking soda
1/3 cup boiling water
1 1/2 cups flour
1/2 tsp salt
2 cups large flake oats
1 cup chocolate chips
1/2 cup pecans

Steps:

  • In a large mixing bowl, cream together the shortening, sugars, and vailla until light. Dissolve baking soda in boiling water. add to the batter and mix well. Incorporate flour, salt and mix until combined. Fold in oats, chocolate chips, and nuts. Place spoonfuls of batter onto greased cookie sheets and press with fork until cookie shaped. Bake in a 350F oven for 10-12 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
  • Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1 stick unsalted butter
6 tablespoons granulated sugar
6 tablespoons brown sugar
1/2 teaspoon vanilla extract
1 egg
1 cup semi-sweet morsels

Steps:

  • 1. Preheat oven to 375°F. Prepare baking sheets by spraying lightly with Pam.
  • 2. Cream butter, both sugars, and vanilla. Beat in egg. Add baking soda and flour mixing only until smooth. Fold in chocolate chips. Use 16x24-inch baking sheets and drop cookies in 3 rows of 4.
  • 3. Bake cookies, two baking sheets at a time. After 5 minutes take cookies out of the oven and rap on the stovetop until they deflate. Then return sheets to oven, placing the top sheet on the bottom rack, and the bottom sheet on the top rack. Continue to bake until cookies are golden brown, 4-6 more minutes.
  • 4. Transfer immediately from cookie sheet to wire rack for cooling.

  • Too Much Dissolved Sugar = Uniform Texture and Less Cracking. Going back to my initial problem of wanting the flavor of browned butter but disliking the way it prevented sugar from properly dissolving, I asked myself, what if I were to flip the script for these cookies: instead of creaming sugar and butter and adding eggs, why not beat together the eggs and sugar then add the butter?
  • The Warmer the Butter, the Denser the Cookie. I settled on beating half of the sugar with the eggs until it completely dissolved, then incorporating the rest when I added the brown butter.
  • Granulated Sugar = Thin and Crisp, Brown Sugar = Tall and Moist. Granulated sugar is crystallized sucrose, a disaccharide consisting of a fructose molecule and a glucose molecule linked together.
  • Corn Syrup = Soft, Wide, Dark, and Flexible Cookies. Incidentally, if you want the absolute chewiest, most uniformly textured cookies, try replacing some of the granulated sugar with corn syrup, a sugar that is even more hygroscopic.
  • Baking Soda = Craggy and Coarse, Baking Powder = Cakey and Smooth. Baking soda is pure sodium bicarbonate—an alkaline powder (a.k.a. a base).
